BURIED CHERRY COOKIES
These little hidden treasures are sure to tempt your sweet tooth anytime! Great for adding onto your holiday trays to family, friends and co-workers. Cooking time is time per tray.

Steps:
- Preheat oven to 350.
- Drain cherries, reserving juice. Halve any large cherries.
- In a medium mixing bowl beat butter with an electric mixer, on medium to high speed, for 30 seconds.
- Add the sugar, baking powder, baking soda, and 1/4 teaspoon of salt. Beat until combined, scraping sides of bowl.
- Beat in egg and vanilla until combined.
- Beat in cocoa powder, and as much of the flour as you can with mixer.
- Stir in remaining flour using a wooden spoon.
- Shape dough into 1" balls.
- Place balls about 2" apart on an ungreased cookie sheet.
- Press your thumb into the center of each ball. Place a cherry in each center.
- For Frosting:.
- In a small saucepan combine chocolate pieces and sweetened condensed milk.
- Cook and stir, over low heat, until chocolate is melted.
- Stir in 4 teaspoons reserved cherry juice.
- Spoon 1 teaspoon frosting over each cherry, spreading to cover (frosting may be thinned with additional cherry juice, if necessary).
- Bake for 10 minutes, or until edges are firm. Cool 1 minute on cookie sheet.
- Transfer to a wire rack, and let cool.
- Note:
- For best results DO NOT substitute imitation chocolate pieces.

An easy cookie that tastes like a chocolate covered cherry in an almond cookie crust!

Steps:
- Preheat an oven to 350 degrees F (175 degrees C).
- Drain the cherries and reserve about 2 tablespoons of the juice. Cut the cherries in half if large, and set aside.
- Beat the softened butter, sugar, and baking powder with an electric mixer until thoroughly creamed and fluffy, about 1 minute. Beat in the egg and almond extract, then add the flour gradually, and beat just until blended. Pinch off pieces of dough, roll into 1-inch balls, place the balls on an ungreased baking sheet, and press your thumb in the center of each cookie to make a dent. Place a cherry or cherry half in the indentation of each cookie.
- In a small saucepan over low heat, melt the chocolate with the condensed milk, and stir until smooth. Add 1 to 2 tablespoons of reserved cherry juice to the mixture, or as needed, to thin the frosting; frosting will be thick. Spoon about 1/2 teaspoon of frosting over each cherry, covering the cherry completely.
- Bake the cookies in the preheated oven until firm and slightly browned, about 12 minutes. Let cool on the baking sheet for about 1 minute before removing, then move to a wire rack to finish cooling.

Steps:
- In a large bowl, cream butter. Add sugar and beat until fluffy. Add egg and vanilla and mix well. Combine flour, cocoa, baking soda, baking powdere and salt, and gradually add dry mix to the butter mix, beating well. Chill dough if necessary for easy handling. Shape into 1" balls and place about 2" apart on ungreased cookie sheets. Make a deep thumbprint in the center of each ball Drain the cherries, reserving juice. Place a cherry in each thumbprint. In a small saucepan, combine the chocolate chips and the condensed milk and stir over low heat until chocolate is melted. Stir in about 4 t of reserved cherry juice. Spoon 1 t of frosting over each cherry, covering it completely. Bake at 350F for about 10 minutes, until edges are firm. Makes about 4 dozen.
