OVERNIGHT SOURDOUGH BUCKWHEAT PANCAKES
I find the taste of pure buckwheat pancakes too strong so I am using half all-purpose and half buckwheat flour. The pancakes can be served with syrup for breakfast, or like blinis with savory toppings such as smoked salmon and sour cream.

Steps:
- Stir all-purpose flour, buckwheat flour, sourdough starter, and milk together in a 1-quart container with a tight-fitting lid until evenly combined. Cover with lid and let sit on the counter, 8 hours to overnight.
- Stir in eggs, butter, baking powder, vanilla extract, and salt the next morning. Whisk until smooth.
- Spray a skillet with cooking spray and heat over medium heat. Pour about 2 tablespoons of batter into the skillet for each pancake and cook until bubbles form and the tops look dry, about 2 minutes. Flip pancakes over and cook for 1 more minute.

- In a medium bowl, thoroughly combine the buckwheat flour, whole-wheat flour, egg, and baking powder, mixing until evenly blended.
- Add the water, applesauce, and vanilla extract, and stir until only small lumps remain.
- Heat a large nonstick skillet coated with cooking spray over medium heat.
- Working in batches, pour the batter into the pan and cook for 2 to 3 minutes, or until the bottom is browned.
- Turn and cook for 1 to 2 minutes longer, or until golden brown.
- Remove to a plate and keep warm.
SOUTH BEACH OATMEAL PANCAKE
This big pancake can be eaten during Phase II of the diet and is very filling. You can use a low sugar syrup if you would like; I prefer it with just a few spritzes of trans free margarine spray and a few sprinkles of Splenda. This recipe is courtesy of The South Beach Diet book.

BUCKWHEAT PANCAKES

- Preheat the skillet: Heat a well-seasoned griddle, cast iron skillet, or stick-free pan on medium heat. The pan or griddle should be ready for the batter as soon as it is mixed.
- Flip the pancakes: Watch for bubbles on the surface of the pancake. When air bubbles start to rise to the surface at the center of the pancake, flip the pancake. Cook for another 1 to 2 minutes, or until nicely browned.

OLD FASHIONED BUCKWHEAT PANCAKES
This came from a recipe book that I received from my mother for graduation from High School many years ago. According to this book the pancake was brought to USA by the early Dutch settlers. Later the Germans in Pennsylvania would serve the pancakes for breakfast, lunch, or dinner.

Steps:
- Dissolve yeast in warm water.
- Add cold water.
- sift dry ingredients.
- mix in rest.
- Let the ingredients stand at room temperature for at least 30 minutes.
- Heat griddle while mixing the batter the next morning.
- To test sprinkle with drops of water.
- If bubbles"skitter around," heat is just right and cakes will brown immediately.
- Pour batter from tip of a large spoon or from a pitcher, in pools a little apart (for perfectly round cakes).
- If it is necessary grease griddle very lightly.
- Turn pancakes as soon as they are puffed and full of bubbles, but before they break, important for light cakes.
- Turn and brown on the other side.
- Keep pancakes hot for desserts, etc.
- by placing between folds of wax paper in a warm oven.
- Or place pancakes separately on a rack in a very low oven with the door ajar.
- (DO NOT STACK THEM).
SOURDOUGH BUCKWHEAT PANCAKES
Buckwheat pancakes are the best! I love them with a fresh blueberry syrup and loads of sweet cream butter!

Steps:
- In a large bowl mix the starter, egg, vegetable oil, sugar and vanilla together. Stir in the salt, buckwheat flour, all-purpose flour, baking soda and ginger. Mix until just combined. Adjust consistency with more flour or some water, depending upon how thick your starter is. The batter should be pourable, but not runny.
- Heat a griddle to 400 degrees F (200 degrees C). Lightly grease griddle and ladle 1/4 to 1/3 cup of batter onto hot greased griddle. Cook for about 3 to 4 minutes or until top is full of bubbles. Use a spatula to turnover and cook other side for and additional 2 minutes or so. Serve hot!

These are my favourites pancakes because they are delicious and healthy, fluffy and thick! If you wish you can use whole wheat flour adding some more liquid to the batter.

- In a large bowl, sift together the flours, baking powder, salt and sugar.
- Make a well in the center and pour in the milk, egg whites and melted butter.
- Mix until smooth.
- Heat a lightly oiled griddle or frying pan over medium high heat.
- Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake.
- Brown on both sides and serve hot with syrup or honey.
- It's possible to prepare batter the night before and refrigerate it covered overnight.
