SOFT SOURDOUGH DINNER ROLLS RECIPE

Soft sourdough dinner rolls are everything you ever dreamed of! These amazing, pull-apart dinner rolls are fluffy, buttery, and so easy to make.

1 tablespoon sourdough starter
1/3 cup + 1 tablespoon all-purpose flour
3 1/2 tablespoons water
2 tablespoons butter
1 cup milk
3 tablespoons sugar
1 teaspoon salt
1/2 cup active sourdough starter
3 cups + 2 tablespoons bread flour
1 tablespoon melted butter (for brushing the top of the rolls after baking)

Steps:

  • 8 PM Feed starter: 12 hours before you plan to mix the dough, add the ingredients to make ½ cup (100 g) of active sourdough starter to a clean jar. Stir until combined, loosely cover the jar and let the starter rise at room temperature. (The ingredients will create a total of 115 g active starter but, because some of it will stick to the sides of the jar during the transfer, we are making a little more than needed.) The sourdough starter is ready to use when it has doubled in size and there are plenty of bubbles on the surface and sides of the jar.
  • 7:30 AM Melt butter: In a small saucepan, melt the butter, milk, sugar and salt together over low heat. Pour the mixture into a mixing bowl and allow it to cool down to room temperature.
  • 8 AM Mix the dough: Add the flour and active sourdough starter to the bowl and stir with a spatula until the ingredients are combined and there are no dry bits left in the bowl. Cover the bowl and allow to rest at room temperature for 1 hour.
  • 9 AM First rise: Perform 3 sets of stretch and folds spaced 30 minutes apart, keeping the bowl covered between sets. To perform a set, pick up the dough on one side and stretch it up and over itself. Turn the bowl a quarter turn and repeat this step until you have turned the bowl a full circle. After the final set, cover and allow the dough to rise for 2 hours or until it has risen by 50% in size. (See notes.)
  • 12 PM Shape and Second rise: Turn the dough out onto a floured surface and divide it into 12 pieces, approximately 65 grams each. Shape each piece into a ball by gathering up the sides and pinching them together. Turn the dough over so that the seam side is down on the work surface and gently form a smooth ball. Arrange them in a lightly greased glass baking dish. Cover the dish with a tea towel and let rise for 3-4 hours.
  • 4 PM Bake: About 20 minutes before you are ready to bake preheat your oven to 375°F (190°C). Bake for 25-30 minutes or until they are golden brown on top. The internal temperature of the rolls should be 190°F when fully baked. Brush the top of the roll with melted butter and serve.

This is the way we've been making sourdough biscuits for years. It results in a lighter, less dense sourdough biscuit than with traditional methods.

1 cup milk
1 ½ teaspoons vinegar
2 ½ cups all-purpose flour, divided
½ cup sourdough starter
1 tablespoon white sugar
1 teaspoon baking powder
1 teaspoon salt
½ teaspoon baking soda
¼ cup salted butter, melted

Steps:

  • Make buttermilk by combining milk and vinegar in a small bowl. Stir and let sit until slightly thickened and curdled, 5 to 10 minutes.
  • Mix 1 cup flour, sourdough starter, and buttermilk together in a large, non-reactive bowl. Cover and let dough sit in a warm place, 8 hours to overnight.
  • Add 1 cup flour, sugar, baking powder, salt, and baking soda to the dough; knead lightly until well mixed. Turn dough out onto a work surface that has been sprinkled with remaining 1/2 cup flour. Roll or pat dough out to a thickness of about 1/2 inch. Dip a biscuit cutter into melted butter and cut out biscuits. Reserve any remaining butter.
  • Place biscuits close together in a greased 9x13-inch pan. Cover and let rest for 30 minutes.
  • Preheat the oven to 375 degrees F (190 degrees C).
  • Melt any remaining butter and brush over biscuits.
  • Bake in the preheated oven until golden brown, about 30 minutes. Serve warm.

I love the flavor of buttermilk and sourdough in breads and biscuits. These are yeast-risen but can be made with sourdough alone. Longer fermentation times are needed for that. Rising times are included in the preparation times.

3 cups bread flour (384 g)
1 1/4 cups buttermilk (285 g at room temperature)
3/4 cup sourdough starter (170 g of 100% hydration or thickness of mashed potatoes)
2 tablespoons butter (33 g softened)
1 1/2 teaspoons table salt (9 g)
1 1/4 teaspoons instant yeast (6 g)

Steps:

  • Refresh the sourdough starter the night before.
  • Mix the buttermilk, butter, yeast and starter until blended uniformly.
  • Add flour and salt and mix thoroughly, cover and let rest for 20 minutes.
  • Knead for 3 to 4 minutes and stretch and fold the dough, letter style, top to bottom and side to side.
  • Place in a straight sided clear container and let rise for 15 minutes.
  • Stretch and fold the dough and replace in the container to rise until double in volume.
  • Divide into 16 uniform pieces weighing 55 g each and shape into balls.
  • Place on parchment paper and cover with oiled plastic.
  • Let rise until 1 1/2 times it's original volume (I place one roll in a small straight sided glass to judge the rise).
  • Apply an egg wash (1 egg white or egg and 1 tablespoon of water well mixed) and place in a 375F oven near the top of the oven.
  • Bake for 8 min and rotate pan 180 degrees. Bake 8 more minutes until internal temperature is 205°F.

1 package (1/4 ounce) active dry yeast
1/4 cup warm water (110° to 115°)
1-1/2 cups warm buttermilk (110° to 115°)
1/2 cup canola oil
3 tablespoons sugar
1 teaspoon salt
1/2 teaspoon baking soda
4-1/2 cups all-purpose flour

Steps:

  • In a large bowl, dissolve yeast in water. Beat in the buttermilk, oil, sugar, salt, baking soda and 2 cups of flour until smooth. Stir in enough remaining flour to form a soft dough. , Turn onto a floured surface; knead until smooth and elastic, about 6-8 minutes. Place in a greased bowl, turning once to grease top. Cover and let rise in a warm place until doubled, about 1-1/2 hours., Punch dough down. Divide into 18 pieces; roll into balls. Place on greased baking sheets. Cover and let rise until doubled, about 30 minutes. , Bake at 400° for 15-20 minutes or until golden brown. Cool on wire racks.

3 cups all-purpose flour, plus more as needed, divided
2 cups buttermilk
1 cup unfed sourdough starter
2 tablespoons butter, cubed
2 tablespoons white sugar
1 teaspoon baking powder
¾ teaspoon salt
½ teaspoon baking soda
6 tablespoons butter, melted
½ cup brown sugar
2 tablespoons ground cinnamon

Steps:

  • Mix 3 cups all-purpose flour, buttermilk, sourdough starter, 2 tablespoons cubed butter, and white sugar in a glass bowl. Cover and set in a warm area until double in size, 8 to 12 hours.
  • Preheat the oven to 350 degrees F (175 degrees C).
  • Combine baking powder, salt, and baking soda in a small bowl. Add to flour mixture.
  • Knead dough until it is soft but no longer sticky, adding flour as needed. Roll dough with floured rolling pin until it is 1/4 to 1/2-inch thick.
  • Combine 6 tablespoons melted butter, brown sugar, and cinnamon until it has the consistency of a paste. Spread sugar paste evenly on rolled dough.
  • Roll up dough into a cylinder shape. Cut dough into 1/2-inch pieces using dental floss or a serrated knife. Arrange rolls into a cast iron skillet.
  • Bake cinnamon rolls in the preheated oven until golden brown, 20 to 30 minutes.
