If you know someone from Buffalo, they know someone who told them the secret ingredients to the Anchor Bar's famous Buffalo chicken wings. I know people from Buffalo. This is my version, as described to me many years ago, over almost as many beers.

⅔ cup hot pepper sauce (such as Frank's RedHot®)
½ cup cold unsalted butter
1 ½ tablespoons white vinegar
¼ teaspoon Worcestershire sauce
¼ teaspoon cayenne pepper
⅛ teaspoon garlic powder
salt to taste

Steps:

  • Combine the hot sauce, butter, vinegar, Worcestershire sauce, cayenne pepper, garlic powder, and salt in a pot and place over medium heat. Bring to a simmer while stirring with a whisk. As soon as the liquid begins to bubble on the sides of the pot, remove from heat, stir with the whisk, and set aside for use.

These mini chicken meatballs from Daniel Holzman and Michael Chernow of The Meatball Shop get their signature spice from a healthy dose of Frank's RedHot, one of the original hot sauces used to make buffalo wings. Serve for a crowd-pleasing appetizer at your next casual gathering.

2 tablespoons olive oil
1/2 cup (1 stick) unsalted butter
3/4 cup Frank's RedHot hot sauce, plus more for serving
2 pounds ground chicken, preferably thigh meat
2 large eggs
2 ribs celery, minced (about 1 cup)
1 2/3 cups dried breadcrumbs
2 teaspoons coarse salt
Blue Cheese Dressing for Spicy Buffalo Chicken Balls
Celery sticks, for serving

Steps:

  • Preheat oven to 450 degrees. Evenly coat a large rimmed baking sheet with olive oil and set aside.
  • Place butter and hot sauce in a small saucepan over low heat. Cook, whisking, until butter is melted and hot sauce is well incorporated. Remove from heat and transfer to a large bowl; let cool to room temperature, about 10 minutes.
  • Add chicken, eggs, celery, breadcrumbs, and salt to bowl with butter mixture; using your hands, mix until well combined. Roll chicken mixture into firm, 1-inch round balls and place on prepared baking sheet; arrange the meatballs in rows so that they are touching on all sides. Transfer to oven and bake until cooked through, about 15 minutes.
  • Take out of oven and let stand 5 minutes before removing from baking sheet. Place on a serving platter and drizzle with hot sauce; serve with dressing and celery sticks.

1 small onion, chopped
1 small green pepper, chopped
4-1/2 teaspoons canola oil
2 garlic cloves, minced
3 cups finely chopped rotisserie chicken
1-1/2 cups shredded part-skim mozzarella cheese
1/2 cup Buffalo wing sauce
1/4 teaspoon salt
1/4 teaspoon pepper
5 sheets refrigerated pie crust
2 large eggs
2 tablespoons water
1 cup heavy whipping cream
1 cup crumbled blue cheese

Steps:

  • In a small skillet, saute onion and green pepper in oil until crisp-tender. Add garlic; cook 1 minute longer., In a large bowl, combine the chicken, mozzarella cheese, wing sauce, salt and pepper. Stir in the onion mixture., On a lightly floured surface, unroll 1 pie crust. Roll out into a 12-in. circle. Cut with a floured 3-in. biscuit cutter. Remove excess crust and reroll scraps. Repeat with remaining pie crusts., Beat eggs and water; brush over edges of 3-in. pie crust circles. Place heaping teaspoonfuls of filling in the centers. Fold crust in half over filling. Press edges with a fork to seal., Place 2 in. apart on greased baking sheets. Brush with remaining egg mixture. Bake at 400° until golden brown, 9-12 minutes., Meanwhile, in a small saucepan, bring cream to a boil. Reduce heat; simmer, uncovered, until slightly thickened, 5-7 minutes, stirring occasionally. 1/2 cup mayonnaise
1/3 cup crumbled blue cheese
1/4 cup sour cream
2 tablespoons buttermilk
1 teaspoon honey
1/2 teaspoon garlic powder
3 tablespoons olive oil
1 small yellow onion, cut into medium dice
2 tablespoons buttermilk
1 slice white or wheat bread, torn into small pieces
1 cup plus 2 tablespoons hot sauce, such as Frank's
1 pound ground chicken
1/2 cup plain breadcrumbs
1 package ranch dressing mix
1 large egg
3/4 cup diced celery
Nonstick cooking spray, for spraying the aluminum foil
4 ounces blue cheese, cut into 1/2-inch cubes
5 tablespoons unsalted butter
2 tablespoons honey

Steps:

  • For the blue cheese sauce: Combine the mayonnaise, blue cheese, sour cream, buttermilk, honey and garlic powder in a bowl and whisk until blended. Set aside.
  • For the buffalo chicken meatballs: Heat the olive oil in a medium saute pan over medium heat. Add the onion and saute until soft and translucent, 5 to 8 minutes. Let cool.
  • In large bowl, combine the buttermilk, torn bread and 2 tablespoons of the hot sauce and mix to form a paste. Add the ground chicken, breadcrumbs, ranch dressing mix, egg and 1/2 cup of the diced celery and mix with your hands until combined. Refrigerate for 30 minutes.
  • Preheat the oven to 450 degrees F. Line a baking sheet with aluminum foil and spray with cooking spray.
  • Form the meatball mixture into 16 even mini patties, about 2 1/2 inches in diameter. Place a cube of blue cheese in the center of a patty and wrap the meat around the cheese. Roll into a uniform ball and place on the prepared baking sheet. Continue with the remaining patties and cheese cubes, making sure to wash your hands in cold water a few times between rolling to keep the meatballs from sticking to your hands. Bake the meatballs until lightly browned, 15 to 20 minutes.
  • While the meatballs bake, prepare the buffalo sauce. In a medium pot over medium-low heat, combine the butter, honey and remaining 1 cup hot sauce. Heat until the butter is melted, whisking until well blended. Continue to cook until the sauce is heated through.
  • Transfer the meatballs to a large mixing bowl and pour over the buffalo sauce. Gently toss to coat and transfer to a platter. Garnish with a drizzle of the blue cheese sauce and the remaining 1/4 cup diced celery. Serve the rest of the blue cheese sauce on the side.

1 stick unsalted butter
2 cloves garlic, chopped
8 teaspoons plus 2 tablespoons ancho chili powder
1/2 cup hot sauce (recommended: Frank's)
2 tablespoons honey
Salt and freshly ground black pepper
4 French-cut chicken breasts
2 tablespoons plus 2 teaspoons ground cumin (8 teaspoons)
Canola oil
1/2 cup heavy cream
1/2 cup creme fraiche
1/4 cup chopped parsley, plus some whole leaves for garnish
1 cup crumbled blue cheese (recommended: Cabrales)
Serving suggestion: Jicama and Watermelon Salad, recipe follows
1/2 cup fresh orange juice, plus 1 teaspoon zest
1/4 cup fresh lime juice, plus 1 teaspoon zest
2 tablespoons honey
1 teaspoon ground black pepper
Kosher salt
1 jicama, cut into matchstick pieces
4 cups watermelon in 2-inch chunks
1/3 cup roughly torn fresh mint leaves

Steps:

  • Preheat the grill to medium; make sure the grill is ready for cooking over indirect heat. Melt butter in medium saucepan over medium heat. Add the garlic and cook for 1 minute. Whisk in the 2 tablespoons ancho powder and heat for 10 seconds. Stir in hot sauce and honey and season with salt and pepper. Remove about 1/4 cup for garnish, and keep both portions warm.
  • Season each side of the chicken breasts with 1 teaspoon each ancho powder, and cumin, and the salt and pepper. Drizzle canola oil over the both sides. Grill skin side down over medium heat, uncovered, until the skin is nicely charred.
  • Flip the chicken, moving it to indirect heat, and brush with a good amount of the hot sauce glaze. Cover and cook, brushing occasionally with sauce, until cooked through, about 5 minutes.
  • Whisk together the heavy cream and creme fraiche in a medium bowl. Stir in the parsley and blue cheese and season with salt and pepper. When chicken is done, remove from the grill and spoon blue cheese sauce over each piece. Drizzle the 1/4 cup reserved glaze over and garnish with whole parsley leaves.
  • Serve with Jicama and Watermelon Salad.
  • Whisk together juices, honey, pepper and salt in a large bowl. Add the jicama, watermelon and mint and toss to coat.

Steps:

  • In medium bowl, mix egg white and Buffalo wing sauce. Stir in chicken. Cover; refrigerate 30 minutes.
  • Line cookie sheet with waxed paper. In large resealable food-storage plastic bag, place Bisquick mix, cornmeal, salt and pepper. With slotted spoon, remove 1/4 of chicken pieces from bowl and add to bag; seal bag and shake to coat. Repeat with remaining chicken pieces. Tap off excess Bisquick mixture and place chicken on cookie sheet.
  • In small bowl, mix dipping sauce ingredients until well combined. Cover; refrigerate until serving time.

1 cup sour cream ranch dip, from the refrigerated case
2/3 cup green onion, chopped
3 cups cooked chicken, chopped
3/4 cup buffalo wing sauce
12 (6 inch) tortillas
3 cups cheddar cheese, shredded

Steps:

  • Heat oven to 350. Spray a 13x9 inch glass dish.
  • In a medium bowl mix soup, dip, 1/3 cup onions. In a large bowl mix chicken, and wing sauce until coated.
  • (reserve 1/2 cup shredded cheese for garnish).
  • Spoon 2 TBLS soup mix down center of each shell. Set remaining mix to the side. Then add about 1/4 cup chicken mix down each shell and sprinkle some cheese over the chicken. Fold shell sides over filling and place seam side down in baking dish.

1 cup whole buttermilk
1/2 cup mayonnaise

1/2 green bell pepper
2 pounds ground chicken (not chicken breast)

Steps:

  • Preheat the oven to 400 degrees F. Coat two large, rimmed baking sheets with nonstick cooking spray.
  • For the Blue Cheese Sauce: Stir together the blue cheese, buttermilk, sour cream, mayonnaise, lemon juice and garlic powder in a small bowl. Season with salt and pepper to taste. Refrigerate until ready to serve.
  • For the meatballs: Pulse the celery, onion and bell pepper in a food processor until finely minced. Combine the minced vegetables with the ground chicken, breadcrumbs, egg and House Seasoning (see recipe below) in a large bowl. Shape the mixture into 48 1-inch meatballs and place 1 inch apart on the prepared baking sheets. Bake until the meatballs begin to brown, about 10 minutes. Turn the meatballs.   • While the meatballs bake, combine the butter, hot sauce and Worcestershire sauce in a medium saucepan over medium heat. Cook until the butter is melted. Add the cooked meatballs to the saucepan and turn to coat. Cover and keep warm until ready to serve. Serve the meatballs with the blue cheese sauce, celery sticks and sprinkle with parsley.
  • Stir together the garlic powder, onion powder, sweet paprika, pepper and salt in a small bowl. Store in an airtight container.

  • Chicken: Soak the chicken in the hot sauce in the refrigerator for at least 30 minutes.
  • Put the flour in a pie tin and season with salt and Cajun seasoning.
  • Remove chicken from hot sauce, shake off excess, and dredge chicken in the flour.
  • Set on a baking rack.
  • Heat the butter and oil in a large skillet over medium heat.
  • When the butter has stopped bubbling, add the chicken tenders and cook until golden and cooked through, about 3 minutes per side.
  • Remove from the pan and drain on paper towels.
  • Serve warm with blue cheese dipping sauce and celery pieces.

  • 2. Combine first 4 ingredients in a small bowl. Cut a horizontal slit through thickest portion of each chicken breast half to form a pocket. Stuff cheese mixture evenly into pockets.
  • 3. Place flour in a shallow dish. Combine milk and egg in a shallow dish, stirring well with a whisk. Place panko in a shallow dish. Working with 1 chicken breast at a time, dredge chicken in flour, then dip in egg mixture; dredge in panko. Repeat procedure with remaining chicken, flour, egg mixture, and panko.
  • 4. Heat a large ovenproof skillet over medium-high heat. Add 1 tablespoon butter to pan; swirl until butter melts. Arrange chicken in pan; cook 4 minutes or until browned. Turn chicken over; place skillet in oven. Bake at 350 for 20 minutes or until done.

  • Preheat oven to 400 degrees F. Coat 2 large baking sheets with cooking spray.
  • In a small bowl, combine salt, chili powder and black pepper.

1 clove garlic, minced
1/4 cup plus 2 tablespoons Frank's Red Hot Original Cayenne Pepper Sauce (or similar brand)
1/4 teaspoon kosher salt
1/2 teaspoon onion powder
1/2 teaspoon chili powder
3/4 teaspoon sugar

Steps:

  • Heat the grill to medium-high. Season the wings with salt and pepper. Using grill tongs, dip a wad of paper towels in oil, then carefully rub the grill grate until glossy and coated. Grill the wings, covered, flipping occasionally, until they are golden brown, crispy and completely cooked through, about 20 minutes. Keep a close eye on the grill: if there are flare-ups or the wings begin to burn, move the wings to a cooler part of the grill or reduce the heat. You don't want grill marks on the wings; just a nice and even golden-brown color. While the wings are cooking, make the sauce. Combine the butter and garlic in a microwave-safe bowl. Cook for about one minute in the microwave until the butter is melted. Stir in the hot sauce, salt, onion powder, chili powder and sugar. Set aside. Dip the cooked wings in the sauce and serve immediately. Alternatively, serve the wings plain with the sauce on the side.

1 small onion, chopped
1 small green pepper, chopped
4-1/2 teaspoons canola oil
2 garlic cloves, minced
3 cups finely chopped rotisserie chicken
1-1/2 cups (6 ounces) shredded part-skim mozzarella cheese
1/2 cup Buffalo wing sauce
1/4 teaspoon salt
1/4 teaspoon pepper
5 sheets refrigerated pie pastry
2 eggs
2 tablespoons water
1 cup heavy whipping cream
1 cup (4 ounces) crumbled blue cheese

Steps:

  • In a small skillet, saute onion and green pepper in oil until crisp-tender. Add garlic; cook 1 minute longer.
  • In a large bowl, combine the chicken, mozzarella cheese, wing sauce, salt and pepper. Stir in the onion mixture.
  • On a lightly floured surface, unroll one pastry. Roll out into a 12-in. circle. Cut with a floured 3-in. biscuit cutter. Remove excess dough and reroll scraps. Repeat with remaining pastry.
  • Beat eggs and water; brush over edges of pastry circles. Place heaping teaspoonfuls of filling in the centers. Fold dough over filling. Press edges with a fork to seal.
  • Place 2 in. apart on greased baking sheets. Brush with remaining egg mixture. Bake at 400° for 9-12 minutes or until golden brown.
  • Meanwhile, in a small saucepan, bring cream to a boil. Reduce heat; simmer, uncovered, for 5-7 minutes or until slightly thickened, stirring occasionally. Add blue cheese; cook and stir 2 minutes longer or until cheese is melted and sauce thickens. Serve with empanadas.
  • Yield: 8 dozen (1 cup sauce).
  • Make Ahead: Unbaked empanadas may be frozen for up to 2 months. Bake as directed for 12-16 minutes.

BUFFALO CHICKEN SAUCE OVER RICE

I had a lot of Recipe #225888 leftover from a cookout so after some wonderful suggestions in the forums from a few other cooks, I came up with this. It sure was yummy! I served it over rice, but I'm sure you could serve it over any kind of pasta. I've also halved the original recipe (with the exception of the canned chicken since I always use more anyway) since that's about the amount of dip I had leftover. And I changed some of the ingredients from the original to get it to the way I usually make it.

2 (10 ounce) cans canned chicken, drained and flaked
1 (8 ounce) box cream cheese
1 cup shredded cheddar cheese
1/2 cup blue cheese, crumbles
3/4 cup hot sauce (I use Frank's)
1/4 cup milk
1/4 cup white wine (or chicken broth)
1/2 teaspoon garlic powder
1/2 teaspoon seasoning salt
1 (15 ounce) can petite diced tomatoes, lightly drained
1 (8 ounce) can tomato sauce
2 celery ribs, diced
1/2 tablespoon butter
3 medium chicken breasts, cut up
salt
pepper
rice, cooked and used for serving

Steps:

  • Mix the canned chicken, cream cheese, shredded cheddar, blue cheese crumbles, milk, white wine, garlic powder and seasoned salt in a crock pot over high. Cover and set aside, stirring occasionally, so it melds together while cooking the rest of dinner.
  • WHEN IT IS ALL SOFTENED AND MIXED TOGETHER, REDUCE HEAT TO LOW OR WARM.
  • In a large saucepan, cook diced tomatoes and tomato sauce. Heat to bubbly over MEDIUM. Reduce heat to LOW, cover and allow to simmer for 10 minutes.
  • While tomato sauce mixture is simmering, heat butter in a small saucepan over MEDIUM-HIGH heat. Add celery and saute for 5 minutes. Remove from heat and stir into crock pot mixture.
  • Remove the tomato sauce from heat and stir into crock pot mixture. Recover crock pot and allow to continue cooking.
  • Rinse the tomato sauce pan and heat over MEDIUM heat. Add chicken and cook until no longer pink and juices run clear. Don't worry about draining if it's watery.
  • Add chicken to crock pot mixture. Stir to combine.
  • Serve over rice or any other pasta. If it still seems too thick, thin the sauce with more milk or white wine.

6 teaspoons butter
1/4 cup hot pepper sauce
vegetable oil for frying
18 chicken wings about 3 LBS disjointed with the tips discarded
BLEU CHEESE DIPPING SAUCE
1/4 pound blue cheese, Roquefort, or Gorgonzala
1/2 cup mayonnaise
1/2 cup sour cream
1 tablespoon lemon juice
1 tablespoon white wine vinegar

Steps:

  • Melt butter in a small saucepan. Add hot sauce and remove from heat. In deep fryer, heat 1 inch of oil to 375 degrees. Fry wings in batches without crowding until golden brown, 10 to 15 minutes. Drain on paper towels.Brush wings with spicy butter and serve warm with bleu cheese dipping sauce.BLEU CHEESE DIPPING SAUCE:Several dashes of hot pepper sauce, to taste. In small bowl, mash the bleu cheese, leaving some small lumps. Whisk in the mayonnaise until blended. Add the remaining ingredients and whisk to blend well. Cover and refrigerate until serving time.
