1 (16 ounce) package frozen Brussels sprouts
2 apples - peeled, cored, and cut into 3/4-inch chunks
2 sweet onions, cut into 3/4-inch chunks
2 tablespoons extra-virgin olive oil, or as needed
salt and ground black pepper to taste
1 pinch garlic powder to taste
zest from 1 lemon
juice from 1 lemon

Steps:

  • Preheat oven to 425 degrees F (220 degrees C).
  • Arrange frozen Brussels sprouts in a single layer on a rimmed baking sheet; sprinkle apple and onion pieces evenly around the baking sheet. Drizzle the sprouts, apples, and onions with olive oil; sprinkle with salt, black pepper, and garlic powder. Toss the mixture gently to coat.
  • Roast in the preheated oven until sprouts are hot and fragrant, about 20 minutes. Sprinkle with lemon zest, and squeeze juice from zested lemon over the sprouts to serve.

Steps:

  • Place 1 in. of water in a large saucepan; add brussels sprouts. Bring to a boil. Reduce heat; cover and simmer for 5-6 minutes or until crisp-tender. Drain. Stir in the remaining ingredients. , Arrange in a single layer in a greased 15x10x1-in. baking pan. Bake, uncovered, at 425° for 15-20 minutes or until sprouts and apples are tender, stirring occasionally.

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Line a baking sheet with aluminum foil.
  • Spread Brussels sprouts, cauliflower, apples, and onion onto the prepared baking sheet; drizzle with olive oil. Season with salt and black pepper; stir until evenly coated.

1 pound brussels sprouts, ends trimmed
1 small garlic clove, finely grated
2 tablespoons fresh lemon juice, plus more, if desired
1/4 cup finely grated Parmesan or pecorino, plus more for shaving (about 2 ounces)
Kosher salt
Freshly ground pepper
1 fennel bulb, quartered, cored and thinly sliced lengthwise
1 tart apple, such as Pink Lady, quartered, cored and thinly sliced lengthwise
1/2 cup pomegranate seeds (optional)
1 cup mint leaves, coarsely chopped
1/2 cup parsley, tender leaves and stems, coarsely chopped

Steps:

  • Toast walnuts in a skillet over low heat, shaking pan frequently, until evenly toasted and fragrant, 5 to 8 minutes. Transfer nuts to a cutting board and chop.

2 pounds brussels sprouts
4 tablespoons unsalted butter
1 1/2 cups thinly sliced onion (1 medium)
Salt
2 pounds Golden or Red Delicious apples (about 6)
3/4 cup apple juice
2 teaspoons Dijon mustard (do not use grainy mustard)
3 shallots, chopped fine (1 cup)
1 tablespoon caraway seeds
2 teaspoons apple cider vinegar

Steps:

  • Wash brussels sprouts and trim roots. Separate leaves and place them in a bowl. Cover and refrigerate. (Can be completed the day before.)
  • Warm a large sauté pan over medium heat. Melt 2 tablespoons butter, then add onions and 1/2 teaspoon salt. Cook over medium-low heat, stirring frequently, until onions are soft, about 15 minutes.
  • Peel, core and slice 5 apples. Add to pan with onions. Cook on medium heat, stirring occasionally, until apples soften and begin to break apart, about 20 minutes. Add apple juice and simmer for 10 minutes. Add mustard and remove from heat.
  • Put apple-onion mixture in a blender or food processor and pulse 6 to 8 times until smooth. Keep warm.
  • Warm a very large sauté pan over medium heat. Melt remaining 2 tablespoons butter, then add shallots. Cook for 5 minutes, until shallots are soft and translucent. Stir in caraway seeds. Add brussels sprout leaves and cook over medium heat, stirring frequently, for 10 minutes. Add vinegar and continue cooking until leaves are just tender, about 5 more minutes. Season with salt to taste. Julienne remaining apple with skin on.
  • Spoon apple-mustard purée onto a warmed serving platter. Pile sautéed brussels sprouts on purée. Sprinkle julienned apple on top. Serve immediately.

2 tablespoons ground nutmeg
1/4 cup brown sugar
2 1/2 pounds Brussels sprouts
3 cups water
3 tablespoons olive oil
1 large onion, sliced thin
1 tablespoon onion powder
1 tablespoon garlic powder

Steps:

  • Pork Chops:
  • Wash and season the chops with salt, onion powder, garlic powder, black pepper, coriander, olive oil, sesame seed oil, and dried herbs. Marinate in the refrigerator for a minimum of 2 hours or up to 24 hours.
  • Preheat a grill or grill pan to medium high. Preheat oven to 375 degrees F.
  • Remove chops from marinade and place on the preheated grill. Grill chops on both sides for about 2 minutes each side. Transfer to an ovenproof dish and place in the oven until done. Set aside and keep warm.
  • Apples:
  • Raise oven to 400 degrees F.
  • Place the apples in a large bowl and add half of the butter, cinnamon, nutmeg, and brown sugar. Mix well and let sit for 20 minutes.
  • Place apples on a greased baking sheet and pour the remaining butter over the apples. Put in the oven and roast until caramelized and fork tender. When serving, pour the juices over the apples.
  • Brussels Sprouts:
  • Cut ends off Brussels sprouts and wash them. In a pasta pot with insert bring the water to a boil. Add Brussels sprouts, cover, and steam for 7 minutes. Drain.
  • Heat a skillet over medium-high heat and add the olive oil. Add the onions and saute until caramelized. Add the Brussels sprouts, onion powder, garlic powder, dried herbs, paprika, and bouillon cubes, crushing the cubes to combine with the onion mixture. Saute Brussels sprouts until browned. Lower heat, cover and simmer until Brussels sprouts are fork tender. Serve with pork chops and apples.

1 onion, preferably Vidalia, chopped

1 tablespoon chopped fresh flat-leaf parsley
Coarse salt and freshly ground black pepper

Steps:

  • Bring a large pot of salted water to a boil. Add brussels sprouts and cook until bright green and just tender, about 5 minutes. Drain and set aside.

Freshly ground black pepper
1/2 cup extra-virgin olive oil
1 pound Tuscan kale (about 2 small bunches), stemmed, leaves thinly sliced
3/4 pound Brussels sprouts, trimmed, thinly sliced
2 ounces Mimolette cheese or aged gouda, grated on the large holes of a box grater (1 cup)
1 crisp apple, such as Pink Lady or Honeycrisp, cored, cut into matchsticks

Steps:

  • Heat oven to 350°F. Place hazelnuts on a rimmed baking sheet and toast 8-10 minutes, tossing once or twice, until fragrant and skins have blistered. Bundle nuts in a kitchen towel and rub vigorously to remove skins. Spread out and let cool, then coarsely chop. Set aside.
  • Meanwhile, whisk lemon juice, mustard, shallot, garlic, 1 tsp. salt, and 1/2 tsp. pepper in a medium bowl, then whisk in oil in a slow, steady stream. Set aside.
  • Mix together kale and Brussels sprouts in a large mixing bowl. Add about 3/4 of the dressing, and use your hands to massage dressing into greens. Taste and add more dressing as needed (you may not need all of it). Reserve any leftover dressing for another use.
  • Add cheese, apple, and half of the radishes; toss together to combine, and season with salt and pepper to taste. Transfer to a serving bowl, and top with nuts and remaining radishes.

1 1/2 lbs Brussels sprouts, peeled and halved
2 tablespoons butter
2 cups chopped onions (2 medium sized)
4 cups sweet red apples (thinly sliced peeled)
1 teaspoon dried thyme
1 teaspoon salt
1/2 teaspoon black fresh ground pepper

Steps:

  • Cook brussels sprouts in boiling water for about 5 minutes or just until barely tender.
  • While that is cooking in a large skillet melt the butter and add onions stirring well, until softened, this will take approximaetly five minutes.
  • Add the thinly sliced apples stir gently and cook until just tender and lightly brwoned.
  • Drain sprouts and add to the skillet along with the thyme, salt and pepper.
  • Cook tossing gently just one or two minutes longer.

1 lb Brussels sprouts
6 slices bacon
1 T mustard seeds
1 medium onion, peeled, cut in crescents
1 tart crisp apple (I used a Granny Smith), peeled, cored, cut in crescents
3 T brown sugar
2 T balsamic vinegar
1/2 C dry white wine
1 T Dijon mustard
olive oil
salt, hot sauce to taste

Steps:

  • Trim the root ends of the sprouts, remove dried outer leaves and cut each sprout in half. Toss with a tablespoonful or so of olive oil and roast uncovered in a preheated 325º oven about 25 minutes, stirring occasionally. Remove when the sprouts are cooked through and starting to brown and char along the edges. Meanwhile, in a pan large enough to contain all the ingredients, sauté the bacon until just starting to crisp at the edges and remove to drain on paper towel. Pour all but 1 T of the bacon grease from the pan and discard. Add the mustard seeds to the pan and stir over medium high heat until they start to pop. Add the onions and apples, lower the heat to medium and sauté , stirring occasionally, until starting to turn soft, about 5 or 6 minutes. Stir in the sugar, wine and vinegar, raise the heat to medium high and cook, stirring, several minutes until the liquid is reduced to a syrup. Remove from heat and stir in the mustard. Chop the bacon and add it to the pan, then add the sprouts to the pan and stir and toss to combine. Correct seasoning. May be served immediately or at room temperature. Note: to make ahead, slightly undercook the sprouts so they will finish cooking when reheated.

Cauliflower Soup with Crispy Brussels Sprouts and Apples image

3 cups cauliflower florets (from about 1 small head)
1/2 white onion, coarsely chopped
2 sprigs fresh lemon thyme, plus 1 teaspoon leaves for garnish
1 1/2 quarts whole milk
Kosher salt
Extra-virgin olive oil, for frying
6 to 7 Brussels sprouts, leaves separated
Fleur de sel
1 tablespoon finely chopped fresh chives
Cracked black pepper
1 pink lady apple
Smoked extra-virgin olive oil, for drizzling

Steps:

  • Place the cauliflower florets in a large pot with the onion, thyme sprigs and milk. Slowly bring to a boil over medium-high heat. Season with kosher salt, cover and simmer until the cauliflower is soft, 25 to 30 minutes. Discard the thyme sprigs. Transfer the cauliflower mixture to a blender and puree until completely smooth. Taste and season with salt.
  • Fill a medium saucepan with 2 to 3 inches of olive oil and heat to 350 degrees F. Fry the Brussels sprout leaves a few at a time until browned, 30 to 40 seconds. Drain on paper towels and season with fleur de sel.
  • To serve, scoop the apple into balls with a Parisian scoop or small melon baller. Or, just dice the apple if a scoop is unavailable. Ladle the soup into shallow bowls or small shot glasses or espresso cups and garnish with the fried Brussels sprout leaves. Sprinkle with the chives, lemon thyme leaves, apple balls and season with fleur de sel and cracked black pepper. Drizzle with the smoked olive oil.

A great way to eat brussel sprouts! We had this with roasted pork tenderloin marinated in honey, mustard and garlic with crushed potatoes on the side. Delicious!

1 lb Brussels sprout
6 slices smoked bacon
1 tablespoon mustard seeds
1 medium onion, peeled, cut in crescents
1 apple, cut into crescents
3 tablespoons brown sugar
2 tablespoons balsamic vinegar
1/2 cup dry white wine
1 tablespoon Dijon mustard
1 tablespoon olive oil
salt

Steps:

  • Preheat oven to 175 Celcius.
  • Trim the sprouts, remove dead leaves, cut in half.
  • Toss sprouts with olive oil (about 1 T).
  • Roast in oven for about 25 minutes. Stir occasionally.
  • Meanwhile, in a large pan, saute the bacon til crisp.
  • Keep 1 T of bacon grease, discard the rest.
  • Add the mustard seeds to med-high pan until they start to pop.
  • Add the onions and apples, lower the heat to medium and sauté. Stir occasionally. (5-6 minutes).
  • Add the sugar, wine and vinegar. On med-high heat, reduce liquid to syrup.
  • Remove from heat. Stir in the mustard.
  • Add the bacon.
  • Add the sprouts.
  • Stir together.
  • Add salt to taste. (May not be necessary depending on the bacon.

1 ham steak, 7 ounces
Freshly ground pepper
1 Granny Smith apple
6 to 8 Brussels sprouts
1/4 teaspoon kosher or sea salt
2 tablespoons extra-virgin olive oil
2 shallots, thinly sliced
1 piece ginger (2 inches long), peeled, finely chopped
2 tablespoons mirin or sherry
2 teaspoons unseasoned rice vinegar

Steps:

  • 1. Pat dry the ham steak with a paper towel; season generously with freshly ground pepper on both sides. Cut the apple in half, core, and cut into 16 wedges. Thinly slice the wedges crosswise. Remove and discard the tough outer layer of leaves from the Brussels sprouts, cut them in halves, and cut out and discard the tough core. Thinly slice lengthwise. 2. Pour the oil into a large, cold cast-iron skillet; press the ham steak into the cold pan. Turn on the heat to medium. When the ham steak sizzles, after 1 to 2 minutes, scatter the shallot and ginger around it. Stir the shallot and ginger occasionally to keep them from burning, but leave the ham steak undisturbed, cooking until very lightly browned on one side, about 2 minutes. 3. Turn the ham steak over; add the apples and Brussels sprouts to the pan. Season lightly with salt. Stir to combine the apples and sprouts with the shallot and ginger, while leaving the pork undisturbed. Sprinkle the mirin and rice vinegar over the vegetables. Decrease the heat to medium low, cover the pan and cook until the sprouts have wilted, 3 to 4 minutes. 4. Transfer the ham to a serving plate; let it rest for a few minutes. Spoon the apple mixture on top.

1 pound Brussels sprouts, trimmed and halved
1 large onion, cut into 1-inch pieces
1/4 cup olive oil
2 teaspoons salt or to taste
2 baking apples, such as Braeburn or Granny Smith, peeled, cored, and cut into 1-inch pieces
1/4 cup apple cider vinegar
1 cup honey-roasted pecans (recipe follows)
Freshly ground black pepper
Honey-Roasted Pecans
1 cup pecan halves
2 tablespoons honey
1 teaspoon salt
(makes 1 cup)

Steps:

  • Preheat the oven to 500°F.
  • Place the Brussels sprouts and onions in a 9 × 13-inch baking dish. Add the olive oil and salt, and toss to coat.
  • Roast until the Brussels sprouts begin to brown, about 15 minutes. Add the apples, mix, and return to the oven. Continue roasting, turning every 10 minutes, until the Brussels sprouts and onions are fully cooked and tender and the apples are beginning to soften, about 20 minutes.
  • Remove the dish from the oven, add the vinegar, and toss to incorporate. Season with additional salt, if desired, and transfer to a platter. Top with the pecans and a generous sprinkle of pepper. Serve immediately.
  • Honey-Roasted Pecans
  • Preheat the oven to 325°F.
  • Place the pecans on a rimmed baking sheet. Drizzle on the honey, add the salt, and toss to coat.
  • Roast, tossing every 5 minutes, until the pecans are deep brown, well roasted, and let off a strong, nutty aroma, about 20 minutes.
  • Remove the pecans from the oven and allow to cool before using or serving.

4 strips bacon, cut into lardons
3 tablespoons bacon fat
1/2 medium red onion, diced
2 cups brussels sprouts, sliced
1/4 cup apple cider
1/4 cup apple cider vinegar
1 apple, diced
1 dash salt
1 dash pepper
2 mahi mahi
3 tablespoons bacon fat

Steps:

  • Cook bacon a large skillet until crisp. Remove from pan with a slotted spoon and set aside. Reserve half of the rendered fat and leave the other half in the pan.
  • Add diced red onion to pan and sweat until translucent; approximately 5 minutes.
  • Add sliced Brussels sprouts to onions and toss to combine. Cook for approximately 5 minutes and until Brussels sprouts have brightened in color.
  • Add the apple cider, apple cider vinegar, and cooked bacon. Cook until most of the liquid has evaporated and the Brussels sprouts have become slightly tender.
  • Add the diced apple and cook for just a few more minutes or until the apples have heated and softened but still retain most of their shape and texture.
  • Season with kosher salt and freshly-cracked black pepper. Transfer to side dish and set aside. Return the pan to stove and increase the heat.
  • While the pan preheats, season the Mahi Mahi loins with kosher salt and freshly-cracked black pepper.
  • Once the pan has preheated, add the remaining bacon fat.
  • At the first signs of smoke, carefully add the fish to the pan. Cook, without disturbing the fish, for approximately 5-7 minutes or until you can see browning on the edges of the fish.
  • Carefully turn the fish over and cook for another 1-2 minutes.

2# Bratwurst
2 onions, halved and sliced thin
1 cup water
1/4 cup EVOO
S and P
1 pound Brussels Sprouts, trimmed and quartered
3 Gala or Honey Crisp or Granny Smith or Braeburn apples, cored and quartered
1/3 cup dried cranberries
1 TBS cider vinegar
1 TBS Dijon mustard

Steps:

  • 1. Combine bratwurst, onions, water, I TBS oil, 1 TBS honey, 1/2t salt and 1/4t pepper in 12" nonstick skillet. Cover and cook over medium-high heat until brats are nearly cooked through, about 10", flipping brats halfway through cooking. Uncover and con't to cook, stirring frequently until water evaporated and brats and onions are well browned, 7-10" longer. Tx to platter and tent w/ foil 2. Wipe skillet clean w/ paper towels. Heat remaining 3T oil in now empty skillet over medium-high heat until just smoking. Add Brussels Sprouts, 1/4t salt and 1/4t pepper and cook covered until browned, about 4 minutes, stirring often. Stir in apples, cranberries, vinegar, mustard and remaining 1T honey and cook until apples are browned and sprouts are tender, about 5". Serve w/ brats and onions.
