2 cups shredded cooked chicken breast
1 teaspoon dry ranch salad dressing mix (such as Hidden Valley Ranch®)
1 teaspoon salt
½ teaspoon black pepper
½ teaspoon garlic powder
1 (8 ounce) package Neufchatel cheese
1 (8 ounce) container sour cream
½ cup Buffalo wing sauce (such as Frank's RedHot®)
½ cup shredded sharp Cheddar cheese

Steps:

  • Bring a large pot of lightly salted water to a boil. Cook rigatoni in the boiling water, stirring occasionally until tender yet firm to the bite, about 12 minutes. Drain and set aside.
  • Season chicken with ranch dressing mix, salt, pepper, and garlic powder. Set aside.
  • Meanwhile, combine Neufchatel cheese, sour cream, and Buffalo wing sauce in a large saucepan over low heat. Cook, stirring constantly, until well combined, about 3 minutes. Add Cheddar cheese and stir well until melted. Add pasta and chicken and continue cooking until well incorporated and heated through.

1 (16 ounce) package uncooked rotini pasta
½ cup mayonnaise
1 cup chunky blue cheese dressing
½ cup buffalo wing sauce
1 teaspoon salt
½ teaspoon black pepper
1 pound frozen cooked chicken strips, defrosted and diced
½ cup red bell pepper, diced
½ cup green bell pepper, diced
1 cup red onion, diced

Steps:

  • Fill a large pot with lightly salted water and bring to a rolling boil over high heat. Once the water is boiling, stir in the rotini, and return to a boil. Cook uncovered, stirring occasionally, until the pasta has cooked through, but is still firm to the bite, about 8 minutes. Drain well in a colander set in the sink.
  • Stir together the mayonnaise, blue cheese dressing, buffalo wing sauce, salt and pepper in a large bowl. Add the chicken, bell peppers, red onion, and cooked pasta and toss to coat with the dressing. Cover and chill at least 1 hour in the refrigerator before serving.

2 skinless, boneless chicken breasts, cut into 1-inch chunks
6 ounces hot sauce
½ stick butter, melted
1 tablespoon olive oil
1 (10 ounce) package sliced baby bella mushrooms
1 medium Spanish onion, chopped
2 cloves garlic, chopped
1 teaspoon balsamic vinegar
1 bunch asparagus, trimmed and chopped
1 pound penne pasta
1 cup ricotta cheese
½ cup crumbled Gorgonzola cheese
½ cup grated Cheddar cheese
½ cup chopped fresh parsley
salt and ground black pepper to taste

Steps:

  • Combine chicken, hot sauce, and melted butter in a bowl and marinate for 2 hours.
  • Heat oil in a skillet over medium-high heat. Saute mushrooms, onion, and garlic in the pan until soft, 3 to 4 minutes. Stir in balsamic. Set aside.
  • Heat another skillet over medium-high heat. Pour in Buffalo sauce marinade and chicken; saute until no longer pink in the centers, 5 to 7 minutes.
  • Meanwhile, place a steamer insert into a saucepan and fill with water to just below the bottom of the steamer. Bring water to a boil. Add asparagus, cover, and steam until tender, 5 to 10 minutes. Transfer immediately to a bowl of ice water to shock so they stay nice and green.
  • Bring a large pot of lightly salted water to a boil. Add penne and cook, stirring occasionally, until tender yet firm to the bite, about 11 minutes. Drain; reserving 1 ladleful of pasta water. Stir Buffalo chicken mixture, asparagus, and reserved pasta water into pasta. Add ricotta cheese, Gorgonzola cheese, and Cheddar cheese.
  • Heat pasta mixture over low heat until all cheese is melted and looks like a cream sauce, 3 to 5 minutes. Toss in parsley, salt, and pepper and serve.

1 cup celery, chopped
1/2 cup blue cheese, crumbles

  • Cook pasta per package instructions, rinse with cold water.
  • While the pasta is cooking chop half of a red onion, 5 stalks of celery, and half of a precooked whole chicken into equal size small pieces. Add all of these to a large mixing bowl along with the container of blue cheese crumbles.
  • In a separate bowl whisk together the hot sauce and olive oil, I use an immersion blender as these two items are not easy to combine. If you are using a whisk slowly add the olive oil while mixing.
  • Add the pasta and sauce to the large mixing bowl and mix well but don't destroy the pasta. You are looking to get all the little bits of goodness to get into the ridges of the pasta.
  • For best results chill until cool. Depending on the hot sauce and your tastes you can always add more hot sauce, or add some blue cheese dressing to adjust the flavor.

1 pkg Barilla Plus multi-grain rotelli or farfalle
2 carrots, shredded
2 stalk(s) celery, chopped
2 shallots, finely chopped
1/3 c Franks Buffalo sauce
2/3 c your favorite light ranch dressing
2 c shredded chicken (I use baked tenders)

8 ounces chicken strips (I use Tyson's Grilled Chicken Strips)
3/4 cup celery (minced)
1/2 cup green pepper (minced, you can use red, orange, or yellow if you prefer)
1/2 cup purple onion (minced)
2 eggs (Hard Boiled and chopped)
3/4 cup mayonnaise (I use low-fat mayo)
1/2 cup ranch dressing (I use low-fat dressing)
1/4 cup buffalo wing sauce
3 tablespoons vinegar
1/2 teaspoon garlic salt
pepper, as desired

Steps:

  • Cook pasta according to package directions. Drain, rinse with cold water, and drain again.
  • Chop chicken into bite-sized pieces. I sometimes use Southwest flavored chicken strips instead of grilled. Just depends on what I have on hand.
  • Combine pasta, chicken, celery, peppers, and onion. Other veggies can be added if you like. I've sometimes added peas, corn, or cucumbers.

1 1/2 cups heavy cream
1/2 cup hot pepper sauce (Durkee)
2 tablespoons garlic, chopped
1 teaspoon fresh coarse ground black pepper
1/2 teaspoon cayenne pepper (optional)

4 cups chicken, rotisserie, coarsely chopped
1 1/2 cups blue cheese, crumbled
1/4 cup scallion, white and green parts, chopped

Steps:

  • In a large saucepan, cook the pasta according to the package instructions until al dente. Drain, do not rinse, and set aside.
  • In another large saucepan, heat the heavy cream, hot pepper sauce, garlic, black pepper and cayenne, if using, over medium heat, stirring until well blended. Season to taste with salt. Add hot pasta and chicken and stir until well coated and warmed through.
  • Remove the pasta from the heat and stir in blue cheese and scallions. Serve immediately.

1 (11 1/2 ounce) can cream of chicken soup
1/2 cup hot sauce (like for buffalo wings)
6 ounces mozzarella cheese, shredded (about 1 1/2 cups)
1/2 cup blue cheese, crumbled
1 1/2 cups sour cream
3 cups penne, uncooked

Steps:

  • Season chicken salt and pepper and put it in the crock.
  • Add the chicken soup and hot sauce and stir.
  • Cook on low 4-6 hours or high 2-3.
  • Stir in cheeses and sour cream and turn off the crock pot.
  • Boil pasta according to package instructions, drain well and add to the chicken/sauce mixture.
  • Stir well and serve!

Totally made up this recipe because I had chicken breasts, bacon and Atkins penne pasta. I love spicy food and I have tried other buffalo chicken pasta recipes, but this one is the best (if I do say so myself). You can use regular pasta and different cheeses if you wish. You may be able to find some shortcuts since this is a long recipe, but I promise you will be happy if you follow it exactly :)

36 ounces boneless skinless chicken breasts or 3 large chicken breasts
salt and pepper
1 tablespoon olive oil
4 teaspoons Frank's red hot sauce
4 tablespoons wing time buffalo wing sauce
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
1/4 teaspoon red pepper flakes
1/8 teaspoon cayenne pepper
7 slices bacon
8 ounces penne pasta (or any pasta)
2 tablespoons butter
2 tablespoons flour
1 cup skim milk
2 ounces monterey jack pepper cheese
2 ounces shredded colby-monterey jack cheese
3 ounces Velveeta cheese

Steps:

  • Cut up chicken into pieces, season with salt and pepper, and cook in olive oil in large skillet until brown. I had to cook in two batches.
  • Put chicken into large bowl and add hot sauce, buffalo sauce, garlic powder, onion powder, red pepper flakes, and cayenne pepper. Stir until well coated.
  • Cook bacon in microwave for 6 minutes. I use a plate, cover with paper towel, lay bacon on paper towel, then cover with another paper towel. Once cool, crumble into pieces.
  • In a large pot, boil water, add pasta and cook according to directions. Drain in a collander and set aside.
  • In same pot, melt butter. Stir in flour and cook until light brown.
  • Slowly add milk, stirring with a wisk.
  • Add cheeses one at a time until melted.
  • Add salt and pepper to taste.
  • Add pasta and stir until coated.
  • Add chicken and stir until coated.
  • Add bacon and stir until mixed well.
  • Enjoy!

This is a great merge of buffalo chicken and pasta salad - sort of. I found this recipe on a wonderful blog called How Sweet It Is, and I have adapted it slightly. My family loves when I make this for dinner! I usually serve it with steamed mixed vegetables.

1 lb pasta (penne, rotini, or something similar)
3 boneless skinless chicken breasts, cooked and cut into chunks
1 tablespoon butter
1 tablespoon flour
1 1/2 cups milk (I use fat free)
1 cup monterey jack cheese, grated
1/2 cup cheddar cheese, grated
1/3 cup buffalo wing sauce
1/3 cup panko breadcrumbs
salt and pepper, to taste
1/2 cup chopped tomato
3/4 cup chopped green onion
1/2 cup gorgonzola
additional buffalo wing sauce

Steps:

  • Cook the pasta according to directions.
  • While pasta is cooking, preheat the oven to 375 degrees F.
  • Heat a medium saucepan over medium heat. Add the butter, and once it's melted and bubbly add the flour. Whisk together to create a roux and cook for 1-2 minutes until mixture gets a bit golden in color.
  • Add milk. Continue stirring until milk thickens.
  • Add in grated cheeses and continue to stir until mixture is smooth. Stir in buffalo wing sauce.
  • Taste and season with salt and pepper if needed.
  • Spray a 9x13 baking dish with non-stick spray.
  • Add pasta and chicken, then pour cheese sauce over and mix thoroughly until everything is coated.
  • Sprinkle with additional grated cheese and bread crumbs.
  • Bake for 25 minutes or until cheese is golden brown.
  • Remove from oven and immediately top with desired garnish (I put tomatoes on mine, husband puts buffalo sauce on his).

Steps:

  • Cook pasta as directed on package, omitting salt.
  • Meanwhile, heat oil in large skillet on medium heat. Add chicken; cook and stir 5 min. Add celery and garlic; cook 2 min. or until chicken is done and celery is crisp-tender, stirring frequently.
