EASY BULGOGI (KOREAN BBQ BEEF)

Easy Bulgogi (Korean BBQ Beef) image

Most Bulgogi recipes call for crushed pear. This is for tenderizing the meat. My boyfriend's Korean mother says Coca-Cola® can also be used for the same purpose. This recipe uses very thin-sliced meat so tenderization isn't necessary. Sugar is used instead.

Time 1h15m

Yield 6

Number Of Ingredients 12

¼ yellow onion, thinly sliced
2 green onions, chopped, dark green parts separated from white and light green parts
⅓ cup soy sauce
3 tablespoons white sugar
2 tablespoons toasted sesame seeds
3 cloves garlic, minced
1 tablespoon sesame oil
¼ teaspoon Korean red pepper flakes
¼ teaspoon minced fresh ginger
⅛ teaspoon ground black pepper
1 ½ pounds beef sirloin steak, cut very thin using kitchen shears
1 teaspoon honey, or to taste

Steps:

  • Combine yellow onion, white and light green parts of green onions, soy sauce, sugar, sesame seeds, garlic, sesame oil, red pepper flakes, ginger, and black pepper in a bowl until marinade is well mixed. Add steak slices to marinade; cover and refrigerate, 1 hour to 1 day.
  • Heat a skillet over medium heat. Working in batches, cook and stir steak and marinade together in the hot skillet, adding honey to caramelize the steak, until steak is cooked through, about 5 minutes. Garnish bulgogi with green parts of green onions.

1 small head red cabbage, halved, cored and shredded
1/2 cup soy sauce

2 tablespoons gochujang (Korean chile paste)
1 tablespoon grated fresh ginger
1/2 teaspoons toasted sesame oil
2 pounds boneless, skinless chicken breasts, thinly sliced crosswise

BULGOGI (KOREAN BBQ BEEF)

Bulgogi (Korean BBQ Beef) image

Bulgogi is one of the classic Korean BBQ dishes. But it's also very useful for adding Korean beef to other dishes like bibimbap or making mashup dishes like Korean tacos and quesadillas. The secret to hand slicing the meat into paper-thin slices is to freeze it until semi-firm, about 3 hours. It will still be semi-pliable but very firm and easier to slice. You can also buy the beef pre-sliced at any Korean market. This marinade is also great for making a Korean style rib-eye, New York strip or filet mignon.

Time 3h20m

Yield 4 servings

Number Of Ingredients 10

1 1/2 pounds (675 grams) rib-eye beef, frozen until semi-firm
1/4 cup (60 milliliters) soy sauce
1 tablespoon (15 milliliters) sesame oil
1 tablespoon (15 milliliters) sesame seeds, toasted, plus more for garnish
3 garlic cloves, finely minced
3 tablespoons (45 grams) brown sugar
2 tablespoons gochujang
2 green onions, sliced (stems and all)
1/4 cup (45 milliliters) water
2 tablespoons vegetable or canola oil

Steps:

  • Garnish with sesame seeds.

BULGOGI - KOREAN BBQ

Bulgogi - Korean BBQ image

Bulgogi can be thought of as the Korean national dish; I learned how to make it while studying in Seoul. The Asian marinated steak-paired with rice, lettuce and chili paste-is a simple, flavorful, and authentic Korean staple.

Provided by Anita Lo

Categories     main-dish

Time 1h30m

Yield 4 servings

Number Of Ingredients 12

1/4 cup soy sauce
1/4 cup sugar
1 teaspoon toasted sesame seeds
Freshly ground black pepper
2 cloves garlic, finely chopped
2 scallions, white part only, finely chopped
1 1/2 pounds shell or New York strip steak, hanger or skirt steak also work well
2 tablespoons gochujang, Korean fermented chili paste (optional)
2 tablespoons sweet miso, preferably Saikyo miso (substitute white miso mixed with 2 teaspoon sugar)
4 tablespoons vegetable oil
1 small head red leaf lettuce, leaves separated and washed
3 cups cooked short grain sushi rice

Steps:

  • For the marinade, mix the soy sauce, sugar, sesame seeds and black pepper in a small bowl. Finely mince the garlic and scallion whites and add to the marinade.
  • Slice the steak against the grain and put the slices in a large baking dish. Coat with the marinade and allow to sit, covered, in the refrigerator for at least 1 hour and up to 8 hours.
  • For the chili sauce, mix together the gochujang and sweet miso and set aside.
  • To cook the meat, heat 2 tablespoons (30ml) oil in a large nonstick skillet on high. Add half the marinated meat, leaving any excess marinade behind, and cook until browned, 2 to 3 minutes a side. Remove to a plate and repeat. Serve with the lettuce leaves for wrapping along with the rice and chili paste sauce.

1 tablespoon honey (or 1-1/3 more tablespoons brown sugar)
1 tablespoon rice wine (or mirin)
1 tablespoon minced garlic
1 teaspoon grated ginger
1 tablespoon sesame oil
pinch black pepper
1 teaspoon sesame seeds

Steps:

  • Rinse chicken pieces. Trim off excess fat. Cut each of the chicken pieces into small sizes (about 2-inch long and 1-inch wide). Mix the marinade ingredients in a bowl until the sugar has dissolved. Coat the chicken pieces with the marinade. Marinate for about 30 minutes in the refrigerator. Preheat a skillet over medium high heat. Add the chicken pieces, reserving the marinade. Cook until cooked through and slightly caramelized, about 2 minutes each side. (The sugar and honey in the marinade will burn easily, so watch it carefully and add the reserved marinade by tablespoon when the pan gets dry. You can slightly reduce the heat to avoid burning, if needed.)

We have been meaning to do this dish for a while but didn't want to deal with cutting up chicken thighs for 20 minutes. But being the dutiful man and cook of the household
I decided to get my hands dirty and cut up some chicken things. In order to get a that single cut of "steak" from the thigh
it actu

Steps:

  • Peel off thigh skins by hand (if you're strong enough) or with paring knife. Trim off excess fat. Cut into one single "steak" piece working around the bone. Save smaller pieces for cooking as well. Rinse thighs under cold water while removing outer film and slime. Set aside in a large mixing bowl. Pulse the marinade ingredients in a food processor until smooth. Coat the chicken pieces with the marinade. Marinate overnight in the refrigerator or a minimum of 6~12 hours. With a skewer or toothpick, piercing the thighs for extra marinade absorption is optional. Preheat a skillet or non stick pan over medium heat. Add the chicken thighs and cook for about 15~ 20 minutes or until cooked through. To ensure fully cooked thighs, use a meat thermometer and check for a reading of 165-170°F. Transfer to a serving plate and garnish with scallion strips. Enjoy! *If there is extra marinade sauce, adding near the end of cooking will give the thighs extra flavor. Do not add until the very end otherwise it will burn/char the thighs because of the sugars in the marinade.

Bulgogi is a Korean barbecue dish where the meat is first marinated in a marinade that is just packed with flavour. When I make bulgogi , the marinade often includes a grated Asian pear and or apple to help tenderize the meat and add a bit of sweetness along with some extra flavour. The last time that I made dak bulgogi , the chicken version of bulgogi, I was thinking about the use of the fruit in the marinade and it reminded me of tacos al pastor , a Mexican slow roasted pork dish where the pork is often marinated

DAK BULGOGI (KOREAN BBQ CHICKEN) RECIPE

Dak Bulgogi (Korean BBQ Chicken) Recipe image

I had been craving some Korean cuisine for a while and it was finally time to satiate it. When I think of Korean cuisine I generally think spicy but a lot of the BBQ meats such as bulgogi (Korean BBQ beef) and kalbi (Korean BBQ short ribs) are actually marinated in mixture that is on the sweet side. I had been wanting to try a chicken version of the bulgogi but I also had a plan that required the chicken to have some heat. For the recipe I simply took the bulgogi , tweaked it a bit and added a

KONA K'S BULGOGI WITH ENOKI MUSHROOMS (KOREAN BBQ)

Kona K's Bulgogi With Enoki Mushrooms (Korean BBQ) image

I've tweaked several different bulgogi recipes to come up with this. The enoki mushrooms add a nice touch. You can in/decrease amount of garlic according to personal preference. NOTE -- if you want to halve this recipe, do not change the amount of sugar, vegetable oil, and sesame oil. The flavors become really off if you halve those ingredients.

Provided by Kona K

Categories     Meat

Time 35m

Yield 4 serving(s)

Number Of Ingredients 11

1/4 cup dark soy sauce (I use the low sodium version)
3 tablespoons sugar
1 tablespoon vegetable oil
1 tablespoon sesame oil
1 -2 tablespoon toasted sesame seeds
5 garlic cloves, minced
3 tablespoons green onions, chopped
1 medium onion, chopped
2 lbs sirloin steaks, finely sliced against grain
2 teaspoons fresh ground black pepper
2 cups enoki mushrooms, cleaned

Steps:

  • Combine all ingredients except enoki mushrooms. Mix well and let marinate overnight in refrigerator (NOTE -- if you're short on time, you can skip this overnight step, but I would recommend marinating for at least 30 minutes).
  • Grill beef over medium-high heat. You might want to add some vegetable oil to the pan to prevent beef from sticking.
  • When beef is almost cooked, add the enoki mushrooms. You only want to cook the mushrooms for about 2 minutes.
  • Serve with white rice.
