BRIDAL/BABY SHOWER TUNA/CHICKEN SALAD
When I got engaged, at my bridal shower we served this salad and everyone loved it. I then started making it for my friend's bridal showers. It is a great hit and has a wonderful taste. Definately different from the usual salads. I usually cut up all the vegetables the night before so on the day of the party all I have to do is mix it up. Perfect for a crowd.

Steps:
- Marinate tuna or chicken with the rice in combined dressing ingredients overnight.
- Add all other ingredients approx 1 hour before serving.
- Serve on lettuce lined platter.

SOUTHERN TEA VEGETABLE SANDWICHES
This was served at all wedding receptions, bridal showers, baby showers etc. at my mother's house. It is a great sandwich with cream cheese as its base and lots of grated vegetables. No one was allowed to get married without these at the wedding. From the big plastic bag of my mother's recipes.

Steps:
- After grating all vegetables, drain and squeeze out all the liquid you can.
- Mix with cream cheese.
- Add seasonings and enough mayonnaise to spread.
- Serve on white bread with the crust removed and sliced in quarters.

WEDDING SHOWER CHICKEN SALAD
My friend's mom made this for a wedding shower for ME! Still blissfully married after 23 years, I thought I would share this recipe. We love it still, on a warm afternoon with iced tea and sometimes on a hot evening with a toasty Chardonnay.

Steps:
- Mix mayonnaise with curry powder and check for taste. Gently mix with all but the nuts. Allow to combine. Sprinkle with nuts and serve on lettuce leaves.

CHICKEN TUNA SALAD
Here's a recipe I whipped up to jazz up the usual tuna or chicken salad. Instead of the usual 'tuna' I actually use a can of chunk solid white albacore. The resulting salad can be used in a wrap, on bread, on lettice leaves, and various other ways! Very tasty!

- Drain the chicken & albacore & shred them in a bowl.
- Add the mayonnaise, mustard, preserves & pickle relish.
- Quarter the unpeeled apple & get rid of the core.
- Stand each quarter apple on its edge and slice each in half lengthwise, keeping the red halves.
- Dice these red halves & add to chicken/albacore mix, along with the raisins.
- Mix well & season with pepper to taste.
- Refrigerate.

BABY SPINACH SALAD WITH TUNA
The 3 components of this salad can be readied ahead of time and later mixed together for a healthful lunch. For the freshest tasting salad, open the can of tuna right before serving.

- In a small bowl, whisk together yogurt, Dijon, and lemon juice; season with salt and pepper. Place dressing in a resealable plastic bag or airtight container. Place spinach, grapes, and onion, if using, in another airtight container (separate from dressing). Refrigerate, up to overnight.
- Just before serving, drain tuna, add to salad, and toss with dressing. Include flatbreads, if desired.
