  • Mix 4 ounces softened cream cheese and 1/2 cup each sour cream and Frank's RedHot sauce (or 1/4 cup other hot sauce); fold in 2 cups shredded rotisserie chicken. Spread in a small baking dish, sprinkle with celery seeds, chopped scallions and shredded cheddar and bake at 425 degrees F until bubbly, about 20 minutes. Top with crumbled blue cheese. 1 ½ cups shredded skinless rotisserie chicken breast
½ (8 ounce) package cream cheese, cut into chunks
½ teaspoon cayenne pepper
⅓ cup ranch dressing
⅓ cup Buffalo-style hot pepper sauce (such as Frank's® Red Hot®)
3 ounces shredded Cheddar cheese
2 tablespoons crumbled blue cheese, or to taste

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease a 3-cup oven-proof serving dish with cooking spray.
  • Combine shredded chicken, cream cheese, and cayenne in a 10-inch nonstick skillet over medium heat. Stir until cream cheese has melted, 2 to 3 minutes. Stir in ranch dressing, remove from heat, and pour into the prepared dish. Spread Buffalo sauce evenly over top and sprinkle with Cheddar.
  • Bake in the preheated oven until dip is warmed through and cheese is melted, about 20 minutes. Remove from the oven and sprinkle with blue cheese. Serve warm.

This Buffalo dip is fast to make thanks to rotisserie chicken, and the beauty of this dip is how versatile it is. I chose to transform it to a pizza topping but you can just serve it with dippers, too.

5 ounces shredded skinless rotisserie chicken breast
1 tablespoon salted butter
⅓ cup Buffalo sauce
1 tablespoon ranch dressing mix
½ (8 ounce) package cream cheese, cubed
2 tablespoons chicken broth
1 tablespoon blue cheese crumbles, or to taste
2 (7 inch) flatbreads
¾ cup shredded mozzarella cheese

Steps:

  • Chop chicken into bite-sized pieces.
  • Melt butter in a multi-functional pressure cooker (such as Instant Pot®) set to Saute function. Scatter chicken in the bottom of the pot. Top with Buffalo sauce, then ranch mix, and finally cream cheese cubes; do not stir. Pour in chicken broth and hit Cancel.
  • Close and lock the lid. Select low pressure according to manufacturer's instructions; set timer for 8 minutes. Allow 10 to 15 minutes for pressure to build.
  • Release pressure carefully using the quick-release method according to manufacturer's instructions, about 5 minutes. Unlock and remove the lid. Stir in blue cheese.
  • Preheat the oven to 375 degrees F (190 degrees C).
  • Place 2 flatbreads on a baking sheet. Spread 1/2 of the dip on each one and top with mozzarella cheese.
  • Bake in the preheated oven until cheese is golden brown, about 14 minutes. Cut into 16 slices to serve.

1 rotisserie chicken, shredded
1 cup crumbled blue cheese
Crackers, bread or carrot sticks, for serving

Steps:

  • Preheat the oven to 425 degrees F.
  • In a medium saucepan over moderate heat, melt the cream cheese until smooth, about 3 minutes. Add the celery, hot sauce and chicken and mix well.
