2 tablespoons butter
1 onion, chopped
2 tablespoons flour
1 cup chicken broth
1 cup tomato sauce
1/2 teaspoon garlic salt
2 tablespoons chopped green chili peppers

Steps:

  • In a skillet, beat butter and saute onion.
  • Blend in flour.
  • Gradually add broth, stirring to keep smooth.
  • Add tomato sauce, garlic salt and chili.
  • Cover and simmer 20 minutes.
  • Spoon over your favorite burrito.

Chipotle Chuck Steak Burrito with Habanero Hot Sauce and Guacamole image

Olive oil, for frying
1 medium yellow onion, thinly sliced
1 heaping teaspoon ground cumin
1 heaping teaspoon hot smoked paprika
1/2 teaspoon ground cinnamon or 1 cinnamon stick
1 pound chuck steak, cubed into 1-inch chunks
1 cup chipotles in adobo sauce
2 tablespoons dried oregano
Kosher salt and freshly ground black pepper

1.8 ounces dark chocolate
Six 12-inch flour tortillas
Monterey Jack cheese, grated
2 cups long-grain rice, cooked until fluffy (not wet)
2 1/2 cups black beans
Fresh cilantro, roughly chopped, for sprinkling
Guacamole, recipe follows
Habanero Hot Sauce, recipe follows
Tomato Salsa, recipe follows
Iceberg lettuce, shredded, for serving
Sour cream, for serving
4 Hass avocados
6 sprigs fresh cilantro, roughly chopped
Juice of 1 lime
1/2 clove garlic, crushed
1/2 red onion, finely chopped
1/2 tomato, finely chopped
1/4 jalapeno pepper, finely chopped
Olive oil, for drizzling
Kosher salt and freshly ground black pepper
6 habanero chiles
Juice of 1/2 lime
Pinch caster sugar
Olive oil, for drizzling
4 ripe tomatoes, finely diced
1 birds eye chile, optional
Juice of 1 lime
1/2 red onion, finely diced
1/2 Spanish onion, finely diced
Handful chopped fresh cilantro
2 pinches caster sugar
Pinch sea salt
Drizzle olive oil

Steps:

  • For the chipotle steak: Add some olive oil to a large saucepan and fry the onions slowly until soft. Add the cumin, paprika and cinnamon and fry for about 1 minute. Add 1 cup water, the steak, chipotles and oregano and sprinkle with salt and black pepper. Give the whole thing a good stir.
  • Bring the mixture to a boil and cook on a simmer for about 2 hours, checking that there's enough cooking liquid. Right at the end of cooking, stir in the dark chocolate.
  • For assembling: Toast the tortillas in a large frying pan until slightly brown but not crispy (they still need to be pliable for wrapping). Add some Monterey Jack cheese as they're toasting to get it melting.
  • One by one add the rice, beans, steak, cilantro, Guacamole, Habanero Hot Sauce, Tomato Salsa, lettuce and sour cream to each burrito, adding as much or as little as you prefer. Wrap up your burrito, and enjoy!
  • Scoop the avocado flesh into a bowl and roughly mash. Mix in the cilantro, lime juice, garlic, onions, tomatoes and jalapenos. Drizzle with olive oil and sprinkle with salt and black pepper.
  • Combine the chiles, lime juice, sugar and a drizzle of olive oil in a blender or food processor and blend until completely smooth.
  • Mix together the tomatoes, chile if using, lime juice, red onions, Spanish onions, cilantro, sugar, salt and oil in a bowl. Give it a taste and add a little more lime and sugar if required.

1 medium White onion -diced
1 clove garlic -finely diced
1 small jar roasted Red Bell Pepper slices-diced
3 whole boneless chicken breasts-cubed
3 cups chicken broth
2 tbs mexican seasoning mix
1 can artichoke hearts -chopped
1 lime
Velveeta queso blanco cheese brick
salt
pepper
olive oil
12 tortillas large burritio size

Steps:

  • in a large bowl, add cubed chicken and lightly coat with olive oil, stir to distribute and cover pieces with generous coating of mexican seasoning mix, stir and cut lime in half and using a fork to help squeeze the lime juice over mixture, stir and cover and let sit while doing rest of prep. Heat small amount of olive oil in a skillet and saute onions,bell pepper,garlic,and artichoke hearts till tender, add chicken mixture and cook on hi till chicken has a light brown fry, add chicken broth heat till bubbling, reduce heat and cover and simmer. In a small sauce pan heat drained black beans and with heat very low add cheese in little chunks and mix gently to keep from burning, add till you used a third of the block and stir till all is melted and creamy. Heat tortillas(I cover mine with a wet paper towel and microwave for 45 seconds to warm them up a few at a time.) now using a slotted spoon scoop generous portion of chicken mixture into burrito add a scoop of hot queso/bean sauce and add your favorite hot sauce or condiment, wrap and serve.

CHILI TACO / BURRITO / FAJITA SAUCE

My husband's family has a different way of eating tacos and burritos than my family, and I like the change! It really gives you something different than your average taco/burrito/fajita and is economical and tasty at the same time. Someone rated this as being too sweet even though their isn't any added sugar in this recipe, they said because of the tomato juice...which is surprising to me, but you can try using tomato sauce instead if you too think tomato juice is sweet. Serving suggestions: load your plate or burrito with fresh veggies, cheese and optional sour cream and guacamole and ripped up pieces of tortilla and ladle over the sauce and eat!

1 (1 1/2 liter) can tomato juice or 1 liter tomato sauce
1 (28 ounce) can diced tomatoes (I used diced tomatoes with spices)
1 (275 g) can red kidney beans (drained)
1 (275 g) can of mixed beans (drained)
1 large onion, diced finely
2 garlic cloves, pressed and diced
1 lb ground beef
2 tablespoons chili powder
salt and pepper

Steps:

  • In a large pot, ground the beef over medium low heat till all the pink is gone, (use oil if you need to, to prevent sticking).
  • Season with salt, pepper.
  • Add diced onions and garlic and sauté till translucent.
  • Add chili powder, beans, tomato juice and diced tomatoes; mix well.
  • Bring to a boil over medium-lo, stirring occasionally to prevent scorching.
  • Take 1 or 2 cups of the mixture and puree it. This will give a thicker sauce and it will give a nice full bodied taste to the sauce as well.
  • Reduce heat to low and simmer for 1 hour, stirring occasionally.
  • Serve hot and enjoy!
