"I've used this recipe for years," shares Suzanne Caithamer of Walton, Kentucky. "It's a wonderful addition to care packages and holiday cookie exchanges. Even people who don't like dates love them!" You can cut larger squares and add a scoop of ice cream to serve as a dessert.

1 pound pitted whole dates
2/3 cup packed brown sugar
2/3 cup orange juice
3 teaspoons vanilla extract
CRUST:
1-1/2 cups all-purpose flour
1-1/2 cups old-fashioned oats
1 cup packed brown sugar
1 teaspoon ground cinnamon
1/2 teaspoon baking soda
Dash salt
1 cup cold butter, cubed
3/4 cup coarsely chopped walnuts
Vanilla ice cream, optional

Steps:

  • In a small saucepan, combine the dates, brown sugar and orange juice. Bring to a boil. Reduce heat; simmer, uncovered, for 3-4 minutes or until thickened and dates are tender, stirring constantly. Remove from the heat; stir in vanilla., In a large bowl, combine the flour, oats, brown sugar, cinnamon, baking soda and salt. Cut in butter until crumbly. Press half into a greased 13-in. x 9-in. baking dish. Carefully spread with date mixture. , Stir walnuts into remaining crumb mixture. Sprinkle over filling; press down gently. Bake at 350° for 25-30 minutes or until lightly browned. Cool on a wire rack. Cut into squares. Serve with ice cream if desired.

Decadent brown sugar and pecans on a shortbread crust -- like mini pecan pies in a melt-in-your-mouth bite! This recipe was my mother's and the squares are a hit wherever I take them. The dessert dish always goes home empty. I usually use pecans, but other nuts can work also.

1 1/2 cups flour
3/4 cup margarine or 3/4 cup butter
3 tablespoons sugar
3 eggs
2 1/4 cups light brown sugar
1 teaspoon vanilla
1 cup chopped pecans

Steps:

  • Beat crust ingredients together until crumbly (mixer works well).
  • Press mixture into a 9x13 baking pan (glass works fine).
  • Bake for 20 minutes at 350 degrees.
  • In a separate bowl, combine eggs, brown sugar, vanilla and chopped nuts. Pour over baked crust base and bake another 20 minutes.
  • Cut into squares when cool.

I just found a new cookbook (Stonewall Kitchen Favorites) that I love and want to share this recipe. I searched Zaar recipes and could not find where anyone else has posted this yet. Three layers: shortbread, raspberries and raspberry jam and a crunchy brown sugar top. These squares will work equally well with fresh or frozen berries. Yum, yum!

1 1/2 cups all-purpose flour
1/2 cup confectioners' sugar, sifted
1/4 teaspoon salt
3/4 cup unsalted butter, cold and cut into 8 pieces
1/2 cup raspberry jam, seedless
4 cups raspberries
2 -4 tablespoons all-purpose flour
1/2 cup unsalted butter, cold and cut into 1/2-inch cubes
1 cup all-purpose flour
1 cup light brown sugar, packed

Steps:

  • Place rack in middle of oven and preheat oven to 375 degrees.
  • To make the crust: Combine flour, confectioners sugar, salt and butter in food processor or medium bowl. Pulse about 30 times or work butter in with pastry blender until butter is size of small peas. Sprinkle mixture evenly into ungreased 9x13 baking pan. Using your hands, press mixture into bottom of pan about 1/2 inch up sides of pan. Bake crust for 10-12 minutes or until firm and barely starting to brown.
  • To make filling: Melt jam in small saucepan over medium heat until just thinned out and liquefied.
  • In medium bowl, gently mix the raspberries with enough flour until fully coated and then set aside.
  • To make topping: Combine butter, flour and brown sugar in processor or medium bowl and pulse or work butter in with fingers until mixture begins to come together and starts to move away from sides of the bowl. Set aside.
  • When the crust is done, remove from oven. Use back of spoon or pastry brush to spread jam evenly over the hot crust. Sprinkle the floured berries and any remaining flour in the bowl evenly over the jam. Using your hands, sprinkle the topping evenly over the berries breaking up any large clumps.
  • Bake for 25-30 minutes or until the berries are bubbling and topping is brown. Remove from oven and cool completely before cutting into squares.
