This bruschetta will turn out every time you make it. Use small slices of bread for a unique appetizer, or serve with Italian dishes.

2 large tomatoes, coarsely chopped
½ sweet onion, chopped
2 tablespoons olive oil
1 tablespoon chopped fresh oregano
1 teaspoon chopped fresh basil
2 teaspoons chopped fresh parsley
½ (1 pound) loaf Italian bread, cut into 1 inch slices
¼ cup freshly grated Parmesan cheese

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • In a medium bowl, combine tomatoes, onion, olive oil, oregano, basil and parsley. Place bread on a baking sheet, and top with tomato mixture. Sprinkle with Parmesan.
  • Bake in preheated oven for 8 to 10 minutes, or until bottom of bread is browned. Allow to cool 5 minutes before serving.

This is a fast, easy & tasty appetizer that I usually serve on "Italian" nights. When Vidalia onions are available (and priced right), I'll chop & add some to the tomato mixture.

Number Of Ingredients 6

2 large ripe tomatoes, peeled,seeded & diced
1 tablespoon chopped fresh oregano (or 1 tsp dried)
1 clove garlic, minced
8 -10 slices Italian bread, sliced 1/2 inch thick (day old is OK)
2 tablespoons olive oil
1/2 cup grated parmesan cheese or 1/2 cup mozzarella cheese (or a combination)

Steps:

  • In a small bowl, mix chopped tomatoes, oregano& garlic.
  • Let stand 10 minutes at room temperature.
  • Brush bread slices with oil.
  • Place about 4 tsp tomato mixture on top of each bread slice& sprinkle with cheese.
  • Place on baking sheet& bake at 350F for 5 minutes.
  • Broil for a couple of minutes or until golden brown& cheese melts.

GIARDINIERA BRUSCHETTA

One 16-ounce French loaf
4 tablespoons (57 grams) unsalted butter, at room temperature
2 tablespoons (30 grams) mayonnaise
1/2 cup (60 grams) shredded provolone
2 tablespoons fresh oregano, chopped, plus more for garnish
1 tablespoon fresh parsley, chopped, plus more for garnish
1 tablespoon fresh basil, chopped, plus more for garnish
1/4 teaspoon crushed red pepper flakes
2 to 3 dashes Worcestershire sauce
2 large cloves garlic, grated finely
3/4 teaspoon kosher salt
Couple turns black pepper
1 cup (140 grams) Italian giardiniera, drained and chopped
Grated Parmesan, for topping

Steps:

  • Place an oven rack in the middle position. Preheat the oven to 450 degrees F.
  • Line a baking sheet with aluminum foil. Split the loaf lengthwise and place cut-side-up on the baking sheet.
  • In a small bowl, combine the butter, mayonnaise, provolone, oregano, parsley, basil, red pepper flakes, Worcestershire sauce, garlic, salt and pepper and mix with a small rubber spatula until fully combined.
  • Spread an even layer of the butter mixture on the cut sides of the bread. Bake until the cheese has dark spots and the edges of the bread are golden brown and crisp, begin checking at 12 minutes. Remove from the oven.
  • Scatter the giardiniera all over the bread. Top with Parmesan and fresh herbs. Slice and serve immediately.

This easy bruschetta recipe from Food Network's Ree Drummond makes a great appetizer or tasty first course for a larger meal.

4 tablespoons olive oil
5 cloves garlic, finely minced
1 pint red grape tomatoes, halved lengthwise
1 whole baguette or crusty loaf
1 pint yellow grape tomatoes, halved lengthwise
1 tablespoon balsamic vinegar
16 whole fresh basil leaves, plus more as needed, chiffonade
Salt and freshly ground black pepper
1 stick butter

Steps:

  • In a small skillet, heat the oil over medium-high heat. Add the garlic and stir, lightly frying for about a minute, removing before the garlic gets too brown (it can be golden). Pour the garlic and oil into a mixing bowl and allow to cool slightly.
  • Add the red and yellow tomatoes, balsamic and basil to the bowl. Sprinkle with salt and pepper. Toss to combine, and then taste and add more basil if needed, and more salt if needed (don't over salt, though!) Cover and refrigerate for an hour or two if you have the time.
  • Cut the baguette into diagonal slices to allow for the most surface area possible. Melt 4 tablespoons of the butter in a large skillet and grill half the bread on both sides, making sure they're nice and buttery. Cook until golden brown on both sides. Repeat with the remaining 4 tablespoons butter and the other half of the bread.
  • To serve, give the tomato mixture a final stir, and then spoon generously over the slices of bread. Serve on a big platter as a first course or appetizer.

MUFFULETTA BRUSCHETTA

1 cup pitted Kalamata olives
1 cup pimiento-stuffed Manzanilla olives
1/2 cup roughly chopped roasted red pepper (about 1 whole pepper, jarred or fresh)
1/2 cup extra-virgin olive oil
1/4 cup red wine vinegar
2 tablespoons roughly chopped fresh parsley
1 tablespoon roughly chopped fresh oregano
Freshly ground black pepper
1 baguette (about 24 inches long), sliced on the bias into forty 1/4-inch-thick rounds
Twenty 1/4-inch slices fresh mozzarella (1 1/2 pounds), cut into half-moons
10 thin slices provolone cheese (7 ounces), cut into quarters
10 thin slices mortadella (3 ounces), cut into quarters
10 thin slices capicola (3 ounces), cut into quarters
10 thin slices Genoa salami (3 ounces), cut into quarters
40 small fresh basil leaves

Steps:

  • For the olive spread: Combine the Kalamata and Manzanilla olives, red pepper, olive oil, vinegar, parsley and oregano in a food processor. Pulse 8 to 10 times, until evenly incorporated but still chunky (nothing larger than pea-size). If not using immediately, transfer the spread to an airtight container and refrigerate for up to 4 days. (Makes 2 cups.)
  • For the bruschetta: Lay the baguette slices on two baking sheets. Top each slice with 1 teaspoon of the olive spread. Then layer the slices with a piece of mozzarella, followed a piece each of provolone, mortadella, capicola and salami. (At this point, the bruschetta can be stored in the refrigerator for up to 4 hours; remove from the fridge 30 minutes prior to serving.) Finish the bruschetta with a small dollop of olive spread, and garnish with a basil leaf. Serve immediately.

1/2 teaspoon salt
MAYONNAISE SPREAD:
1/2 cup mayonnaise
1/4 cup Dijon mustard
1 tablespoon finely chopped green onion
1 garlic clove, minced
3/4 teaspoon dried oregano
1 loaf (1 pound) French bread, cut into 1/2-inch slices

Steps:

  • In a large bowl, combine the first eight ingredients. Cover and refrigerate for at least 30 minutes. For mayonnaise spread, in a small bowl, combine the mayonnaise, mustard, onion, garlic and oregano; set aside., Grill bread slices, uncovered, over medium-low heat for 1-2 minutes or until lightly toasted. Turn bread; spread with mayonnaise mixture. Grill 1-2 minutes longer or until bottoms of bread is toasted. Drain tomato mixture; spoon over tops.

1 French baguette
1 tablespoon olive oil
2 roma (plum) tomatoes, thinly sliced
1 tablespoon chopped fresh basil
1 tablespoon chopped fresh oregano
1 teaspoon garlic powder
1 pinch ground white pepper
1 (8 ounce) package sliced mozzarella cheese
1 (6 ounce) package sliced provolone cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Slice the baguette into 1/2 inch thick diagonal slices. Arrange the slices in a single layer on a baking sheet. Brush both sides of each slice with the olive oil. Place tomato slices and a sprinkling of basil and oregano on the bread slices. Sprinkle the tomatoes, basil and oregano with the garlic powder and white pepper. Cover the tomato slices with slices of the mozzarella and provolone. Place more basil, oregano and tomato slices on top of the cheese.
  • Bake in the preheated oven for 7 to 10 minutes, or until the cheese is bubbly.
