ENGLISH BUN LOAF 1975

Steps:
- Soak fruit sugar and tea together overnight, covered.
- Drain the fruit, and reserve liquid.
- Mix drained fruit with the beaten egg into the flour Using a little of the liquid to make a firm dropping consistency.
- (This depends on the size of egg used, but about two tablespoons of liquid is used.) Grease a one pound loaf tin and line with greased paper.
- Tin should hold 1 1/2 pints.
- Bake gas mark 4 or 350 degrees F.
- Bake about one hour, or until firm.
- Leave in the pan about 6 minutes.
- Then turn out onto wire tray to cool.

Steps:
- Measure all ingredients except dates, candied fruits and frosting into bread machine pan in the order that the bread machine manufacturer suggests.
- Process in sweet bread or dried fruit/nut cycle; if machine does not have these cycles, use basic bread cycle on lightest crust setting.
- Add dates and candied fruits at the signal or 5 to 10 minutes before the last kneading step ends.
- Remove baked bread from pan; cool on wire rack.
- Drizzle or pipe frosting on bread to make a cross.
- Powdered Sugar Frosting: In small bowl, combine sifted powdered sugar, 1 to 2 teaspoons evaporated milk and vanilla extract.
- Stir until smooth.

- Soak fruit and sugar in large bowl overnight.
- Preheat oven to 170C (150 fan, gas mark 3). Mix egg and flour in a bowl.
- Divide mixture between two greased 2lb (900g) loaf tins.
- Bake for 1 hour until golden, and an inserted knife comes out clean. Serve sliced and buttered.
