Steps:

  • Heat 2 tablespoons olive oil in a small skillet over medium heat; add 2 chopped garlic cloves and 1/2 teaspoon each cumin seeds and kosher salt and cook 2 minutes. Stir in 1 tablespoon brown sugar, the juice of 1/2 lemon and a pinch of red pepper flakes. Toss with 1 1/4 pounds halved Brussels sprouts on a baking sheet. Roast at 450 degrees F until tender, 18 to 24 minutes. Toss with torn cilantro.

3 pounds Brussels sprouts, trimmed and halved
1/4 cup olive oil
8 garlic cloves, minced
1 teaspoon salt
1/2 teaspoon pepper
1 package (5.3 ounces) fresh goat cheese, crumbled

Steps:

  • Preheat oven to 425°. Toss first five ingredients; spread in a greased 15x10x1-in. pan. Roast until tender, 20-25 minutes, stirring occasionally. Transfer to a bowl; toss with cheese.

This is a very easy and yummy way to eat Brussels sprouts.

6 tablespoons olive oil
1 pound Brussels sprouts, trimmed and halved lengthwise
6 cloves garlic, minced
salt and ground black pepper to taste
1 tablespoon balsamic vinegar

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C).
  • Heat oil in a cast iron skillet until shimmering. Place Brussels sprouts carefully in the hot oil, cut-side down. Sprinkle in garlic, salt, and pepper. Cook until Brussels sprouts begin to brown, 3 to 5 minutes.
  • Transfer skillet to the preheated oven and cook until Brussels sprouts are very browned and tender, 10 to 20 minutes. Shake skillet every 5 minutes to ensure even cooking.
  • Season with salt and pepper, stir in balsamic vinegar, and serve immediately.

These balsamic-roasted brussels sprouts are perfectly crispy, and topped with crumbled goat cheese. They're the perfect green veggie side dish.

1 1/2 pounds Brussels sprouts - trimmed and halved
3 cloves garlic - roughly chopped
1 ½ tablespoons extra-virgin olive oil
1/2 teaspoon kosher salt
1/4 teaspoon black pepper
2 tablespoons grated parmesan
2 cups balsamic vinegar
1/4 cup crumbled goat cheese

Steps:

  • Preheat oven to 400° F.
  • Trim the brussels sprout stems and remove any yellow leaves, cut lengthwise into halves or quarters depending on the size. Try to maintain the same brussels sprouts size for even cooking.
  • Place brussels sprouts in a mixing bowl. Toss with olive oil, garlic, salt, pepper, and parmesan until evenly coated.
  • Place brussels sprouts in a baking dish and roast for 20-25 minutes or until golden and tender.
  • While the brussels are roasting, add 2 cups balsamic vinegar to a saucepan. Cook over medium heat until it's bubbling. Reduce heat to low and continue to simmer until reduced by about half and coats the back of a spoon. Stir it occasionally but keep it at a low simmer.
  • Just before serving, sprinkle brussels sprouts with goat cheese and drizzle with balsamic reduction.

Brussels Sprouts With Garlic and Cheese image

4 cups fresh brussels sprouts
Salt to taste
4 to 8 tablespoons butter, as desired
2 or 3 crushed garlic cloves (or to taste)
Juice of 1/2 lemon, or to taste
Grated Parmesan cheese, to taste

Steps:

  • Cook the brussels sprouts, uncovered, in water salted to taste until they are just tender, not soft. Drain, shock under cold water, drain again and set aside until needed.
  • Melt the butter in a deep pot over low heat and saute the garlic briefly until soft but not browned. Stir in the lemon juice and set the mixture aside till needed.
  • At the last minute, heat the butter-garlic-lemon mixture, add the brussels sprouts and toss gently until heated through. Add the grated cheese, toss lightly once again and serve
