Recipe is from Southern Living Magazine and they suggest using this brown sugar brine so you will never have to serve a dry chicken breast again. Brine time is 1-3 hours.

1/2 c apple cider vinegar
1/4 c kosher salt
1/4 c firmly packed dark brown sugar
1 tsp dried crushed red pepper flakes
6 large fresh thyme sprigs
4 4-inch fresh rosemary sprigs
4 garlic cloves, crushed
8-12 skinned and boned chicken breasts (6-8 oz. each)
freshly ground black pepper

Steps:

  • 1. Stir together first 7 ingredients and 2 quarts of water in a large stockpot. Heat over medium-high heat, stirring occasionally, until salt and sugar dissolve. Remove from heat and cool one hour. Place chicken breasts in brine; cover and chill 1-3 hours.
  • 2. Preheat grill to 350 degree - 400 degrees (medium high) heat. Drain chicken, discarding brine. Pat chicken breasts dry with paper towels, and sprinkle with desired amount of black pepper.
  • 3. Grill chicken, covered with grill lid, 5 - 7 minutes on each side or until done. Remove from grill. Let stand 5 minutes before serving. **This brine will season up to 12 chicken breasts**

I decided to experiment with my normal go-to brine and added molasses and garlic. In place of regular sugar I used light brown sugar (what can I say, I like molasses). The family loved this. I think this is going to be my new go-to. This is enough brine for 8 pounds of whole chicken or bone-in chicken pieces and up to 10 pounds of skinless, boneless chicken breasts.

¾ cup kosher salt
¾ cup light brown sugar
2 tablespoons minced garlic
1 ½ teaspoons ground cayenne pepper
1 gallon warm water
¼ cup molasses
¼ cup soy sauce

Steps:

  • Mix salt, brown sugar, garlic, and cayenne pepper together in a large bowl. Pour in water; stir until dissolved. Mix in molasses and soy sauce. Let stand until brine comes to room temperature, about 50 minutes.

This is a delicious way to prepare chicken tenders or breasts with brown sugar. Kids love it! Most of the ingredients you most likely will have on hand.

2 tablespoons salted butter
1 teaspoon chopped fresh garlic
4 (4 ounce) skinless, boneless chicken breast halves
1 teaspoon salt
ground black pepper to taste
4 tablespoons brown sugar
¾ cup water
1 tablespoon cornstarch

Steps:

  • Melt butter in a skillet over medium heat. Stir in garlic and cook until slightly brown, about 2 minutes. Add chicken and season with salt and pepper. Cook until chicken is no longer pink in the center and the juices run clear, 12 to 15 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).
  • Sprinkle brown sugar over chicken and cook until melted into the chicken, about 5 minutes. Remove chicken to a plate and keep warm.
  • Stir together water and cornstarch in a small bowl. Pour into the skillet and increase heat to medium-high. Cook and stir, picking up all the little bits from the pan, until thickened, 3 to 5 minutes. Serve over the chicken.
