And use it on Christmas morning to make this for brunch! If you're having ham for your Christmas dinner and need a way to use up the leftovers, this would make a fabulous breakfast on the 26th!

1 tablespoon olive oil
1 large potato, peeled and diced
1/2 onion, sliced into strips
2 cups leftover ham, diced
8 eggs
1/4 cup milk
1 teaspoon salt
1 teaspoon pepper
1 cup shredded cheddar cheese
fresh fruit (optional)

Steps:

  • Preheat oven to 450°F.
  • Mince garlic. Using the flat part of the knife, press down on the garlic clove until it crushes. Cut off the stubby end and peel off the skin. Chop with knife.
  • In skillet, saute minced garlic, diced potatoes and onions in olive oil.
  • Once brown, add a few teaspoons water and cook another 1-2 minutes. Then add in the diced ham.
  • In bowl, whisk eggs, milk, salt and pepper.
  • Pour egg mixture over the ham, potatoes and onions.
  • Cook over medium heat for 5 minutes, until the eggs have set around the edges of the skillet.
  • Place skillet into the oven and bake at 450°F for 5-10 minutes, or until eggs have set in the middle.
  • Add shredded cheese to the top and bake another 1-2 minutes until cheese melts.
  • Serve Ham and Cheese Frittata with Fresh Fruit.
  • Cost $4.48.
  • For the stovetop only, you could probably cook it for a lot longer over LOW heat until the eggs in the middle cook through.
  • Another way would be to saute the garlic, onions, potatoes and ham in the skillet. Then place those into an 8x8-inch baking dish, then pour the eggs over and bake it. It may take a bit longer to bake since you don't cook the eggs on the stovetop at all. Just bake it until the eggs have set in the middle.

This easy ham and cheese frittata, spiked with some healthy broccoli, works as a centerpiece of a brunch, easy leftovers for a quick lunch or dinner paired with a green salad.

12 large eggs
1/3 cups heavy cream
Kosher salt and freshly ground black pepper
1 1/2 cups frozen broccoli florets, thawed
1/2 cup chopped deli ham (about 2 1/2 ounces)
1/2 cup shredded mild Cheddar
1/2 cup shredded Monterey Jack cheese

Steps:

  • Preheat the oven to 300 degrees F. Whisk the eggs, cream, 1 teaspoon salt and a few grinds of black pepper together in a large bowl until smooth. Fold in the broccoli, ham, Cheddar and Monterey Jack until well combined.
  • Pour the mixture into an oven-safe, 10-inch nonstick skillet. Bake until the eggs are just set and no longer jiggly in the middle, 50 to 55 minutes. Let sit for 5 minutes before sliding the frittata out of the skillet onto a serving platter. Slice into wedges to serve.

4 large egg whites
2 tablespoons fat-free milk
1/4 teaspoon salt

1/2 cup sliced fresh mushrooms
1/2 cup chopped sweet red or green pepper
1/4 cup sliced green onions
6 large eggs
2 tablespoons water
1/2 cup diced cooked ham
1 cup shredded cheddar cheese

Steps:

  • In a skillet, melt butter over medium heat. Saute mushrooms, pepper and onions until tender. In a bowl, beat eggs until foamy; stir in ham. Pour over the vegetables. Let eggs set on the bottom, then lift the edges to allow any uncooked egg to flow underneath. Cover and cook until the eggs are set, about 3 minutes. 3 tablespoons milk
2 tablespoons butter
2 potatoes, cubed
½ cup cubed fully cooked ham
¼ cup chopped onion
1 ½ teaspoons minced garlic
¼ cup water, or as needed

Steps:

  • Set oven rack about 6 inches from the heat source and preheat the oven's broiler. Beat eggs and milk in a bowl.
  • Melt butter in a large, oven-safe skillet over medium heat; cook and stir potatoes, ham, onion, and garlic in melted butter until potatoes are tender, about 15 minutes. Add water if vegetables become dry. Season with salt and pepper.

Onion, Ham, and Cheese Frittata image

2 tablespoons unsalted butter
1 large onion, sliced
3/4 teaspoon kosher salt
Freshly ground black pepper
8 large eggs
1/4 cup milk
1 cup diced ham
1 tablespoon chopped fresh herbs, like parsley, thyme, or dill
1 cup grated Swiss or cheddar cheese

Steps:

  • Position a rack about 8 inches from the broiler and preheat.
  • Melt the butter in a medium non-stick skillet over medium heat. Add the onions and season with 1/2 teaspoon salt and some pepper. Cook, stirring occasionally, until the onions get very soft, about 15 minutes. Meanwhile, whisk the eggs and milk in a medium bowl with the remaining 1/4 teaspoon salt and some pepper until smooth. Transfer onions to a bowl to cool. Reserve the skillet.
  • Stir the onions, ham, herbs and cheese into the eggs.
  • Heat the non-stick skillet. Pour the frittata mixture into the pan and stir to make sure the fillings are evenly arranged. Cook, stirring gently a couple times in the first minutes of cooking. Then let the mixture cook undisturbed until the bottom sets, about 5 minutes. Transfer the skillet to the oven and broil until the eggs are just set and brown, about 5 minutes. Take care not to overcook or the eggs will be dry. Remove from the oven, cover, and set aside for 5 minutes.
  • Invert the frittata onto a large plate or platter. Cut into wedges and serve warm or at room temperature.
