GERMAN CUT-OUT COOKIES
This is a family favorite. The dough is very easy to handle and no need to refrigerate. Great for the holidays!

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Grease cookie sheets.
- In a large bowl, cream together the butter and brown sugar. Beat in the eggs and vanilla extract until well blended. Combine the flour, baking soda, baking powder and salt; stir into the creamed mixture. On a lightly floured surface, roll the dough out to 1/4 inch in thickness. Cut into desired shapes with cookie cutters. Place cookies 1 1/2 inches apart onto cookie sheets.
- Bake for 8 to 10 minutes in the preheated oven. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely. Decorate with your favorite frostings or sprinkles if you like.

- Preheat oven to 350 degrees F (175 degrees C).
- Beat brown sugar, butter, eggs, and vanilla extract together in a bowl using an electric mixer until smooth and creamy.
- Whisk flour, baking powder, and salt together in a separate bowl. Stir flour mixture into butter mixture until dough is fully combined.
- Pour confectioners' sugar onto a large plate. Spoon dough, 1 1/2 teaspoons per cookie, onto confectioners' sugar and roll to coat. Arrange coated dough on a baking sheet.
- Bake in the preheated oven until edges are lightly browned, 12 to 14 minutes. Cool cookies on baking pan for 2 minutes before transferring to a wire rack to cool completely.

Very simple, very old recipe from my 99 year old German MIL. Delicate. i'm trying to think of how I could flavor this a bit--perhaps just a hint of mace? Or maybe I shouldn't mess with something simple and delectable.

BROWN SUGAR COOKIES (GERMAN)
I found this recipe at www.fooddownunder.com and made these cookies for my family's annual Oktoberfest 2008. They were a big hit. They turned out soft and moist and tasted like a spice cookie with a hint of orange flavor.

- Preheat oven to 350°F.
- In a medium mixing bowl, cream together sugar and shortening until light and fluffy.
- Beat in eggs, milk and orange rind.
- Stir together baking powder, spices, salt and flour; mix into sugar mixture.
- Stir in raisins and nuts (optional).
- Drop dough by teaspoonfuls onto greased cookie sheets.

BROWN SUGAR COOKIES
This recipe comes from "A Collection Of The Very Finest Recipes Ever Assembled Into One Cookbook". From 1979. These are amazing cookies. I love sugar cookies, and was skeptical when I saw this recipe, but I thought I'd give it the benefit of the doubt, and just let me say, they are WONDERFUL. *NOTE*: Use fork tines dipped in brown sugar to form. It leaves a nice light "crust" if you will on top.
