3/4 pound boiling potatoes (2 to 3 medium)
1 tablespoon mixed chopped fresh herbs such as thyme, rosemary, and/or oregano or 1 teaspoon mixed dried herbs, crumbled
1 garlic clove, chopped fine
1 tablespoon unsalted butter
freshly ground black pepper to taste

Steps:

  • Preheat oven to 450°F.
  • Cut potatoes into 1/4-inch-thick slices and in a saucepan of boiling salted water cook 5 minutes, or until just cooked through. Drain potatoes well in a sieve and transfer to a 6-cup gratin dish (1 1/2-quart) or other shallow baking dish, 11 by 8 by 1 1/2 inches. Toss potatoes immediately with remaining ingredients and pepper and salt to taste and bake in upper third of oven 20 minutes, or until potatoes are pale golden.

4-6 medium potatoes, peeled
1/4 cup (60 ml) melted butter, bacon fat, or vegetable oil
Salt and freshly ground pepper to taste

Steps:

  • Boil the potatoes in salted water until almost cooked through - they should still offer some resistance to the tip of a sharp knife. Drain the potatoes and place them in a covered baking dish with the butter. Cook covered in a preheated 350F (180C) oven, turning and basting the potatoes occasionally, until evenly browned, about 20 minutes. Season with salt and pepper before serving. Serves 4 to 6.

These are a great and yummy alternative to regular old mashed potatoes!! This is a simple country recipe with it's origins from the British regions, then made it's way over to Canada and the US.

Number Of Ingredients 8

5 medium potatoes, peeled
1/2 medium onion, minced
4 tablespoons butter
1/4 cup olive oil
2 tablespoons cracked pepper
2 tablespoons garlic salt
2 tablespoons seasoning salt
2 tablespoons Italian spices

Steps:

  • Slice potatoes into chunks or into round slices, I have cooked them both ways and both are good. It is just personal preference for shape.
  • Boil for 10 minutes in salted water, drain in a collander. Heat a large skillet over medium-high heat melt butter and oil in skillet.
  • When butter is melted add onions. When translucent, add potatoes and seasonings. Cover and cook on one side for 5-7 minute. Flip and cook on other side for 5-7 more minute.
  • Potatoes should be browned and crispy looking, but also a little soft. If butter ran dry during cooking add 2 more TB. Enjoy!
