BREAKFAST BULGUR PORRIDGE

1 cup low-fat (1%) milk, plus more for serving
1/2 cup medium-grind bulgur
1/4 cup raisins
1/4 teaspoon salt
1 to 2 tablespoons brown sugar
Sliced fresh strawberries, for serving (optional)

Steps:

  • In a medium saucepan, combine milk, bulgur, raisins, salt, and 1 cup water; bring to a boil. Reduce heat to medium, and simmer, stirring occasionally, until bulgur is tender and mixture is the consistency of oatmeal, 10 to 15 minutes.
  • Divide between 2 bowls; sprinkle with brown sugar. Serve porridge warm with strawberries, if using, and milk to taste.

1 -2 tablespoon Smart Balance light butter spread, I use Benecol Light Spread
2 tablespoons honey

Steps:

  • Bring water to boil. Add bulgur, cover and simmer 20 minutes.
  • Stir in applesauce, Benecol, and honey.
  • If desired sprinkle with Cinnamon and serve.

1 cup milk (or milk alternative)
Pinch kosher salt
1/2 cup grated cheddar
2 poached eggs, for serving
Chopped fresh cilantro and hot sauce, for serving

Steps:

  • Combine grains, milk, 1 cup water, and salt in a pot. Bring to a boil, then reduce heat to medium and simmer, stirring, until creamy, 15 to 18 minutes. Stir in cheese. Transfer to bowls and top with eggs, cilantro, and hot sauce before serving.

Though I do love my morning bowl of oatmeal, there are days when I want to have something different. This promises all the benefits of a grain based breakfast with a twist in flavor. Found this untried recipe in an old stack of recipes clippings and posting it before I loose track of it again.

1 large pear, cored and chopped
1 cup fruit nectar (use pear, just had to post this way for Zaar specifications)
1 cup water
1 cup uncooked bulgur
1/4 teaspoon ground nutmeg
1/4 teaspoon cinnamon
1 pinch salt
4 ounces low-fat vanilla yogurt (1/2 cup) or 4 ounces soy yogurt

Steps:

  • Place the bulgur, pear nectar, 1 cup of water, bulgur, cinnamon nutmeg and salt into a medium saucepan and bring to a boil.
  • Add the diced pears, mix, and cover pan. Reduce heat to a very low flame and simmer until liquid is absorbed and bulgur is tender, about 12-15 minutes.
  • Spoon into 4 bowls and top each with 2 tablespoons vanilla yogurt.

1/4 cup bulgur
2/3 cup plain yogurt or 2/3 cup fromage frais
1/4 cup milk
artificial sweetener, optional

Steps:

  • Mix the apple and bulgur in a bowl, then stir in the yogurt or formage frais and half the milk.
  • Cover and set aside for 30 minutes, or until the bulgur is softened and swollen.
  • The grain should still have some bite, although it can be left covered in the refrigerator overnight.
  • Stir well and add extra milk necessary to make the mixture creamy.
  • The mixture can be sweetened with artificial sweetener if liked.
