Dazzling Winter Slaw - Red Cabbage, Apple and Pecan Salad image

A dazzling coleslaw salad for your winter festive table. Red cabbage is mixed with apples, carrots, pecans and onions which is then dressed with a tangy mustard and nut vinaigrette - fabulous! Plus, the colours as well as the taste, is amazing! This goes so well with cold cuts, pies, tarts, quiches, buffets as well as being a wonderful supper or light lunch accompaniment. I do all the shredding and grating in my food processor, it is so easy and cuts down on time. You can of course grate and shred by hand - it will just take a little longer! I sometimes add semi-dried cranberries and grated beetroot - these are listed as optional exras. The pie shown in the photograph, is my Recipe #268117, which I often serve with this winter slaw salad - they make a wonderful combination. (This recipe was posted to our personal preferences - with a light dressing and not a creamy or heavy dressing; if you like your salads with more dressing - please adjust the dressing quantities up!)

1/2 medium red cabbage, finely shredded and outer leaves trimmed
2 green apples, cored and thinly sliced
4 carrots, peeled and grated
1/2 small red onion, peeled and thinly sliced
2 tablespoons Dijon mustard
1 garlic clove, peeled and finely minced
1 teaspoon caster sugar
3 tablespoons olive oil
2 tablespoons walnut oil
3 tablespoons white wine vinegar
1/2 cup finely chopped pecan nuts
parsley, for garnish
1/2 cup semi- dried cranberries
1/2 cup finely chopped walnuts
1 raw beetroot, finely grated

Steps:

  • Make the dressing by mixing all the ingredients together in a jar - giving them all a good shake. The dressing can be made up to 2 days beforehand and stored in a cool place.
  • Place all the prepared vegetables and the apple in a large mixing bowl and mix by hand.
  • One hour before serving add the dressing and mix well, allowing the flavours to infuse together.
  • Serve in an attractive serving bowl, sprinkling on the pecan nuts just before serving; give them a little mix, leaving some on top.
  • This coleslaw can also be garnished with finely chopped parsley, for extra colour.

Wonderful for a BBQ! The veggies may be cut and the dressing made one day in advance, refrigerate the veggies in a sealed plastic bag. Cover and refrigerate the dressing. ALL ingredients may be adjusted to suit taste. Remember to add in the chopped apples just before serving, although the recipe states 2 apples, add in as much as you like! Prep time includes marinating time.... This salad is awesome!

3 cups thinly sliced green cabbage
2 cups thinly sliced red cabbage
4 -5 green onions, chopped
1 green bell pepper, medium diced
1 red bell pepper, medium diced
1 -2 carrot, shredded
2 large apples, cored and coarsley chopped
1/2 cup mayonnaise (Hellman's is best)
1/2 cup sour cream
1/4 cup finely chopped green onion
2 tablespoons red wine vinegar
2 tablespoons maple syrup
1 -2 tablespoon vegetable oil
1 tablespoon Dijon mustard
1 tablespoon poppy seed
2 -3 teaspoons fresh lemon juice
salt & freshly ground black pepper

Steps:

  • In a bowl, combine the cabbages, green onions (can use thinly sliced regular onions if desired), green and red bell peppers; toss well to coat.
  • In another bowl, combine the dressing ingredients; mix well.
  • Pour the dressing over the cabbage mixture; toss well to blend.
  • Cover, and refrigerate for 2 (or more) hours.
  • Add in the apple JUST before serving; toss.
  • DELICIOUS!

Plan ahead this needs to be refrigerated for 6 hours or overnight. This is an amazing cabbage salad! If you purchase a very large cabbage, you can increase the mayo/yogurt dressing if desired.

1 head green cabbage (cored, thinly sliced or chopped small)
4 granny smith apples, peeled and cut into juiienne strips
3 -4 celery ribs, chopped
3/4 cup mayonnaise
3/4 cup yogurt, plain
1 tablespoon Dijon mustard
3 -4 tablespoons sugar
1/4 cup vegetable oil
1 teaspoon salt (or to taste)
1/4 cup red wine vinegar
2 cups chopped walnuts (leave the walnuts coarsley chopped)
1 cup blue cheese, crumbled (optional and to taste)
1 small red onion (cut into rings or thinly sliced)
1 granny smith apple, unpeeled and cut into thin slices to garlish

Steps:

  • In a small bowl whisk togther mayonnaise, yogurt, mustard, oil, 1 teaspoon salt (or to taste) and vinegar until smooth.
  • In a very large bowl mix together, cabbage, apple strips, celery and walnuts.
  • Pour the dressing over the cabbage mixture; toss to combine.
  • Season with salt and pepper if desired.
  • Cover and refrigerate for a minimum of 6 hours or overnight (toss a couple of times during chilling time to combine the cabbage with the dressing) .
  • Just before serving sprinkle with the blue cheese and red onions on top, then garnish with apple slices around the outside of the bowl.
  • Sprinkle with more walnuts if desired.
  • Delicious!

2 C fresh breadcrumbs

  • CABBAGE SLAW: Place cabbage, onion, and apple ina non metallic bowl. Whisk together the oil, vinegar, mustard and sugar and pour over the cabbage mixture. Toss gently and set aside. Combine the flour, salt and pepper. Dust each schnitzel with the flour mixture and dip into the eggs. Press the schnitzels into the breadcrumbs and coat evenly. Heat the oil in a medium non-stick frying pan over medium heat. Cook the schnitzels for 1-2 minutes each side or until golden and cooked through. Serve with salad and lemon wedges.
