BUTTER PECAN SHORTBREAD COOKIES

Butter Pecan Shortbread Cookies image

Shortbread cookies are a must to make for the holidays, and these pecan-filled, buttery biscuits are simply irresistible. Be sure to use real butter, not margarine, for best flavor. PLEASE, watch them as they bake. Reviewers are reporting baking times from 12 to 20 mins and I have changed the baking time from the original 30 mins to 15 mins.

Categories     Dessert

Time 55m

Yield 2 1/2 dozen, 18 serving(s)

Number Of Ingredients 6

1 cup unsalted butter
1/2 cup light brown sugar
2 cups flour
1 cup ground pecans
2 teaspoons vanilla
1 pinch salt

Steps:

  • Line a cookie sheet with parchment paper or silicon mat.
  • In a large bowl with an electric mixer or a food processor, beat together butter and brown sugar until creamy.
  • Add flour, ground pecans, vanilla and salt and beat just until it forms a smooth dough.
  • Wrap dough in plastic wrap and refrigerate for 30 minutes to 1 hour to allow it to firm up just enough to shape.
  • Preheat oven to 325 degrees F (160 degrees C).
  • By hand, roll dough into 1-inch balls.
  • Place them on the prepared cookie sheet and flatten very slightly (to about 1/2-inch thickness) with the bottom of a glass that has been dipped in flour to prevent the dough from sticking to the glass (If you have a cookie stamp, you can use it to flatten the cookies instead of the glass).
  • Place in the oven and bake for 12 minutes or until set and very lightly browned on the bottom.
  • Remove from pan and let cool on a rack.

Another excellent recipe by Diana Rattray who says: "these cookies are easy to prepare and they're egg-free. Drizzle melted chocolate over these shortbread cookies for the holidays. Use a food processor or electric chopper to chop the peanuts for this recipe." I just posted this good recipe for Ms. B and want to share it here. Enjoy it.

PEANUT BUTTER AND CHOCOLATE CHIP SHORTBREAD COOKIES

PEANUT BUTTER AND CHOCOLATE CHIP SHORTBREAD COOKIES image

Categories     Chocolate

Number Of Ingredients 7

1 stick, (1/2 cup) unsalted butter, at room temperature (important!)
1/3 cup creamy peanut butter
1/2 tsp vanilla extract
1 1/4 cup all purpose flour
1/4 cup confectioner's sugar
scant 1/2 tsp sea salt
3/4 cup milk chocolate chips

Steps:

  • Set oven to 325F Cream the butter and the peanut butter together in a stand mixer, with a hand mixer, or a wooden spoon. Beat in the vanilla. Whisk the dry ingredients together and add to the butter mixture. Mix until the dough comes together. Stir in the chips, and turn the dough out onto a piece of waxed paper. Gently pull the dough together and form it into a log. If it is still crumbly, work it with your hands until it holds together smoothly. Roll it up in the paper, smoothing the shape as you go. Twist the ends securely and refrigerate for at least a couple of hours. Slice the log into slices with a sharp knife. Not too thick, not too thin, about 1/3 inch. If a slice crumbles a bit, just smoosh the dough back together. These don't have to be perfect disks. Bake on a parchment or silpat lined baking sheet at 325 for about 12-14 minutes. The cookies will not be browned, and they may look undone, but don't over bake. One of the joys of shortbread cookies is that they fall apart and melt in your mouth. Let the cookies cool on the pan for 5 minutes before transferring to a rack.

ICE BOX PEANUT BUTTER SHORTBREAD COOKIES

Ice Box Peanut Butter Shortbread Cookies image

These are a great alternative to having store bought slice and bake cookies in your fridge without the preservatives and big price tag. These only cost a few dollars to make!! They are not your typical peanut butter cookie. They cook to be thin, crisp and oh so yummy!!

Provided by Linda McCormick

Categories     Other Snacks

Time 1h10m

Number Of Ingredients 8

1 c butter
1 1/2 c granulated sugar
1 1/2 c peanut butter - recommend creamy as it slices smoothly
1 tsp vanilla
2 eggs
1 1/2 c sifted flour
1/4 tsp salt
1 tsp baking soda

Steps:

  • 1. Cream butter and sugar thoroughly. Add peanut butter mixing well. Add vanilla and eggs: beat well. Sift flour, soda and salt together. Stir into mixture. Shape dough into rectangular roll, wrap in plastic wrap or waxed paper, chill until firm (or freeze), slice and bake in preheated 350 degrees oven for 8-10 minutes, ungreased cookie sheet: Until lightly golden brown.
  • 2. This dough freezes well, may be sliced and baked frozen - may require slightly more baking time. (Keep frozen rolls of this dough on hand for fresh baked peanut butter cookies when wanted.)
  • 3. Can be made large (rounded tablespoons of stiff chilled dough) do not grease the pan. Do the classic criss-cross with a fork that has been dipped in sugar. Bake them for only 8 minutes and they come out well and make 4 dozen cookies.
  • 4. Allow cookies to cool on cookie sheets before removing to a wire rack. Over baked they become sandy dry crisps. Cooked to perfection they have a slight chewiness melt in your mouth treat.

MAPLE BROWN-BUTTER SHORTBREAD COOKIES

Maple Brown-Butter Shortbread Cookies image

These little shortbread bars with maple coconut filling look and sound irresistible!! Taken from Zoe Bakes, it was her grandmother's recipe and a family favorite at Christmastime! She uses dried fruit and candied homemade grapefruit peel in hers. I hope you enjoy!

Provided by BecR2400

Categories     Bar Cookie

Time 1h10m

Yield 10 serving(s)

Number Of Ingredients 9

1/2 cup salted butter
1/4 cup granulated sugar
1 1/4 cups sifted flour
2/3 cup maple syrup
1/4 teaspoon salt
1 1/3 cups flaked coconut
1/2 teaspoon pure vanilla extract
2 tablespoons dried cranberries (optional) or 2 tablespoons cherries, very finely chopped (optional)
2 tablespoons candied fruit, very finely chopped (optional)

Steps:

  • Preheat oven to 375 degrees F.
  • Prepare a 9″ square baking dish with parchment paper (or use a Rectangular Tart Mold with Removable Bottom).
  • To make the brown butter shortbread:.
  • In a small sauce pot heat the butter on medium heat until it boils and the butter turns a light golden color, about 3-5 minutes. Strain the butter into a medium bowl. Add the sugar and flour and mix with a spoon until well incorporated. The dough will be quite loose. Cover and refrigerate for about 10 minutes. If the dough gets too cold just let it sit out until it is soft and pliable again.
  • Put into the pan and distribute it evenly; cover in plastic wrap and then you can easily spread with your fingers without the dough sticking to you.
  • Bake on a cookie sheet for 20 minutes or until the dough is a nice golden brown. Remove and allow the crust to cool on a rack while you make the maple filling.
  • Maple coconut filling:.
  • In a sauce pot combine the maple syrup, salt, coconut and vanilla, cook over medium heat until boiling. Continue to cook for about a minute, add the dried and candied fruits if using.
  • Pour the coconut mixture over the cooled crust. Bake at 375° for about 15-20 minutes, until the coconut turns golden brown.
  • Cool completely before removing from pan. (If you are using the 9″ pan with parchment you will need to cut around the edges with a knife to loosen and invert onto a plate. Peel off the parchment and invert onto a cutting board.).
  • Cut into rectangular bars or little squares if you want them to last a few extra minutes!
