- Place the scallions, basil, lemon juice, mustard, olive oil, garlic, salt, and pepper in the bowl of a food processor fitted with the steel blade. Puree for 15 to 20 seconds to make a smooth mixture. Add the mayonnaise, yogurt, and buttermilk and blend until smooth. Transfer the dressing to a container, cover, and refrigerate for 1 hour for the flavors to develop.
- Arrange the lettuce, tomatoes, and onion artfully on salad plates and drizzle with the dressing. Sprinkle with salt and pepper and serve.
- Cook's Note: Ina substituted Boston lettuce for Bibb lettuce when taping this episode.
BUTTERMILK PEPPERCORN RANCH SALAD DRESSING
Simple and delicious. Came up with this recipe when trying to duplicate a local pizza restaurant's peppercorn ranch dressing that we love. This dressing goes great with Romaine lettuce, sliced cherry tomatoes, and red onion with fresh bacon crumbled on top. Refrigerate overnight for best taste.

- Preheat oven to 250 degrees F.
- Put a wire rack over a shallow baking pan and pour 1 cup of water into the pan. Season the ribs with a pinch of salt and pepper. Place the ribs on rack, meaty side up. Slide them into the oven and roast slowly. Check every hour or so for doneness. Roast until you can gently tear the meat between the bones, or they reach an internal temperature of 180 degrees F, about 2 1/2 to 3 hours. Remove from oven and set aside to cool completely.
- When ribs are cooled, cut into individual ribs.
- Pulse RITZ Crackers into crumbs in a food processor to make about 2 cups crumbs. Mix crumbs with granulated garlic, kosher salt and coarse black pepper.
- Coat each rib in flour, dip in egg wash, and then coat with RITZ crumb mixture. Set aside.
- Heat oil in deep 9-inch skillet to 350 degrees F. Place ribs meat side down into hot oil (ribs should be about 3/4 covered). Fry in batches, being careful not to overcrowd pan as this will bring down the oil temperature.
- Cook approximately 1 1/2 to 2 minutes until ribs are crispy and golden brown. Remove ribs from pan; drain on paper towels.
- While ribs are still hot, season with 2 tablespoons Cajun seasoning. Serve with Zesty Buttermilk Ranch Dressing.
- To make the Zesty Buttermilk Ranch Dressing, whisk together mayonnaise, buttermilk, vinegar, garlic, chives, grated cheese, and Cajun seasoning in a bowl. Pour into a container with a lid and refrigerate until needed.

LIGHT BUTTERMILK RANCH DRESSING
This is a great ranch dressing mix, which is lower in sodium and without the preservatives found in the commercial brands. This dressing mix not only makes a good salad dressing and dip, it is also good as a sauce on cooked vegetables, baked potatoes, fish, poultry and meat. This recipe makes 1/2 cup of the dry mix, or enough to make 8 cups of the finished dressing. You can make the dry mix up in larger quantities and package it in small decorative jars just large enough to hold one recipe for holiday gifts. When wrapping the jars of the mix, you could include a copy of the recipe and the ingredients for making more of the dry mix. - Make the dressing: Whisk the mayonnaise, buttermilk, vinegar, onion powder, chives, parsley, garlic, 1/2 teaspoon salt and a few grinds of pepper in a small bowl; set aside.

FRIED GREEN TOMATOES WITH CAYENNE BUTTERMILK RANCH DRESSING
Personally, I don't know why this is considered a southern dish. With our short growing season in Central New York, there's never a shortage of green tomatoes. It seems like the North should have thought of this dish first.

- Core the tomatoes and cut off the ends. Slice them into 1/4-inch rounds, and dry between several layers of paper towels to get rid of the excess moisture. Sprinkle lightly with Creole Seasoning on both sides.
- Whisk together the eggs and a pinch of black pepper in a shallow bowl. In another shallow bowl or plate, combine the panko crumbs, salt, cayenne pepper, and the remaining 2 teaspoons black pepper. Dip the tomato slices in the egg mixture and then in the panko crumbs, pressing to coat them well on both sides and around the edges. Lift the coated pieces onto a rack set over a baking sheet. Pop them in the fridge for half an hour to set the crumbs.
- Grab a heavy 12-inch skillet and heat the oil over medium heat. When the oil is hot, slide in a few tomatoes without crowding the pan. They should sizzle and bubble around the edges. Cook for 2 to 3 minutes on each side, til brown. Take them out of the pan, then add a bit more oil and get it hot before starting a second batch.
- Drain the fried tomato slices on paper towels. Arrange them around the outside edge of a plate, sprinkle them with some grated Pecorino Romano cheese, and set a bowl of Cayenne Buttermilk Ranch Dressing in the middle for dipping.
ICEBERG SALAD WITH BUTTERMILK RANCH DRESSING

- Coarsely chop 1 scallion and add it to the bowl of a food processor with the garlic; pulse until garlic is minced. Add the mayonnaise, buttermilk, and salt and pepper, to taste, and pulse until well combined and smooth.
