"I've always liked brussels sprouts but had few ways to prepare them until I discovered this simple and sensational soup, remarks Suzanne Strocsher of Bothell, Washington.

1 medium onion, chopped
1 medium potato, peeled and cubed
2 tablespoons butter
1 pound brussels sprouts or frozen brussels sprouts, thawed
3 cups chicken broth
1/2 to 1 teaspoon salt
1/4 to 1/2 teaspoon curry powder
1/8 teaspoon pepper
1 egg yolk
1/4 cup heavy whipping cream
Sour cream and paprika, optional

Steps:

  • In a large saucepan, saute onion and potato in butter until onion is tender. Add the brussels sprouts, broth, salt, curry powder and pepper; bring to a boil. Reduce heat; cover and simmer for 10-12 minutes or until vegetables are tender. Cool to room temperature. , Place the potato mixture, in small batches, in a blender, cover and process until blended. Return all to pan. Combine egg yolk and cream; stir into soup. Cook and stir for 4-5 minutes over medium heat (do not boil). Garnish with sour cream and paprika if desired.

1 finely sliced onion
1 kg prepared Brussels sprout
4 cups chicken stock
1/4 cup cream

Steps:

  • Melt buter in a saucepan and saute onion until tender. Add brussels sprouts and stock and bring to boil. Reduce heat and simmer for 15-20 minutes or until sprouts are cooked.
  • Puree in a food processor or put the soup mixture through a sieve.
  • Reheat and serve with swirls of cream.

I was looking for a new way to cook Brussels sprouts. This soup is one of my favorite ways now.

1 tablespoon olive oil
3 onions, thinly sliced
1 tablespoon sugar
1 pound Brussels sprouts, trimmed and halved
1 teaspoon fresh thyme
4 cups chicken stock
salt and ground black pepper to taste
½ cup sour cream
4 dashes hot pepper sauce (such as Frank's RedHot®), or to taste

Steps:

  • Combine oil and onions in a pot over low heat. Cover and cook until very tender and soft, 30 to 40 minutes. Remove cover and sprinkle sugar over onions. Cook, uncovered, until onions are light brown, 10 to 15 minutes more.
  • Stir Brussels sprouts and thyme into the pot. Pour in stock and season soup with salt and pepper. Bring to a boil, reduce heat, and simmer until sprouts are just tender, about 10 minutes.
  • Allow soup to cool slightly. Blend to a smooth consistency using an immersion blender. Reheat gently, about 2 minutes, and adjust seasoning if necessary.
  • Top each portion of soup with a spoonful of sour cream and a dash of hot pepper sauce.

30 chestnuts
1 tablespoon olive oil
1 cup shallots, minced
2 cloves garlic, minced
8 cups low-sodium store-bought or homemade Vegetable Stock
1/4 cup molasses
1/4 cup maple syrup
3 cloves Whole Roasted Garlic
1/4 cup (1/2 stick) unsalted butter

Steps:

  • Preheat oven to 375 degrees. Using a small sharp knife or a chestnut knife, carve an "X" in the flat side of each chestnut. Place chestnuts in an even layer, "X" side-down on a baking sheet. Transfer to oven and roast until opened, 10 to 12 minutes. Peel immediately, using a towel if chestnuts are too hot to touch; coarsely chop.
  • Heat olive oil in a medium saucepan over medium heat. Add shallots and garlic and cook, stirring, until soft and translucent. Add chestnuts and cook for about 1 minute. Add vegetable stock; bring to a simmer and cook for 30 minutes.
  • Add molasses, maple syrup, and roasted garlic. Bring to a simmer and continue cooking until chestnuts are soft, about 30 minutes more. Working in batches, carefully transfer to the jar of a blender; blend until smooth.

5 medium celery root, peeled and cut into 1/2-inch pieces
3 small onions, chopped
3 ribs celery, chopped
1 leek, white part only, rinsed well and chopped
10 shallots, chopped
16 cups store-bought or homemade Vegetable Stock
1 cardamom pod
1 (1-inch) stick cinnamon
1 teaspoon whole coriander
1 star anise
1 cup brussels sprout leaves (from about 15 brussels sprouts)
2 cups heavy cream
1/4 cup peeled, cored, and chopped honeycrisp apples

Steps:

  • Heat 2 tablespoons olive oil in a large saucepan over medium heat. Add celery root, onions, celery, leek, and shallots. Cover and cook, stirring occasionally, until soft and translucent, 8 to 10 minutes.
  • Add stock and bring to a simmer. Place cardamom, cinnamon, coriander, and star anise in a piece of cheesecloth. Using kitchen twine, tie to enclose; add to saucepan. Simmer until celery root is tender, about 35 minutes.
  • Meanwhile, in a medium skillet, heat remaining teaspoon olive oil. Add brussels sprout leaves and cook, stirring, until lightly browned and just wilted. Remove from heat and set aside.
  • Add heavy cream to saucepan and return to a simmer; cook 10 minutes more. Meanwhile, heat butter in a small skillet over medium-high heat until melted. Continue heating until butter is golden and fragrant; immediately remove from heat and set aside.
  • Remove cheesecloth packet from saucepan and discard. Working in batches, transfer mixture to the jar of a blender and carefully blend until pureed. Return puree to a saucepan, add browned butter, and reheat, if necessary. Serve hot, garnishing each bowl with 1 teaspoon reserved brussels sprout leaves, 1 teaspoon chopped apples, 3 tablespoons chestnut puree, and 1 teaspoon croutons.

1 medium onion, diced small
1 stalk celery, diced small
1 medium leek, white and light green parts only, diced small
2 cloves garlic, minced
1 teaspoon olive oil, plus more for sweating the vegetables
1 large bulb celery root, peeled and diced (about 2 1/2 cups)
4 cups milk
Salt
Pepper
Juice from 1 lemon (about 2 tablespoons, or to taste)
5 shallots, sliced thin
2 cloves garlic, smashed
1 sprig thyme
12 chestnuts, peeled and roughly chopped
1/2 ounce Calvados
Salt
Pepper
2 cups water
1 tablespoon celery root, diced and blanched
1 teaspoon carrots, diced and blanched
3 turnip pieces, quartered and blanched (about three tablespoons)
2 chestnuts, roasted
2 brussels sprouts, diced or leaves, blanched

Steps:

  • Prepare the soup. Sweat the onions, celery, leeks and garlic in a small amount of olive oil until soft without browning, for about 5 minutes. Add celery root and sweat for 4 minutes. Season with salt and pepper.
  • Add milk and then add water to cover, and simmer for 45 to 50 minutes.
  • Puree the milk mixture in a blender with 1 teaspoon olive oil and lemon juice. Strain through a fine mesh strainer.
  • Prepare the chestnut puree. Saute shallots, garlic, thyme and chestnuts over medium heat for 1 minute. Deglaze the pan by adding the Calvados. Season with salt and pepper to taste. Add water and simmer until tender. Puree the mixture in a blender, adding water to adjust consistency.
  • To plate (per serving): Pour 5 ounces (5/8 cup) of celery root soup and 1/4 cup of chestnut puree into each bowl. Garnish each bowl with diced celery root, carrots, turnips and roasted chestnuts.

Cauliflower Soup with Crispy Brussels Sprouts and Apples image

3 cups cauliflower florets (from about 1 small head)
1/2 white onion, coarsely chopped
2 sprigs fresh lemon thyme, plus 1 teaspoon leaves for garnish
1 1/2 quarts whole milk
Kosher salt
Extra-virgin olive oil, for frying
6 to 7 Brussels sprouts, leaves separated
Fleur de sel
1 tablespoon finely chopped fresh chives
Cracked black pepper
1 pink lady apple
Smoked extra-virgin olive oil, for drizzling

Steps:

  • Place the cauliflower florets in a large pot with the onion, thyme sprigs and milk. Slowly bring to a boil over medium-high heat. Season with kosher salt, cover and simmer until the cauliflower is soft, 25 to 30 minutes. Discard the thyme sprigs. Transfer the cauliflower mixture to a blender and puree until completely smooth. Taste and season with salt.
  • Fill a medium saucepan with 2 to 3 inches of olive oil and heat to 350 degrees F. Fry the Brussels sprout leaves a few at a time until browned, 30 to 40 seconds. Drain on paper towels and season with fleur de sel.
  • To serve, scoop the apple into balls with a Parisian scoop or small melon baller. Or, just dice the apple if a scoop is unavailable. Ladle the soup into shallow bowls or small shot glasses or espresso cups and garnish with the fried Brussels sprout leaves. Sprinkle with the chives, lemon thyme leaves, apple balls and season with fleur de sel and cracked black pepper. Drizzle with the smoked olive oil.

1 teaspoon smoked extra-virgin olive oil, plus more for garnish
3 cups cauliflower florets (about 1 small head)
1/2 white onion, coarsely chopped
2 sprigs fresh lemon thyme, plus 1 teaspoon leaves for garnish
1 1/2 quarts whole milk
Kosher salt
Extra-virgin olive oil, for frying
6 or 7 Brussels sprouts, separated into individual leaves
Fleur de sel
1 tablespoon finely chopped chives
Cracked black pepper

Steps:

  • In a small nonreactive dish, stir together the salmon roe and smoked olive oil. Set aside to infuse the roe with smoky flavor.
  • Place the cauliflower florets in a large pot with the onion, thyme sprigs and milk. Slowly bring to a boil over medium-high heat. Season with kosher salt, cover and simmer for 25 to 30 minutes, until the cauliflower is soft. Discard the lemon thyme sprigs. Transfer the cauliflower mixture to a blender and puree until completely smooth. Taste and season with salt.
  • Fill a medium saucepan with 2 to 3 inches of olive oil. Heat to 350 degrees F. Fry the Brussels sprout leaves a few at a time for 30 to 40 seconds, until browned. Drain on paper towels and season with fleur de sel.

2 lbs Brussels sprouts, washed and trimmed and cut in half (or 2 lbs frozen brussels sprouts, thawed and cut in half)
2 tablespoons butter
1 small onion, chopped
1 medium carrot, peeled and chopped
2 tablespoons flour
1/4 teaspoon dried marjoram, crushed
1/4 teaspoon pepper
1/8 teaspoon nutmeg
3 cups vegetable broth (or chicken broth)
1 egg
1 cup half-and-half
2 tablespoons dry white wine
salt, if needed, to taste

Steps:

  • In large saucepan over medium-high heat, melt butter; add onion and carrot slices and cook and stir until just tender, about 3 to 5 minutes. Stir in flour and seasonings.
  • Add chicken broth and cook and stir as you bring mixture to a boil. Stir in halved Brussels sprouts; reduce heat. Cover and simmer until Brussels sprouts are just tender, about 7 minutes (may be shorter if using frozen thawed sprouts).

4 cups Brussels sprouts
3 cups chicken stock
6 tablespoons butter
3 tablespoons flour
2 cups milk
1 pinch nutmeg
1/2 cup heavy cream
2 drops Tabasco sauce (or more if preferred)
salt and pepper

Steps:

  • Trim tough outer leaves if sprouts and put and X in each stem.
  • Drop sprouts into boiling chicken broth and simmer until tender, about 10-15 minutes.
  • Blend sprouts in a food processor, reserving cooking liquid.
  • Melt 3 Tbs of the butter in a saucepan and stir in flour.
  • Blend well.
  • Add reserved liquid, stir rapidly with a whisk, and simmer for about 5 minutes.
  • Add pureed sprouts, milk, and nutmeg.
  • Simmer 5 minutes.
  • Add cream and Tabasco, and salt and pepper to taste.
  • Heat just to a simmer.
  • Swirl in remaining butter and serve hot.

1/4 cup olive oil
1 tablespoon unsalted butter
2 cloves garlic, minced

A hearty fall soup is made with Brussels sprouts, green beans and barley.

12 cups chicken broth
1 cup chopped fresh green beans
1 ¼ cups cubed turnips
½ cup chopped leeks
½ cup chopped carrots
⅓ cup barley
1 ½ pounds Brussels sprouts, trimmed and cut in half
½ cup chopped green bell pepper
1 teaspoon salt
½ teaspoon ground black pepper
¼ cup butter
½ cup all-purpose flour

Steps:

  • Measure the chicken broth into a large soup pot. Bring to a boil. Add the beans, turnips, leeks, carrots and barley; simmer over medium heat for 30 minutes. Add the Brussels sprouts and green pepper. Season with salt and pepper. Simmer until the sprouts are tender, about 30 minutes more.
  • Melt the butter in a small saucepan over medium heat, stirring until it starts to brown. Whisk in the flour until smooth. Stir this into the soup and simmer until thickened, about 10 minutes.

1 pound brussels sprouts
1/2 pound andouille sausage
1 teaspoon olive oil
3 large red potatoes
2 bay leaves
1 teaspoon caraway seeds
4 cups reduced-sodium chicken broth

Steps:

  • 1. Trim ends off brussels sprouts, remove any damaged external leaves, and cut in half lengthwise. Set aside. 2. Remove casing from sausage and cut into 1/4-in.-thick slices. Put olive oil and sausage in a medium pot over medium-high heat and cook, stirring occasionally, until sausage is well browned, about 7 minutes. 3. Meanwhile, peel potatoes and cut into roughly 1/2-in. pieces. 4. When sausage is browned, add bay leaves and caraway seeds to the pot. Cook, stirring, until fragrant, about 1 minute. Add potatoes, broth, and 1 cup water. Bring to a boil. Add brussels sprouts. Partially cover pot and reduce heat to low or medium-low to maintain a steady simmer. Cook soup until potatoes and brussels sprouts are tender, about 15 minutes. Remove bay leaves and serve soup hot.
