3 1/2 tablespoons unsalted butter, well softened
12 (1/2-inch-thick) slices challah or firm white sandwich bread, crusts removed
3 cups half-and-half
4 large eggs
1/2 cup sugar
1 teaspoon vanilla
1/4 teaspoon salt
Accompaniment:caramel and Scotch sauce

Steps:

  • Preheat oven to 350°F.
  • Butter both sides of bread slices and arrange in 1 layer on a large baking sheet. Bake in middle of oven, turning over once, until lightly toasted, 15 to 20 minutes. Transfer to a rack to cool.
  • Whisk together half-and-half, eggs, sugar, vanilla, and salt until sugar is dissolved. Halve toasted bread slices diagonally and arrange triangles in rows, overlapping slightly, in a buttered 3-quart shallow baking dish.
  • Pour custard evenly over toast and let stand 15 minutes.
  • Bake pudding in a hot water bath until custard is set 2 to 3 inches from edges but still trembles in center, 50 to 60 minutes. (Custard will continue to set as it cools.) Serve warm.

400g brioche loaf
3 eggs
120g whole milk
75ml Irish cream liqueur
100g unsalted butter
100g golden caster sugar
250g crème fraîche

Steps:

  • Use a bread knife to remove the crusts and square up the brioche loaf. Cut the loaf into 3cm slices, then cut each slice into three rectangular fingers. Whisk together the eggs, milk and Irish cream liqueur in a shallow dish. Put the brioche fingers in the egg mixture and leave for about 5 seconds on each side until they are soaked but still holding their shape.
  • Put a large frying pan on a medium heat, add the butter and heat until sizzling. Add the brioche fingers to the pan and slowly cook on a medium-high heat, turning so all sides are an even, golden brown. Remove the toast from the pan and toss in the sugar, then transfer them to a baking tray or rack. Use a blowtorch to caramelise the sugar on all sides or, if you don't have a blowtorch, grill on each side for 1 min, or until the sugar has melted. Leave the brioche to cool and the sugar crust to harden.
  • Tip the crème fraîche into a bowl and whisk until it thickens and forms soft peaks - initially it will loosen but continue to whisk. Serve a big pile of the toast in the middle of the table with the crème fraîche for dipping into or spreading over.

The popular combo of jam and peanut butter works beautifully in this sponge pudding. The salty, nutty flavour you get from the peanuts matches so well with the jammy fruit

400g frozen berries of your choice
200g strawberry or raspberry jam
1 tbsp cornflour
200g salted butter
200g golden caster sugar
3 large eggs
1 tsp vanilla bean paste
100g self-raising flour
100g peanut butter
2-3 tbsp milk
30g salted peanuts
vanilla ice cream or custard, to serve

Steps:

  • Heat the oven to 180C/160C fan/gas 4. Tip the berries into a large saucepan with the jam, and heat gently for about 5 mins until just starting to turn saucy. Spoon some of the liquid into a small bowl and mix with the cornflour. Stir the cornflour mixture into the fruit mixture in the pan, and simmer for 2 mins. Pour into the base of a baking dish (ours was 18 x 25cm), then set aside.
  • Beat the butter and sugar together in a stand mixer, or using an electric whisk, for 5 mins until pale and fluffy. Add the eggs, one at a time, beating between each addition, then the vanilla, flour and peanut butter, beating briefly to combine. Stir in the milk to loosen the mixture. Carefully spoon the batter into the dish over the berries, then smooth the surface gently with the back of a spoon and scatter over the nuts. Bake for 45-50 mins. Leave to cool for 10 mins before serving warm with vanilla ice cream or custard.

Steps:

  • Preheat the oven to 375 degrees. Trim the crusts off four thin slices of loaf bread. Leave the slices whole or cut each slice (to serve as a base for certain savories such as angels on horseback, deviled chicken livers and so on) into uniform rectangles.
  • Melt one tablespoon of butter and butter the bread on both sides. Arrange the bread pieces on a baking sheet and place in the oven. Bake six minutes or until lightly browned on the bottom. Turn the pieces and continue baking one or two minutes longer until browned on the second side.
