BREAKFAST BURRITO SUPREME CASSEROLE

This is a great way to use up left over recipe #20574. Try a combination of the meats suggested or just chose one of them. Make this casserole lasagna style.

1 lb bacon, crumbled (try Recipe #242966 for easy bacon bits) or 1 lb breakfast sausage, browned
8 large eggs, scrambled
4 -5 large potatoes, peeled and diced
1 small onion, diced
1 small bell pepper, diced
salt
black pepper
garlic powder
10 flour tortillas
2 cups green chili sauce (canned green enchilada sauce works well if you don't wish to make green chili)
2 cups shredded cheese

Steps:

  • Pan fry the diced potatoes, salt, pepper and garlic powder in a little shortening, vegetable oil or rendered bacon fat until browned and nearly done; add onions and peppers and continue to cook until potatoes are done and onions and peppers are tender. (or you can fry up a pre-packaged bag of O'Brian potatoes if desired).
  • Remove from heat and stir in the meat and scrambled eggs.
  • Cut the tortillas in half; lay them in a 9 x 13 rectangular pan, placing the cut edges square to the side of the pan, over lapping as needed.
  • Spread a 1/3 of the meat, potato and egg mixture on top of tortillas.
  • Pour 1/2 cup of the sauce over the meat, potatoes and egg.
  • Sprinkle on 1/2 cup of the cheese.
  • Repeat layer once more.
  • Add one more layer by adding tortillas and meat, potatoes and egg.
  • Top with another layer of tortillas; pour last cup of sauce over the tortilla covered casserole.
  • Sprinkle with remaining cheese.
  • Bake in 350 degree oven until hot and the cheese is melted.
  • Top with lettuce and tomatoes if desired.
  • Serve with sour cream.

1 pound ground beef
1/4 cup all-purpose flour
3 tablespoons chili powder
1 teaspoon salt
1 teaspoon dried minced onion
1 teaspoon paprika
1/2 medium onion, diced
1 teaspoon onion powder
1 teaspoon garlic powder
1 cup water
8 (10") flour tortillas
2 cups shredded cheddar cheese
1 cup enchilada sauce
1 medium tomato, diced
1 cup diced yellow onion

Steps:

  • In a medium bowl, combine the ground beef with the flour, chili powder, salt, minced onion, paprika, onion powder, and garlic powder. Thoroughly mix the ingredients into the ground beef. Add the seasoned beef mixture to the water in a microwaveable bowl. Mix well and microwave on high for three minutes, break the meat up well and microwave 2 minutes more, stir the mixture and break the meat up again. Microwave 2 minutes more. Spread about 2 tablespoons of shredded cheese in the middle of each tortilla. Microwave two at a time for 20 seconds. Top with some of the meat mixture. Fold the end of the tortilla closest to you over the filling ingredients. Fold both the left and right end over that. Then fold the top edge over the filling. Spray a plate lightly with a cooking spray and place two burritos, seam side down, on a plate with rice or refried beans. Cover the burritos with enchilada sauce. Heat the plates in a 425 F oven for 5 minutes. (Make sure you are using oven safe plates!) Cover the burritos with more shredded cheese and heat 5 minutes more. Remove from oven. Garnish the burritos with chopped onion, diced tomato and avocado slices. Serve immediately, but warn you guest that the plates are very hot. These can be made ahead and refrigerated. Heat them in the preheated oven for 10 minutes, cover with cheese and heat 5 minutes more.These can also be heated in the microwave.

I got tired of driving for 60 miles one-way to a Taco Bell.So I started making these many many years ago.And everyone loves this one,as so do I.

3 lb hamburger meat
1 can(s) refried beans
2 medium tomato,s
1 bag(s) lettuce head
1 pkg burrito shells (flour)
1 lb cheddar cheese
1 large sour cream
1 can(s) black olives
1 bottle taco bell hotsauce
1 large diced onion
2 box taco shells
1 1/3 pkg taco seasoning mix

Steps:

  • 1. Fry up the 3 lbs of hamburger meat and drain off grease.Put back into frying pan and add 1 1/3 packages of taco seasoning and the water it say,s on the packages.Simmer until water is incorporated into meat mixture.Put a lid over fry pan to keep this hot.Put re-fried beans and half can water in microwaveable bowl,stir up good first.Heat about one min.
  • 2. Wash lettuce and tomatoes well.Tear up some of the head of lettuce(that you will keep in a plastic closed container)just enough for each day.Dice tomato,s-just enough for one day,s meal.Put in covered container also.Shred up whole block of cheese(put in covered container).Drain and slice up whole can of black olives.(covered container also).Dice just one quarter of the onion(covered container)also.
  • 3. Have sour-cream on counter.Along with all prepped food items and hot sauce.For a burrito just microwave on a dinner plate about ten seconds.Or for taco,s just have oven hot on 350 degrees and place on cookie sheet and heat for 2-3 min.(These will catch on fire).So stay right there with them.
  • 4. For a burrito,put a TBSP or two of meat,stip down the middle of burrito,put on the same in beans,then diced onions, sprinkle on shredded cheese,lettuce,tomato,sour-cream,black olives,hot-sauce goes on top.Enjoy.
  • 5. For the taco,just add meat then cheese,lettuce tomato,onion,olives,sour-cream,hot-sauce goes on last.
  • 6. Now you should have all this ready to put in the fridge until hungry again,if there,s anything left-over.Makes clean up time ever so nice.

* 8 (8 inch) flour tortillas
* 1-1/2 cup tomato juice
* 1 envelope taco seasoning mix
* 1 tbsp. vegetable oil
* 1/2 lb. ground beef
* 1 can (16 oz.) refried beans
* 3 cups shredded cheddar, divided
* 1 small avocado
* 1 tbsp. lemon juice
* 1-1/2 cup shredded lettuce
* 1 cup chopped tomato

Steps:

  • Wrap tortillas securely in aluminum foil; bake at 350 degrees for 15 minutes or until thoroughly heated. Combine tomato juice, seasoning mix and oil; stir well, and set aside. Cook ground beef in a large skillet until browned, stirring to crumble; drain. Stir in beans and 1/2 cup tomato juice mixture. Bring to a boil; cover, reduce heat, and simmer 5 minutes or until mixture is thoroughly heated, stirring occasionally. Remove from heat. Place 1/4 cup beef mixture and 2-1/2 tbsp. cheese down center of each tortilla. Roll up tortillas, and place seam side down in a lightly greased 13x9 inch-baking dish. Pour remaining tomato juice mixture over casserole. Cover and bake at 350 degrees for 30 - 35 minutes. Uncover and sprinkle with remaining cheese; bake an additional 5 minutes or until cheese melts. Peel and cube avocado; toss with lemon juice. Sprinkle avocado, lettuce and tomato over casserole. Serve immediately
