GRILLED BABY BOK CHOY WITH MISO BUTTER

- Cut the leaves away from the bok choy stalks. Halve the stalks lengthwise. Rinse the leaves and stalks well, then pat dry to remove any excess water. In a small bowl, mix together the butter and miso with a fork until well combined. Set aside.
- Prepare a medium-hot fire in a charcoal or gas grill. Put the bok choy stalks in a large bowl. Using your hands (or a fork), coat the bok choy with the miso butter. Arrange the bok choy, cut side down, on the grill grate. (If you have a grill screen, set it on top of the grate before adding the bok choy, to keep the stalks from falling through the gaps.) Close the lid and grill for about 5 minutes, until golden brown on the underside. Turn the bok choy with tongs, re-cover, and grill for 5 to 6 minutes more, until golden and crisp-tender.
- While the stalks are cooking, stack the bok choy leaves and roll them up lengthwise into a cigar shape. Slice the leaves crosswise into thin shreds. Make a bed of the shredded leaves on a serving platter. Drizzle the leaves with the oil and lemon juice, sprinkle with the salt and 1/4 teaspoon pepper, and toss to combine.
- Put the grilled bok choy on the dressed salad to wilt the leaves; sprinkle additional pepper over the bok choy. Serve immediately.
BABY CARROTS WITH SWEET GINGER BUTTER
Steps:
- In a shallow saucepan, over low heat, add the carrots and cover with water. Add a pinch of salt and bring the water to a simmer. Cover them with a parchment round set over and touching the simmering water to get a perfect steam. Remove carrots from the water when they are almost fork tender and drain.
- In a medium saute pan, over low heat, add the butter and stir in the chopped crystallized ginger. Allow the sugar from the ginger to melt into the butter, and then transfer the steamed carrots to the pan. Toss gently for approximately 2 minutes until the carrots are completely coated with the ginger butter. Finish with a pinch of salt and a crack of freshly ground white pepper. Serve immediately.
SAUTEED BABY POTATOES WITH LEMON BUTTER AND PARSLEY
To save some time the potatoes can be boiled up to 2 hours in advance and let stand at room temperature --- I usually peel just a strip of potato skin (about 1/2-inch depending on the size of the potato) down the middle leaving peel on both sides, it makes a nice presentation if you are serving them to dinner guests, if new baby potatoes are not in season just purchase the smallest potatoes that you can find for this :)

- Preheat oven to 450 degrees with a 10-inch cast-iron skillet on center rack. Melt butter in a medium saucepan over medium-high. When it boils, reduce heat to medium; simmer until foamy. - Prepare peanut sauce by whisking the first 7 ingredients together (or putting in a jar and shaking).
- Put the pasta on to boil.
- While pasta is cooking, chop your veggies. I prefer them kind of matchstick or julienned.
- Heat the oil in a large skillet.
- Saute onion and garlic. Be careful not to burn them!
- Add bok choy and carrots to the pan and sauté just until the greens wilt.
- Drain the pasta and add it to the pan. Toss with the veggies.

- Preheat the oven to 425 degrees F with a rack set on the middle shelf. Heat a large cast-iron pan over medium-high heat.
- Gently toss the baby turnips, potatoes and onion wedges with 2 tablespoons of the oil and a light sprinkle of salt and pepper. Carefully add to the hot pan and put in the oven to roast until the vegetables are golden brown and the potatoes are cooked through, 20 to 25 minutes.
- While the vegetables are roasting, prepare the miso butter. Stir together the butter, miso, garlic, ginger and half of the scallion greens.
- Thickly slice the reserved turnip greens and stems (about 1/2-inch pieces).
- Remove the vegetables from the oven and turn off the heat. Gently stir in the reserved turnip greens and scallion whites until just wilted, 1 to 2 minutes. Add the miso butter to the pan and gently toss to coat the vegetables. Return to the oven to keep warm while you cook the eggs.
- Heat the remaining oil in a large nonstick pan over medium heat. Crack 4 to 6 eggs into the pan; if they stick together, that's OK. Sprinkle lightly with salt and pepper. Cook until the whites start to set, 2 to 3 minutes, and then cover with a lid and continue cooking until the whites are set but the yolks are still runny, 1 to 2 minutes.
- To serve, top the roasted vegetables with the fried eggs and garnish with the remaining sliced scallions.

- In a small dish, microwave (50% power) the pink candy melts. Don't over cook. If you do, add a small bit of vegetable shortening.
- Pink Babies: Dip 8 Nutter Butter cookies into the pink candy, the place on wax paper to set up. Before the candy shell hardens, press a round white candy melt into the upper section of the cookie, creating the baby's face. Allow to harden.
- Blue Babies: Repeat the above directions. Allow to harden.
- When the candy coating has hardened, squirt a little bit of black decorating gel onto the wax paper. Using a fine-tipped paint brush, draw the baby's eyes, nose, and mouth on the white candy melt. You can also create those features by piping icing, but I find it easier to draw them.
- Allow to harden, then serve.
NUTTER BUTTER BABIES - BABY SHOWER RECIPE - (4.7/5)

- *Set note at end before beginning. In a small bowl, microwave about 1/2 cup of a desired color of candy melts just until melted as directed on package, stirring in between. Don't overheat or the candy will separate. Working on 2-3 cookies at a time, dip the cookies into the melted candy, then place on a wax paper lined cookie sheet. (Candy can be reheated slightly as needed). Immediately, press an unmelted white (or chocolate) candy melt onto the top section of the cookie. This will be the baby's face. Set aside to harden. (I placed some of the white candies flat side up, and some pointy side up using the little center tip as the nose). When the coating has hardened, squirt a little of the decorating gel onto a saucer or wax paper and, using the artist brush, draw the baby's eyes, nose, and mouth on the white (or chocolate) candy melt. (I used a toothpick to help). I went a little crazy on a few adding hair and nostrils!! :) Allow time for cookies to set before serving. (Note- The decorating gel does not set so the cookies can't be stacked on top of each other). ~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~ *NOTE: After doing a few as directed above, I found it easier to paint the baby faces on all the white and chocolate candies first. Then carefully placing one on the cookies as they were dipped, working on 2-3 cookies at a time so the melting candy doesn't harden too quickly. Also, I only dipped the front sides of the cookies. It makes them less sweet and also extends the melted candy so more cookies can be dipped.

- Place an 8-inch ovenproof skillet or cast-iron pan in the oven and preheat to 425°.
- Once the oven reaches temperature, blend 3 large eggs in a blender until well combined and frothy, 1 minute. Add ¼ cup of the pumpkin purée, then 1 cup milk, and then 1 Tbsp. of the butter, blending for 30 seconds after each addition. Add 1 cup all-purpose flour, ¼ tsp. allspice, ¼ tsp. ground ginger, ¼ tsp. nutmeg, ½ tsp. salt, and 1 tsp. of the cinnamon in one addition. Blend again until combined and frothy, 1 minute (scraping down the sides of the blender if necessary).
- Pull the hot pan from the oven and add the remaining 2 Tbsp. butter, swirling the pan so it melts evenly across the bottom (it will bubble and brown). Once the butter is melted, immediately pour in the Dutch baby batter and return to the oven. Bake until golden brown and slightly puffed, 20 minutes.
- While the Dutch baby bakes, combine ½ cup apple cider, 3 Tbsp. maple syrup, the remaining ½ tsp. cinnamon, a pinch of salt, and the rest of the can of pumpkin purée (about 1 ¼ cups) in a small saucepan. Cook over medium-high heat until the mixture starts to bubble, then reduce to medium and cook, stirring frequently and scraping down the sides of the pot with a spatula, until dark and thickened with no raw pumpkin flavor remaining, 20 to 25 minutes. Slice the Dutch baby (it will start to sink as soon as you take it out of the oven) and serve with the pumpkin butter and powdered sugar.
