Number Of Ingredients 12

3 celery ribs, chopped
3 medium carrots, chopped
1 small onion, chopped
2 tablespoons olive oil
3 tablespoons all-purpose flour
2 cans (14-1/2 ounces each) chicken broth
2 cans (15 ounces each) butter beans, rinsed and drained
1 can (14-1/2 ounces) stewed tomatoes, cut up
1 teaspoon dried basil
1/2 teaspoon salt
1/2 teaspoon dried parsley flakes
1/4 teaspoon pepper

Steps:

  • In a large saucepan, saute the celery, carrots and onion in oil until tender. Stir in flour until blended. Gradually add the broth., Stir in the remaining ingredients. Bring to a boil. Reduce heat; simmer, uncovered, for 10 minutes or until soup is heated through.

Number Of Ingredients 10

2 tablespoons olive oil
1 onion, chopped
2 large leeks, washed and sliced
2 medium potatoes, diced
2 (15 ounce) cans butter beans, drained
2 bunches watercress, washed and chopped (about 4 cups packed wt)
4 cups vegetable stock
salt
fresh ground pepper
light cream (to serve)

Steps:

  • Sauté onion and leeks in a heated oil until soft,about 5 minutes,add potatoes.
  • Add watercress and stir until wilted,about 3 minutes.
  • Add stock and beans and reduce heat and simmer for 20 minutes.
  • Puree soup,season and reheat gently.
  • Serve with a swirl of cream and a sprinkle of paprika.
