SOUTHWEST CHICKEN PASTA image

Number Of Ingredients 16

1 Box Bow-Tie Pasta
2 Tbsp Olive oil
1 Small onion, diced
1 Red Pepper, diced
4 Cloves Garlic, minced
1 small can diced jalapenos or 3 fresh jalapenos, diced.
1 Can of Corn
1 Can Black Beans, drained
2 Heads of broccoli florets, chopped
3 Chicken breasts
1 Can Cream of Chicken Soup
2 Cups milk
2 1/2 Cups shredded Mexican Cheese blend
1/2 Cup shredded parmesan cheese
2 Chicken bouillon cubes
1 Packet Goya Sazon seasoning

Steps:

  • Preheat oven to 450 degrees. Prepare the Pasta Boil water and cook the pasta as directed on the box. Prepare the Chicken Place chicken breasts in a large saute pan. Fill with enough water to cover. Add two chicken bouillon cubes and 1 packet of Sazon to water. Bring to boil, cover, and simmer until chicken is cooked through. Allow chicken to cool and then dice. Prepare the Vegetables Heat the oil over medium heat. Saute the onions, peppers, garlic, jalapenos, broccoli and corn until the onions and corn brown and the peppers are soft. Remove from heat. Prepare the Sauce In a small sauce pan, slowly heat the Cream of Chicken soup and 2 cups of milk. Add 2 cups shredded mexican cheese and all the parmesan cheese and stir until cheese is melted and the sauce thickens. Putting it all together Combine the black beans, pasta, vegetables, and the chicken in a large bowl. Pour the sauce over the mixture and stir gently. Spray a large pan with cooking spray and pour the pasta in. Sprinkle with the remaining cheese. Cook until bubbly.
