Number Of Ingredients 7

1/4 cup packed brown sugar
1 teaspoon fine sea salt
1 teaspoon ground cinnamon
1/4 teaspoon ground cayenne
1 egg white
1 teaspoon vanilla extract
4 cups (12 ounces) raw walnut halves

Steps:

  • Heat oven to 300°F. Line a large baking sheet with parchment paper; set aside.
  • In a small mixing bowl, whisk together the brown sugar, sea salt, cinnamon and cayenne until combined.
  • In a large mixing bowl, whisk together egg white and vanilla until combined. Add the walnuts and toss until they are evenly coated with the egg white mixture. Add the brown sugar mixture and toss until the walnuts are evenly coated.
  • Spread the walnuts out in an even layer on the baking sheet. Bake for 20 minutes. Remove baking sheet from the oven, and give the walnuts a brief stir. Return to the oven and bake for 5 more minutes. Remove and transfer to a wire rack to cool for 10 minutes.
  • Serve immediately, or store in a sealed container for up to 2 weeks.

2 cups walnuts
½ cup brown sugar
2 teaspoons ground cinnamon

Steps:

  • In a large pan heat butter over medium heat until melted.
  • Add brown sugar, cinnamon, and walnuts to the pan and stir continuously until the sugar is dissolved (about 3-4 minutes).
  • Using a slotted spoon or spatula remove walnuts from the pan to a baking sheet that has been lined with parchment paper or a silicone baking mat.
  • Allow to cool completely for 1 hour. The walnuts can be stored in an airtight container for up to 2 weeks.

1/2 cup chopped walnuts

Steps:

  • Mix the first 5 ingredients together and pour into a glass baking dish.
  • Smooth the mixture out with a wooden spoon or other utensil.
  • Mix together the topping (it will seem dry) and crumble on top of the yams.

1 tablespoon unsalted butter
1/2 cup pure maple syrup
2 teaspoons pure vanilla extract
1/2 teaspoon ground cinnamon
Coarse salt
2 cups walnuts (6 ounces)

Steps:

  • Preheat oven to 375 degrees. Melt butter in large skillet over medium heat. Stir in maple syrup, vanilla, cinnamon, and 3/4 teaspoon salt. Bring to a simmer (mixture should be frothy), about 3 minutes. Add walnuts, and toss to coat using a rubber spatula. Cook, stirring, until sauce is syrupy and bubbly, about 3 minutes.
  • Transfer walnut mixture to a parchment-lined baking sheet, and spread into a single layer. Bake until walnuts are caramelized, about 10 minutes. Transfer sheet to a wire rack. Stir, and let stand until cool and hardened, about 30 minutes.
