1/3 cup oil
1 egg, slightly beaten
1 teaspoon vanilla
1 1/2 cups flour
1/2 teaspoon baking soda
1/4 teaspoon salt
1 cup apple, peeled & chopped
1 cup buttermilk
1/4 cup brown sugar
1/4 cup chopped pecans
1/2 teaspoon cinnamon

Steps:

  • Preheat oven to 325°.
  • Grease a 9" sq. pan.
  • Blend 3/4 cup brown sugar, oil, egg & vanilla in large bowl.
  • Combine flour, baking soda & salt. Add to wet mixture. Add apple & buttermilk. Mix thoroughly just to moisten.
  • Spread mixture into greased pan.
  • Topping: Combine brown sugar, pecans, & cinnamon in small bowl. Sprinkle evenly over batter.
  • Bake cake at 325° for 30 to 35 mnutes.

1 1/2 cups thinly sliced granny smith apples
3 tablespoons brown sugar
1 tablespoon lemon juice
1/2 teaspoon ground cinnamon
1 cup all-purpose flour
1/2 teaspoon baking soda
1/8 teaspoon salt
1/3 cup granulated sugar
2 tablespoons butter, softened
1 large egg
1 teaspoon vanilla extract
1/2 teaspoon almond extract
1/2 cup buttermilk
cooking spray
3 tablespoons sliced almonds
1/4 cup powdered sugar
1 teaspoon buttermilk
1/4 teaspoon vanilla extract

Steps:

  • Preheat oven to 350°.
  • To prepare the cake, combine the first 4 ingredients in a small saucepan over med-high heat. Cook 5 minutes or until syrupy, stirring; cool.
  • Spoon the flour into a dry measuring cup.
  • Combine flour, baking soda, and salt in a small bowl, stirring well with a whisk.
  • Combine granulated sugar and butter in a large bowl; beat with a mixer at medium speed until well blended; add the egg and extracts, beating well.
  • Add the flour mixture to sugar mixture alternately with buttermilk, beginning and ending with flour mix; beat well after each addition.
  • Spoon the batter into 8 inch round cake pan coated with cooking spray.
  • Arrange apple mixture over cake; top with almonds.
  • Bake at 350° for 25 minutes or until cake begins to pull away from sides of pan.
  • Cool in pan on a wire rack for 10 minutes.
  • Quickly invert cake onto wire rack, then invert onto serving plate.
  • Prepare the glaze and drizzle over cake.
  • Serve warm.

1 Tablespoon Orange Juice
3 Cups Peeled Apples, Granny Smith, finely chopped
3 Cups All-purpose Flour
1 Teaspoon Baking Soda
1 Tablespoon Ground Cinnamon
1/4 Teaspoon Salt
3 Large Eggs, room temperature
2 Cups Granulated Sugar
1 1/2 Cups Canola Oil
1/4 Cup Orange Juice
1 Cup Sweetened Coconut Flakes, toasted
1 Cup Chopped Pecans, toasted
Buttermilk Glaze:
1/2 Cup Unsalted Butter, 1 stick
1 Cup Granulated Sugar
1/2 Cup Buttermilk, shaken
1/2 Teaspoon Baking Soda
1 Teaspoon Vanilla Extract

Steps:

  • 1. Preheat the oven to 325 degrees/ 315 convection. Generously butter a 10" tube pan with a removable bottom. Line with a cutout of parchment paper and then butter again. Sprinkle with flour and remove any excess. Place the tube pan on a large cookie sheet. 2. PREPARE THE APPLES: In a large mixing bowl add the tablespoon of orange juice. Peel, core and chop the apples; toss in the orange juice. Set aside 3. MAKE THE BATTER: In a large mixing bowl, sift together the flour, baking soda, cinnamon and salt. Set aside. 4. With an electric mixer on medium speed, beat the eggs, sugar, canola oil and orange juice until smooth and lighter in color; about 3 minutes. 5. Lower the speed and slowly add the flour mixture. Beat just until smooth and incorporated. 6. By hand, fold in the coconut and pecans (make sure they are cooled). Gently fold in the apples. The batter will be very thick. 7. Spread the batter evenly into the prepared tube pan and smooth the top. Bake for about 1- 1 1/2 hours or until a tester comes out clean. Remove from the pan after cooling 15 minutes. 8. MAKE THE GLAZE: While the cake is baking make the glaze. In a large saucepan over medium-high heat, melt the butter and then stir in the sugar. Whisk in the buttermilk, baking soda and vanilla and bring to a rolling boil; stirring constantly for about 1 minute. Pour the sauce over the warm cake. Let cool 1 hour before serving. NOTE: You can bake the cake 1 day in advance (store wrapped at room temperature)-- then make the glaze and pour over the cake; let stand 1 hour before serving.

2 1/2 c flour
1 1/4 tsp baking soda
1/4 tsp salt
1 tsp cinnamon
1 1/2 stick challenge butter(soft)
1 c brown sugar firmly packed
1 c white dugar
5 eggs, separated( yolks from whites)
1/3 c canola oil
1 tsp vanilla extract
1 c buttermilk
5 apples peeled cored and chopped
1 pinch orange zest
1 c chopped pecans
PECAN PRALINE ICING
1/1/4 c brown sugar, firmly packed
3/4 c water
1 pt heavy cream
1/2 stick challenge butter
1 c pecans

Steps:

  • 1. Mix dry ingredients and set aside. Beat butter, sugars and vanilla until creamy.Slowly add canola oil and mix until incorporated.Separate egg yolks from egg whites and place yolks in separate bowl to beat with a fork. Add yolks to butter mixture.Place egg whites in refrigerator until chilled. Beat egg whites until stiff peaks form. Add flour to butter mixture one cup at a time , mixing until just incorporated. Add buttermilk and mix well. Fold in egg whites being careful not to deflate cake mixture. Add mashed cooked apples, pecans and orange zest, gently incorporate. Place batter in a large greased bundt pan. Bake at 350 for one hour or until toothpick or knife inserted in center comes out clean. Pecan Praline Icing Add brown sugar and butter to medium sauce pan, turning the heat to medium. Sugar mixture will turn a dark amber color. Cook until reaching the soft ball stage and mixture thickens. Add water, heavy cream and pecans while continuing to stir. Pour this mixture over cake.

1 tablespoon lemon juice

1 cup gluten-free flour
1/2 teaspoon xanthan gum

1/8 teaspoon salt
1/3 cup sugar
2 tablespoons butter, softened
1 large egg, lightly beaten
1 teaspoon vanilla

1/2 cup buttermilk
1 tablespoon pecan pieces
1/4 cup powdered sugar, sifted
1 teaspoon milk
1/4 teaspoon vanilla

Steps:

  • Preheat the oven to 350°F.
  • Lightly grease an 8-inch round cake pan.
  • In a small bowl, combine apples, brown sugar, lemon juice and cinnamon. Set aside.
  • In a large bowl, whisk together the gf flour, xanthan gum, baking soda and salt.
  • In a separate bowl, beat the butter and sugar together with a hand held mixer on medium speed until well-blended.
  • Add the egg and extracts; beating well.
  • Add the flour mixture to the egg and sugar mixture alternating with buttermilk, beginning and ending with the flour mixture.
  • Spoon the batter (it will be rather thick) into the prepared cake pan, spreading the top with a spatula to even it out.
  • Arrange the apple mixture over the cake.
  • Sprinkle with the pecan pieces.
  • Bake for 25 minutes or until the cake begins to pull away from the sides of the pan.
  • Cool in the pan on a wire rack for 10 minutes.
  • Prepare the glaze: In a small bowl, whisk together the powdered sugar, milk and vanilla extract.
  • Drizzle glaze over cake.

1 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon ground cinnamon

2 cups chopped unpeeled apples
1 cup chopped walnuts
1 cup flaked coconut
1 cup sugar

Steps:

  • Combine flour, baking soda, salt and cinnamon; set aside.
  • In a large mixing bowl, beat eggs.
  • Add sugar, oil, vanilla, and orange juice.
  • On low speed, blend in flour mixture.
  • Fold in apples, walnuts, and coconut.
  • Pour into greased and floured Bundt pan.
  • Bake at 325 degrees for 1 1/4 hours or until cake tests done.
  • Invert cake onto a large plate or platter.
  • Deeply puncture the top of the warm cake with a skewer or pick.
  • In a small saucepan, bring all sauce ingredients to a boil, stirring frequently.
  • Immediately spoon 1 1/4 cups of the sauce slowly over the top of the cake, then pour the remainder down the sides.
  • Cool.
  • Serve with whipped cream if desired.

1 cup peeled and chopped apple
heaping tablespoon of turbinado sugar
extra cinnamon for sprinkling

Steps:

  • Preheat oven to 400 F. Spray an 8-inch round cake pan with cooking spray (specifically, the kind with flour in it) or butter and flour the pan. In a medium bowl, whisk together the flour, baking soda, baking powder, cinnamon, and salt. In the bowl of a stand mixer fitted with the paddle attachment, cream the butter and sugar until pale and fluffy, about 2 minutes. Add the vanilla and egg to the mixer and beat well. With the mixer on low, alternately add the dry ingredients and buttermilk in 3 additions, starting and ending with the dry ingredients (so dry, buttermilk, dry, buttermilk, dry). Beat only until just combined. Scrape the batter into the cake pan, smoothing the top with a rubber spatula. 1 cup all-purpose flour
1/2 teaspoon baking powder
1/2 teaspoon cinnamon
1/2 teaspoon baking soda
1/4 teaspoon salt
4 tablespoons unsalted butter, at room temperature
2/3 cup sugar
1 teaspoon vanilla extract
1 large egg
1/2 cup buttermilk
1 cup peeled and chopped apple (I used granny smith)
heaping tablespoon of raw sugar (demerara, turbinado, or Sugar in the Raw)
extra cinnamon for sprinkling

Steps:

  • Preheat oven to 400 degrees. Butter and flour an 8-inch round cake pan* (or spray with Baker's Joy or equivalent).
  • In a medium bowl, whisk together flour, baking soda, baking powder, cinnamon, and salt; set aside. In a separate bowl, beat butter and sugar with an electric mixer until pale and fluffy, about two minutes. Add vanilla and egg and beat well. With the mixer set to low speed, beat in 1/3 of the flour mixture. Add half the buttermilk and continue beating on low speed until incorporated. Scraping down sides of bowl as necessary, beat in another 1/3 of flour mixture then remaining buttermilk. Finally beat in the last 1/3 of the flour mixture until just combined.
  • Scrape batter into the cake pan, smoothing the top with a spatula. Scatter apple pieces evenly over the top of the cake batter then sprinkle evenly with raw sugar. Sprinkle lightly with cinnamon.
  • Bake in a preheated 400-degree oven until cake is golden and a toothpick inserted in the center comes out clean, 25 to 30 minutes. Cool in the pan for ten minutes, then turn out onto a wire rack to cool until warm. Invert onto a plate. Serve plain, or with whipped cream and salted caramel sauce.
