Mix lump crabmeat with a silky homemade mayonnaise for the perfect summer salad, and then set it out with makings for sandwiches.

Yield Makes 3 cups salad

Number Of Ingredients 10

3 cups jumbo lump crabmeat (about 1 pound)
1/4 cup Martha's Lemony Mayonnaise or best-quality store-bought mayonnaise
1 teaspoon finely chopped fresh chervil, plus sprigs for garnish
Fresh lemon juice
Coarse salt and freshly ground pepper
Sliced tomatoes
Mixed lettuces
Extra-virgin olive oil, for drizzling
Basil sprigs
Lightly toasted country bread

Steps:

  • Stir together crab, mayonnaise, and chopped chervil. Season with lemon juice, salt, and pepper. Top with chervil sprigs.
  • Arrange tomatoes and lettuces on a platter. Season with salt and pepper, and drizzle with oil. Sprinkle with basil. Serve with crab salad and bread for assembling sandwiches.

sourdough rye bread pumpernickel or firm white bread
Softened butter or margarine or real mayonnaise
lettuce leaves
Cold rare roast beef, thinly sliced
Cold roast pork, thinly sliced
Thinly sliced ham
Thinly sliced salami
Pickled herring, drained
Whole large shrimp, cooked, shelled and deveined
Sardines
anchovy fillet drained
Thinly sliced smoked salmon
Cheddar cheese Sliced
Hard-cooked egg slices
salt and freshly ground pepper
Thinly sliced tomato
cucumber slices
Raw onion rings
Pickle fans
Caviar
Fresh parsley, dill or watercress sprigs

Steps:

  • Trim crusts from bead if desired. Cut into desired shapes. Spread entire surface of each slice to the very edge with butter, margarine or mayonnaise. Place a lettuce leaf on each slice.Top with one or more of the desired sandwich toppings. Season with salt and pepper to taste.Decoratively top with one of the garnishes listed to complement the sandwich. Arrange prepared sandwiches on a large platter. Cover and refrigerate several hours.

URLACHER STACKER SANDWICHES (BUILD YOUR OWN SANDWICH)



Urlacher Stacker Sandwiches (build your own sandwich) image

My daughter Noel's favorite football player is Urlacher.... If his team is playing... these sandwiches are called Urlacher Stacker Sandwiches.... If his team is not playing... she still calls them Urlacher Stacker Sandwiches! LOL Noel says these sandwiches are big enough to tame any MONSTER! They are made by the individuals eating them.... they can stack on as much or as little as they want... so everyone gets what they want and they do all the work too! Great for games or parties of any kind!

URLACHER STACKER SAUCE
1 cup(s) mayonnaise
1/2 cup(s) italian dressing
1/2 teaspoon(s) each: garlic powder, ground black pepper, dry basil
1/4 teaspoon(s) ground red pepper
FAVORITE ITALIAN BREAD OR ROLLS
- enough to make desired amount of sandwiches
FIXINGS
1 pound(s) shaved ham
1 pound(s) shaved turkey
1 pound(s) shaved beef
1 pound(s) thin sliced hard salami
1 pound(s) swiss cheese sliced thin
1 pound(s) cheddar cheese sliced thin
1 large red onion sliced thin
1 - red bell pepper sliced in thin strips
2 jar(s) dill pickle (stackers)
1 - head lettuce
1 jar(s) hot peppers
4 - tomatoes sliced thin

Steps:

  • Mix together the sauce ingredients. Refrigerate until just before using.
  • Prepare all of the fixings and put into containers with lids, or in bowls with plastic wrap. Refrigerate until just before using.
  • Put the Bread/rolls in a bowl on the table at the beginning of the buffet line. Next the Urlacher Stacker Sauce and any other condiments you want to put out.
  • The meats and cheeses are next. The vegetables and pickles are last.
  • Just let your guests go through the buffet line and make their own Urlacher Stacker Sandwiches!
  • We serve sandwiches with chips, salads, beans and what ever else sounds good!
