EASY ICE CREAM PIE WITH BUTTERMILK CARAMEL

Easy Ice Cream Pie with Buttermilk Caramel image

Provided by Trisha Yearwood

Categories     dessert

Time 2h15m

Yield 4 to 6 servings

Number Of Ingredients 10

2 pints vanilla ice cream, softened
1 cup chocolate-covered caramels (preferably Rolo), chilled and chopped
One 9-ounce store-bought graham cracker crust
1 cup sugar
4 tablespoons unsalted butter
1 tablespoon light corn syrup
1/2 teaspoon baking soda
1 cup buttermilk
1 teaspoon vanilla extract
Pinch kosher salt

Steps:

  • Gently stir the ice cream and caramels-reserving a few caramels to sprinkle on top-in a large bowl, then transfer the mixture to the crust and sprinkle the remaining caramels on top. Cover with plastic wrap or a lid and freeze until very hard, at least 2 hours.
  • Meanwhile, in a large saucepan over low heat, combine the sugar, butter, corn syrup, baking soda and 1/2 cup buttermilk and bring just to a boil, stirring constantly. Attach a candy thermometer to the pan and continue to cook and stir until the mixture boils, becomes a deep amber and reaches 220 degrees F, about 10 minutes. Remove the pan from the heat. Whisk in the remaining 1/2 cup buttermilk, then the vanilla and salt-the mixture will bubble and foam, so be careful! Once smooth, return to the heat and cook until it has returned to a deep amber color and thickened slightly, another 3 minutes. Let cool completely.
  • Remove the pie from the freezer. Remove the pie from the metal pie plate to a platter. Slice and pour the caramel over the slices. Serve immediately.

BUTTERMILK, BROWN SUGAR & RYE BREAD ICE CREAM

Buttermilk, brown sugar & rye bread ice cream image

Try buttermilk ice cream instead of vanilla - it has the same richness but is balanced by a nice acidity. Garnish with crispy caramelised breadcrumbs

Provided by Diana Henry

Categories     Dessert

Time 1h10m

Yield Makes about 700ml

Number Of Ingredients 7

400ml double cream
150g caster sugar
5 large egg yolks
400ml buttermilk
125g rye or pumpernickel bread, crusts removed
20g butter
50g soft light brown sugar

Steps:

  • To make the caramelised breadcrumbs, heat oven to 180C/160C fan/gas 4. Tear half the bread into little pieces (it's better doing this by hand than in a food processor. The largestpiece should be no bigger than a petit pois). Whizz the rest in a food processor into coarse crumbs. It's best to have a mixture of textures.
  • In a frying pan, heat the butter until it melts, then continue to cook until it starts to brown a little. Remove from the heat and stir in the bread and sugar. Spread out on a baking sheet (it's important that the mixture is not in clumps) and cook for 20 mins, tossing a few times during baking, until toasted. Leave to cool.
  • Heat the cream with 100g sugar and a pinch of salt in a heavy-bottomed saucepan until it comes to just under the boil. Take off the heat. Leave to sit for about 5 mins. Beat the egg yolks in a bowl with the remaining sugar and pour in the cream, stirring continuously. Wash out the saucepan, then pour the cream mixture into it.
  • Set over a low heat and cook, stirring, until the mixture thickens enough to coat the back of a spoon. It will take about 8-10 mins. Make sure the custard doesn't boil or it will curdle. As soon as it's thick enough, transfer to a cold bowl and stir in the buttermilk. Keep stirring the mixture at intervals as it cools. Cover the custard and put in the fridge to chill.
  • Churn the custard in an ice cream machine following the manufacturer's instructions, adding the breadcrumbs when the ice cream is almost frozen. Transfer to a container, cover with cling film and keep in the freezer. If you don't have an ice cream machine, pour the mixture into a shallow container and put in the freezer. Remove from the freezer every couple of hours and beat vigorously to break up the ice crystals, adding the breadcrumbs when the ice cream is almost frozen. You want to end up with a smooth, creamy mixture.

BUTTERMILK ICE CREAM

Buttermilk Ice Cream image

We think of this flavor as old-fashioned-in the best way possible. It evokes an earlier time, when butter was churned at home by hand. Buttermilk enhances any kind of fruit, creating an interplay of tartness and richness.

Provided by Kris Hoogerhyde

Yield Makes about 1 quart

Number Of Ingredients 6

5 large egg yolks
¾ cup sugar
1½ cups heavy cream
½ cup 1% or 2% milk
1 cup buttermilk
1 teaspoon pure vanilla extract

Steps:

  • In a medium heatproof bowl, whisk the yolks just to break them up, then whisk in half of the sugar (6 tablespoons). Set aside.
  • In a heavy stainless steel pan, stir together the cream, milk, and the remaining sugar (6 tablespoons) and put the pan over medium-high heat. When the mixture approaches a bare simmer, reduce the heat to medium.
  • Carefully scoop out about ½ cup of the hot cream mixture and, whisking the eggs constantly, add the cream to the bowl with the egg yolks. Repeat, adding another ½ cup of the hot cream to the bowl with the yolks. Returning to the pan of cream on the stove, use a heatproof spatular to stir the cream as you slowly pour the egg and cream mixture from the bowl back to the pan.
  • Continue to cook the mixture carefully over medium heat, stirring constantly, until the mixture is thickened, coats the back of a spatula, and leaves a clear mark when you run your finger across it, 1 to 2 minutes longer.
  • Strain the base through a fine-mesh strainer and into a clean container. Set the bowl into an ice bath, wash your spatula, and use it to stir the base occasionally until it is cool. Then cover with plastic wrap and refrigerate the base for at least 2 hours or overnight. (In this recipe, it's particularly important that the base is cold before proceeding to the nest step; otherwise the buttermilk will cause the mixture to "break" and lose its emulsion.)
  • Add the buttermilk and vanilla to the cold base and whisk to blend.
  • Freeze in your ice cream machine according to the manufacturer's instructions. While the ice cream is churning, put the container you'll use to store the ice cream into the freezer. Enjoy right away or, for a firmer ice cream, freeze for at least 4 hours.

BUTTERMILK-PECAN ICE CREAM

Buttermilk-Pecan Ice Cream image

Provided by Sunny Anderson

Time 30m

Number Of Ingredients 18

1/4 cup sugar
1/2 cup heavy cream
2 cups buttermilk
2/3 cup sweetened condensed milk
3/4 cup evaporated milk
1/2 teaspoon vanilla extract
1 cup candied pecans (page 138)
1/2 cup coarse sea salt
Caramel bananas, for topping, optional (recipe below)
4 tablespoons unsalted butter
1 cup pecans, coarsely chopped
2 tablespoons packed light brown sugar
2 tablespoons granulated sugar
1/4 teaspoon salt
4 tablespoons unsalted butter
3 firm yellow bananas, chopped or sliced
3 tablespoons packed light brown sugar
Pinch of salt

Steps:

  • Make the mix.
  • Whisk the sugar, cream, buttermilk, condensed milk, evaporated milk, vanilla and candied pecans in a large bowl.
  • Pour into a bag.
  • Prop a 1-gallon zip-top freezer bag open in a large container; pour in the buttermilk mixture. Press out the air and seal. Chill the bag until ready to make the ice cream.
  • Fill your container.
  • Put about 10 cups ice in the container, filling it about three-quarters of the way, then pour in the sea salt. Nestle the sealed bag of buttermilk mixture in the ice.
  • Start shaking!
  • Tightly cover the container with the lid. Shake vigorously for about 15 minutes, or until the buttermilk mixture is thick. How long it takes depends on your shakin'!
  • Serve and eat.
  • For soft-serve, rinse the outside of the bag, snip a corner and pipe into bowls. For firmer ice cream, freeze 1 hour before scooping. Top with caramel bananas, if desired.
  • Melt the butter in a skillet over medium heat, then add the pecans, brown sugar, granulated sugar and salt. Cook, stirring, until the sugar is dissolved and the mixture is sticky, 6 to 8 minutes. Spread the nuts on a baking sheet to cool, then refrigerate at least 10 minutes before using.
  • Melt the butter in a large skillet over medium-high heat. Add the bananas, stirring to coat. Sprinkle in the brown sugar and salt and cook, stirring, until the bananas are tender and coated with the sauce, 2 to 4 minutes. Spoon warm over ice cream.

STRAWBERRY BUTTERMILK ICE CREAM

Strawberry Buttermilk Ice Cream image

Got this one from Peggy Fallon's "The Best Ice Cream Maker Cookbook Ever." I had a bunch of aging strawberries, and half a quart of buttermilk to use up ... and this worked perfectly. It is a lovely, light ice cream, but the texture made it seem like it had a lot more fat in it than it really does. And the color is spectacular -- a wonderful bubblegum pink!

Provided by KLHquilts

Time 15m

Yield 1 quart, 8 serving(s)

Number Of Ingredients 4

2 pints strawberries, as ripe as possible
3/4 cup sugar
1 teaspoon fresh lemon juice

  • Combine strawberries, sugar and lemon juice in a food processor or blender and process until smooth. (This will go more easily if you chop the strawberries first).
  • Combine strawberry puree and buttermilk and stir until well blended.
  • Refrigerate at least four hours, or overnight if possible.
  • Transfer to ice cream maker and process according to manufacturer's directions.
