2 tablespoons unsalted butter
One 12-ounce bottle buffalo hot sauce
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
4 cups shredded rotisserie chicken, light and dark meat
12 sweet Hawaiian slider rolls, sliced in half through the middle
Celery Blue Cheese Slaw (see recipe below)
1/2 cup crumbled blue cheese
1 tablespoon chopped fresh chives
1 tablespoon lemon juice
1 teaspoon vegetable oil
4 celery stalks, thinly sliced on a bias (about 1 heaping cup)
3 green onions, thinly sliced on a bias
Kosher salt

Steps:

  • To a medium-sized, straight-sided pan, add the butter and melt over medium heat. Once melted, add the buffalo sauce, garlic powder and onion powder and whisk to incorporate. Bring the mixture up to a simmer and stir in the shredded chicken. Turn the heat down to low and let simmer until the chicken is heated through and evenly coated in the sauce, about 5 minutes.
  • To assemble: Lay the Hawaiian slider rolls on a clean work surface, cut side-up. Using tongs, transfer the buffalo chicken to the bottom half of the rolls. Top each with celery slaw. Spoon the remaining buffalo sauce on the cut-side of the top buns. Place the top half on and skewer each slider.
  • Add all of the ingredients to a medium sized bowl and toss to combine. Refrigerate in an airtight container for up to 3 days.

12 rolls dinner rolls, 1 pack
1 ½ cups shredded mozzarella cheese
3 cups rotisserie chicken, shredded
¾ cup hot sauce
½ cup ranch dressing
2 tablespoons butter, melted

Steps:

  • Carefully slice the pack of dinner rolls in half, being sure to keep the rolls connected as a single units as they are split into tops and bottoms.
  • Remove the top and place the bottom section in a 9x12 inch (23x30 cm) baking dish.
  • Sprinkle the bottom with about 1 cup (100 g) of the shredded mozzarella cheese (make sure it is evenly coated as this will act as a barrier between the sauce and the bread, preventing the rolls from getting soggy).
  • Top the cheese with the shredded rotisserie chicken. Drizzle the hot sauce and ranch dressing evenly over the chicken and spread out evenly with a spoon. Top with remaining mozzarella cheese.
  • Place the top half of the rolls on top and brush evenly with melted butter.
  • Bake in a preheated oven for 20-25 minutes, until the cheese is melty and the rolls have heated through.
  • Remove from oven, cool slightly before transferring to a cutting board.
  • Using a large knife, follow the lines of the rolls, cutting them into 12 individual sliders.

2 tablespoons plus 1/3 cup Louisiana-style hot sauce, divided
1/4 teaspoon pepper

Optional ingredients: Lettuce leaves, sliced tomato, thinly sliced red onion and crumbled blue cheese

Steps:

  • Place chicken in a 3-qt. slow cooker. Toss with 2 tablespoons hot sauce and pepper; cook, covered, on low 3-4 hours or until tender., Remove chicken; discard cooking juices. In a small saucepan, combine butter, honey and remaining hot sauce; cook and stir over medium heat until blended. Shred chicken with 2 forks; stir into sauce and heat through. ½ cup buffalo wing sauce, or more as needed
4 slices LAND O LAKES® Deli American, cut into quarters
8 slider buns, sliced

Steps:

  • Cut each chicken breast in half; place into large resealable plastic food bag. Flatten each to about 1/2-inch thickness with meat mallet.
  • Pour desired amount of buffalo wing sauce into bag; seal bag. Gently shake to coat chicken; refrigerate at least 30 minutes.
  • Heat gas grill on medium or charcoal grill until coals are ash white.

1 tablespoon vegetable oil
2 pounds boneless, skinless chicken thighs
Kosher salt and freshly ground black pepper
1 tablespoon dark brown sugar
2 teaspoons paprika
1/4 teaspoon cayenne
1 cup hot sauce, such as Frank's Red Hot
12 small rolls, such as Hawaiian or Parker House rolls, buttered and griddled
Ranch dressing, for serving
1 cup blue cheese crumbles
Tomato slices, for serving
Green leaf lettuce, for serving

Steps:

  • Preheat the oven to 400 degrees F.
  • Heat a 12-inch ovenproof skillet over medium-high heat. Add in the oil. Sprinkle both sides of the chicken with salt, pepper, the brown sugar, paprika and cayenne. Sear both sides of the chicken until golden, about 4 minutes. Add in the hot sauce to the skillet. Bring to a simmer and then place in the oven to finish off, and the chicken registers 160 degrees F on an instant-read thermometer.
  • Let the chicken cool, and then pull the meat with your hands. Adjust the seasoning if necessary, and then place back in the oven at BROIL until crusty and caramelized on top, about 4 minutes.
  • Sandwich Build: Place some chicken on the bottom buns, top with ranch, blue cheese crumbles, tomatoes and then lettuce. Serve.

1 -2 teaspoon olive oil
1/2-1 teaspoon cajun seasoning

1/4 cup feta cheese, crumbled
1/2 lemon, juice of

Steps:

  • Preheat a grill to medium-high. Pat the chicken thighs dry with a paper towel, drizzle with olive oil and sprinkle generously with Cajun seasoning. Place on grill and cook until cooked through, 10 to 15 minutes.
  • While the chicken is cooking, place the butter in a small saucepan with hot sauce. Stir until the butter melts. When the chicken is cooked through, add to the pan, turning several times to coat.
  • In a small dish, combine the yogurt, chives, feta and lemon juice.
  • Split the rolls, place a chicken piece on the bottom half, top with yogurt dressing and shredded lettuce. Place the top half of the roll on top and enjoy.

1 1/2 cups shredded mozzarella cheese (6 oz)
1/2 cup crumbled blue cheese (2 oz)
4 tablespoons Buffalo wing sauce

1 can (16.3 oz) Pillsbury™ Grands!™ Flaky Layers refrigerated Sweet Hawaiian biscuits
1/4 cup thinly sliced green onions

Steps:

  • Heat oven to 350°F. Spray 13x9-inch (3-quart) baking dish with cooking spray.
  • In medium bowl, mix chicken, cheeses, 3 tablespoons of the wing sauce and 2 tablespoons of the melted butter.

Steps:

  • 1. Preheat oven to 350 . Melt 1/4 cup of butter . Then add Frank's Red Hot sauce to pan ( or large bowl if you microwave the butter) and stir

  • For the meatballs: Preheat the oven to 375°F. Place the ground chicken, hot sauce, brown sugar, smoked paprika, salt, black pepper, cayenne and garlic in a bowl. Gently mix with your hands. Divide the meatball mixture into 12 portions, then form into 1 1/2-inch meatballs using wet hands (meat sticks to dry hands). Push a piece of cheese into each meatball and pinch to seal. Hands down, these are the best sliders I have ever had!! The combination of red peppers and onions make them very moist little burgers. With the addition of buffalo sauce making them a little spicy and blue cheese topping, tomato and lettuce puts these in a league all their own!! I made 4 dozen for Memorial Day 2012 and they were a hit with the adults and children. I grilled them up the night before and refrigerated them. Took them to my parents camp and heated them for about 5 -7 minutes in the oven and they were ready. What a fabulous healthy choice for the Grilling season. 8 pts for 2.

2 tablespoon(s) crumbled low-fat blue cheese

Steps:

  • Spray large nonstick skillet or ridged grill pan with nonstick spray and set over medium heat. Add onion, red bell pepper, and water; cook, covered, stirring occasionally, until liquid is evaporated and vegetables are very tender, about 8 minutes.
  • Transfer to large bowl and let cool 10 minutes. Add chicken breast, Buffalo wing sauce, Italian seasonings and salt; mix well.
  • With wet hands, form into 8 (1/2-inch thick) patties.
  • Cover with plastic wrap and chill until firm, at least 1 hour or overnight. [This is important because it helps the chicken sliders to firm up and makes them easy to grill w/o falling apart. The addition of onions & peppers makes them very moist.]
  • Take you sliders out of refrigerator and place on the grill (preferably on a grill stone or cover grate with some tinfoil and poke holes) over medium to low heat as they are going to cook very fast. Or you can spray skillet with nonstick spray and set over medium-low heat.
  • They need to register 165F on an instant-read thermometer inserted into side of each burger. Should take about 4 to 5 minutes per side. Now make your burgers.
  • 6/11/13 ---- It's slider time! I made these tonight and decided to try and melt the cheese on burger which worked well. I did add a shake or two of hot sauce first and then the crumbled bleu cheese.
  • 4th of July 2014--Made these for our holiday meal along with yellow dogs and some acini de pepe salad for dessert.
