These fast and easy cookies are unlike any others I've eaten. They're irresistibly rich and always draw "oohs", "aahs" and requests for the recipe after the very first bite!

1 cup butter-flavored shortening
1/2 cup sugar
1/2 cup packed brown sugar
3 egg yolks
1 tablespoon water
3 teaspoons vanilla extract
2 cups all-purpose flour
1/4 teaspoon baking soda
1/4 teaspoon salt
1 cup butterscotch chips
MERINGUE:
3 egg white
1 cup packed brown sugar
1 cup chopped walnuts

Steps:

  • In a bowl, cream shortening and sugars. Beat in egg yolks, water and vanilla. Combine the flour, baking soda and salt; gradually add to creamed mixture. Spread into a greased 13-in. x 9-in. baking pan. Sprinkle with butterscotch chips and pat lightly., For meringue, in a small bowl, beat egg whites until stiff peaks form. Gradually add brown sugar, beating well. Spread over chips. Sprinkle with walnuts and gently press into meringue. Bake at 350° for 25-30 minutes or until golden brown. Cool on wire rack. Cut into bars. Refrigerate leftovers.

1/4 cup butter or margarine
1/2 cup brown sugar
1 egg
1/2 teaspoon vanilla extract
3/4 cup flour
1/2 teaspoon salt
1/2 teaspoon nutmeg ground
2 eggs white
1/8 teaspoon cream of tartar
2 tablespoons light corn syrup
1/2 cup granulated sugar
1 cup walnuts chopped

Steps:

  • Heat oven to 350° F. In small saucepan combine butter or margarine and brown sugar. Heat until mixture begins to bubble cool. Add egg and vanilla beat well. Sift together flour, salt, and nutmeg stir into sugar mixture. Grease bottom of 8 x 8-inch baking dish pour in butterscotch mixture. Beat 2 egg whites and cream of tartar until soft peaks form gradually add syrup, then add granulated sugar 1 tablespoon at a time. Beat until very stiff peaks form and whites are glossy. Fold in nuts spread over dough. Bake for 30 minutes. Cool and cut into 2 x 1-inch bars using knife dipped in hot water.
