1 cup Hellmann's mayonnaise
2 teaspoons finely chopped onions
1/4 cup chopped fresh parsley
1/2 cup sour cream
1 teaspoon lemon juice
1 teaspoon white vinegar (red is fine too)
1/2 cup mild blue cheese, crumbled
1 teaspoon minced garlic
25 chicken wings, tips removed, separated at joint (will have 50 pieces)
8 teaspoons melted butter
2 teaspoons vinegar
2/3 cup hot pepper sauce (Like Louisianna Hot Sauce)
cayenne pepper

Steps:

  • Mix all dip ingredients and chill overnight if possible.
  • Spread wings out on a lightly oiled cookie sheet.
  • Mix melted butter, vinegar, and hot pepper sauce.
  • Brush butter mixture onto wings.
  • (Can do this ahead and hold for 2 hours maximum if at room temp).
  • Bake at 400° for 20- 30 minutes, or until wings are cooked through.
  • Baste one time during cooking.
  • Sprinkle cayenne during last 5 minutes of cooking for more heat.
  • Serve hot with dip and celery sticks.

4 boneless skinless chicken breasts
16 ounces cream cheese (light is fine, but not fat free)
1 (12 ounce) bottle blue cheese dressing
1/2-3/4 cup hot sauce
8 ounces sharp cheddar cheese

Steps:

  • Boil in a large sauce pan enough water to cook the chicken breasts.
  • Then, boil the chicken until its cooked through, about 15 minutes.
  • Remove the chicken, pat dry, and shred with a fork.
  • Then place the shredded chicken in a large baking dish.
  • For a tailgate, I usually use 2 of those disposable 8 by 8 aluminum pans, or one large lasagna-size one.
  • Pour your desired amount of hot sauce over the chicken, and season with salt and pepper if desired.
  • Set this dish in the refrigerator to let the chicken absorb the flavor.
  • Preheat your oven to 350.
  • Next, over medium heat in a large pan, melt the cream cheese.
  • Pour in the blue cheese dressing and stir until they are completely combined.
  • Pour this mixture over the chicken.
  • Bake for 10 minutes.
  • Remove, but don't turn the oven off.
  • Sprinkle the cheddar cheese evenly over the top and return to the oven for another 10-15 minutes, until the cheese is melted and starting to brown just a little.
  • Serve hot or cold with chips!

These are simple, delicious and pefect for Super Bowl Sunday or any party! My family and friends always rave about them, sometimes I have to make an extra batch because they go so fast. You don't have to use a rotisserie chicken, but it sure cuts back on the time. If you don't like things too spicy, you can always cut back on the hot sauce and green onions.I like to use peanut oil for frying. They freeze well too. Making the dip ahead of time, then placing in fridge, allows the flavors to marry well. Bring it back to room temp to serve. This is adapted from a Food Network Show, Big Daddy's House. 1 store-bought rotisserie-cooked chicken
1/4 cup hot sauce (recommended Frank's Red Hot)
1 teaspoon ground black pepper
1 3/4 cups sharp cheddar cheese, grated
1/2 cup thinly sliced green onion, green tops as well
1 cup all-purpose flour
3 eggs, lightly beaten
2 cups panko breadcrumbs
vegetable oil, for frying
1 1/2 cups mayonnaise
1/2 cup packed blue cheese, crumbled
1/2 teaspoon hot sauce
2 teaspoons Worcestershire sauce
1/2 teaspoon salt
1/2 lemon, juiced
1 teaspoon minced garlic

Steps:

  • Have oil heated to 350 degrees F.
  • Pick the meat from the chicken and discard the skin, then dice.Place the chicken in a large bowl and add the hot sauce, pepper, cheese, and green onions, and toss to combine. Roll the chicken into 2-ounce balls, about the size of a golf ball.
  • Place the flour, eggs, and Panko crumbs in 3 separate bowls. Roll each ball in the flour, then the egg and then the bread crumbs. Set aside.
  • When the oil is hot fry the chicken balls in batches. Cook for about 2 minutes per batch. Drain on paper towels.
  • To make the dip, combine all ingredients in a large bowl and adjust the seasoning if necessary. Serve the chicken alongside the dipping sauce.

¾ cup freshly grated mozzarella cheese
1 ½ pounds shredded cooked chicken breast
⅔ cup chunky blue cheese dressing
½ cup Buffalo wing sauce
1 (8 ounce) package cream cheese, softened and cubed
¾ cup crumbled blue cheese

Steps:

  • Preheat the oven to 425 degrees F (220 degrees C).
  • Combine Cheddar and mozzarella cheeses in a small bowl. Stir chicken, blue cheese dressing, and Buffalo sauce together in a medium bowl.
  • Place cream cheese cubes in the bottom of a 9-inch baking dish. Sprinkle 1/2 of the Cheddar-mozzarella mixture over top to cover the bottom of the dish. Taken from the Heart Healthy cookbook. Note: prep time includes marinate/refrigeration time. Note: After making these many times, I have found that it is much easier to cook them on the George Foreman after marinading. I'm sure pan frying would work as well. Experiment and enjoy!

3 cloves crushed garlic
1 -3 teaspoon cayenne pepper (depending on how hot you like)
1 -3 teaspoon chili powder (depending on how hot you like)
1 lemon, juice of
2 tablespoons paprika
4 tablespoons olive oil
1 tablespoon tomato puree
3 lbs chicken wings
6 ounces blue cheese
1 small onion, chopped fine
2 cloves crushed garlic
7 1/2 fluid ounces mayonnaise
1/4 pint sour cream
2 tablespoons lemon juice
2 tablespoons freshly chopped parsley

Steps:

  • Make a paste with the garlic, cayenne, chili powder, lemon juice and paprika.
  • Gradually mix in the olive oil and tomato puree.
  • In a large glass bowl tumble the wings in the paste until evenly coated.
  • Cover with plastic wrap and refrigerate for at least 4 hours.
  • Tumble the wings again to ensure an even coating.
  • Preheat oven to 425F.
  • Arrange the wings on a baking try lined with aluminium foil and bake or 25 minutes, until crisp.

2 teaspoons salt
2 teaspoons chili powder
1/4 teaspoon freshly ground black pepper
6 boneless, skinless chicken breast halves
2 tablespoons hot chili oil
2 large sweet potatoes, peeled and cut into wedges
1 large eggplant, cut crosswise into 1/2-inch thick rounds
1/2 cup sour cream
1/4 cup crumbled blue cheese
4 stalks celery, cut into 4-inch pieces, optional

Steps:

  • Preheat oven to 400 degrees F. Coat 2 large baking sheets with cooking spray.
  • In a small bowl, combine salt, chili powder and black pepper.
  • Pat chicken dry. Brush chicken all over with chili oil. Sprinkle salt mixture all over chicken and transfer chicken to prepared baking sheet. Roast 25 minutes, until cooked through.

3 lbs chicken wings
1/2 cup butter
1 teaspoon cayenne pepper
4 teaspoons hot sauce
1 teaspoon kosher salt
1 1/2 cups crumbled gorgonzola or 1 1/2 cups any blue cheese
1 cup mayonnaise
3/4 cup sour cream
2 tablespoons milk
3/4 teaspoon Worcestershire sauce

Steps:

  • Preheat Broiler.
  • Cut chicken wings in thirds, cutting between the bones. Discard wing tips. Melt butter and add cayenne, hot sauce and 1 teaspoons kosher salt. Put wings on sheet pan and brush with melted butter mixture. Broil about 3 inches below heat source for 8 minutes. Turn wings, brush with butter, and broil 4 more minutes, or until cooked.
  • For dip: Place blue cheese, mayo, sour cream, milk, worchestershire, salt and pepper in bowl of food processor fitted with steel blade. Process til smooth.
  • Serve the chicken wings hot or at room temp with blue cheese dip and celery sticks.

Cooking spray
2 reserved chicken breast halves, diced, about 2 cups
1 cup mozzarella cheese, shredded
2/3 cup reserved tomato sauce
1 teaspoon liquid smoke
1 teaspoon hot sauce
1 pound fresh or frozen pizza or bread dough, thawed according to package directions
1 tablespoon olive oil
2 tablespoons grated Parmesan
1 cup sour cream
1/3 cup blue cheese, crumbled
2 tablespoons fresh chives, chopped

Steps:

  • Preheat oven to 450 degrees F.
  • Coat a large baking sheet with cooking spray.
  • In a large bowl, combine chicken, cheese, tomato sauce, liquid smoke, and hot sauce. Mix well and set aside.
  • Roll dough out, using a rolling pin, to a 12-inch circle. Spread chicken mixture over half of circle, to within 1-inch of the edge. Fold over untopped side so that it meets the other side, forming a half moon. Pinch the edges together to seal.
  • Transfer calzone to prepared baking sheet and brush the top with olive oil. Sprinkle the top with Parmesan. Using a sharp knife, make a few slits in the top to allow steam to escape during cooking. Bake 15 minutes, until puffed up and golden brown. Let stand 5 minutes before serving.
  • While the calzone is baking, in a small bowl, combine sour cream, blue cheese and chives.
  • Serve calzone sliced with sour cream dip on the side.
