BANANAS IN BROWN SUGAR AND RUM



Bananas in Brown Sugar and Rum image

Be very careful to stand away from the stove when you add the rum -- the flames will be brief but dramatic.

4 bananas, ripe but firm
2 tablespoons unsalted butter
1/4 cup dark-brown sugar
1/2 cup dark rum
Creme fraiche or sour cream, for topping

Steps:

  • Peel bananas, and carefully cut in half lengthwise.
  • In a medium saute pan over medium heat, melt 1 tablespoon butter. Add 2 tablespoons brown sugar, and swirl until dissolved.
  • Add 2 bananas, cut side down, and cook for about 2 minutes on each side, turning very carefully.
  • Pouring from a measuring cup, with the pan off the heat, add 1/4 cup rum. Stand back from stove, and return pan to heat. Shake the pan, allowing rum to ignite. Let the alcohol burn off, and again shake the pan, to coat the bananas. Cook until glazed and translucent, about 1 minute longer.
  • Remove bananas to warm plates, divide sauce between them, and repeat with remaining 2 bananas.
  • Garnish each banana with a little dab of creme fraiche or sour cream, and serve immediately.

2 tablespoons honey
2 tablespoon brown sugar
2 tablespoons salted butter
2 just-ripe bananas, peeled and sliced 1/2" thick

Steps:

  • In a small bowl, whisk together honey, brown sugar, and 2 tablespoons water; set aside. Melt butter in a skillet over medium-high heat. When foam from butter subsides, add bananas in a single layer; cook, flipping once, until dark brown, 7 to 9 minutes total.
  • Add reserved honey mixture; cook 45 seconds and serve immediately. Cooled bananas can be refrigerated in an airtight container up to 1 day. Reheat over medium-low before serving.

1/2 teaspoon ground allspice
1/3 cup packed brown sugar

Steps:

  • Heat oven to 350°.
  • Cut bananas cross-wise in half; cut each half lengthwise in half.
  • Place cut sides up in ungreased square baking dish, 9x9x2".
  • Mix butter, lemon juice and allspice; brush over bananas.

1 cup part-skim ricotta
1/2 teaspoon freshly grated nutmeg
1/4 cup light-brown sugar
1/4 cup granulated sugar
1/8 teaspoon coarse salt
1 1/2 teaspoons pure vanilla extract
4 ripe, firm bananas, peeled

Steps:

  • Preheat broiler, with rack 6 inches from heat source. Mix ricotta and nutmeg in a small bowl. Mix sugars, salt, and vanilla in a small bowl. Cut bananas diagonally 1/4 inch thick, keeping slices in order as you cut. Discard tips.
  • Spread 1/4 cup ricotta mixture in each of four 5-inch-wide by 1-inch-deep baking dishes. Fan 1 banana around edge of each dish, creating a circle. Gently press bananas into ricotta mixture. Using a pastry brush, lightly brush bananas with water, then sprinkle each with 2 tablespoons sugar mixture. Pat sugar into an even layer on top of bananas to prevent the sugar from clumping and burning.
  • Broil until sugar has caramelized and bananas have softened, 3 to 4 minutes. Serve immediately.

OMG, this recipe had me drooling, it is so very good. We had it tonite in the kitchen - so that only the kitchen staff could eat (8+) we followed the directions so there was enough for only a taste! I think if you chose to you could add a decade4nt ice-cream such as butter-pecan ripple & follow through with nuts as well! (Just a thought!) WOW! It's bananas cooked in a delectable brown-sugar-rum sauce for a quick yet impressive dessert! Found this in an Eating Well Newsletter in the June 2008 edition.

2 tablespoons brown sugar
1 teaspoon butter or 1 teaspoon margarine
1/2 teaspoon canola oil or 1/2 teaspoon vegetable oil
2 tablespoons dark rum (more if you like)
1 teaspoon lime juice (please, not the bottled stuff!)

6 tablespoon dark brown sugar
3/4 cup dark rum (I like to use Captain Morgan Spiced Rum)
4 tablespoon banana liqueur OPTIONAL (I buy a mini-bottle like airplane size)

Steps:

  • Peel bananas and cut them in half lengthwise
  • n a medium sauté pan, over medium heat, melt 1.5 T of the butter. Add 3 T of the brown sugar and swirl until dissolved.
  • Add 2 of the bananas, cut side down, and cook for no more than 2 minutes on each side, turning very carefully. I don't like the bananas overcooked.
  • Pouring from a measuring cup, with the pan off the heat, add a mixture of 3/8 cup of rum and 2 T banana liqueur, if using. Stand back from the stove and add the pan back onto the heat and shake the pan, allowing the rum to ignite. I sometimes have to use a long lighter to get it going if using an electric stovetop. Let the alcohol burn off and again shake to pan to coat the bananas. And cook 1 minute longer or until bananas are glazed.
  • Remove bananas to two serving dishes with vanilla ice cream, creme fraîche or sour cream. Divide sauce over the two servings.

French Toast:
8 Ounces cream cheese, softened
1 Cup mashed, drained Louisiana canned sweet potatoes in syrup
1/4 Cup packed dark brown sugar
1 Teaspoon cinnamon
1/2 Teaspoon ginger
1/8 Teaspoon ground cloves
16 Slices cinnamon swirl bread
3 Large eggs
1 Cup half and half
2 Tablespoons honey
1 Teaspoon vanilla extract
Cooking Spray
Brown Sugar Bananas:
10 Tablespoons salted butter
1/2 Cup packed light brown sugar
4 Firm, but ripe bananas, sliced into ½ inch rounds
1 Teaspoon vanilla extract
Garnish:
6 (2 Tablespoon) sized dollops whipped cream
½ Cup chopped toasted pecan

Steps:

  • To make the French toast, blend cream cheese in a large mixing bowl with electric mixer on medium speed for 1 minute. Beat in sweet potatoes, brown sugar, cinnamon, ginger and cloves until combined and smooth. Divide sweet potato mixture evenly (about 1/4 cup on each) on top of 8 slices cinnamon swirl bread. Top with remaining 8 slices bread. Whisk eggs in a large mixing bowl. Continue to whisk and add in half and half, honey and vanilla extract. Spray a nonstick double griddle with cooking spray. Heat griddle over medium heat. Dip sweet potato/cinnamon swirl bread sandwiches into egg mixture, coating both sides and place on hot griddle. Cook 3-4 minutes until bottom is golden brown, flip and cook additional 2-3 minutes until bottom is golden brown and French toast is done. Remove from heat and keep warm. To make brown sugar bananas, place butter in a large skillet over medium heat and melt. Stir in brown sugar and cook, stirring frequently until sugar melts, about 2 minutes.
  • Add in bananas and stir in vanilla and cook additional 1-2 minutes until topping is hot. Place 1 sweet potato French toast sandwich on each plate and top with an equal portion of bananas. Garnish with a dollop of whipped cream and an equal portion of toasted pecans and serve warm
