1 1/2 cups packed light brown sugar
2 large eggs

1 teaspoon pure vanilla extract
2 cups peeled, cored and chopped apples
1/2 cup packed light brown sugar
1/2 cup all purpose flour
1/2 teaspoon ground cinnamon
4 tablespoons unsalted butter, softened
1/2 cup packed light brown sugar
1/2 teaspoon vanilla extract
2 tablespoons water

Steps:

  • Preheat the oven to 350 degrees F. Lightly grease a 13 by 9-inch glass baking dish with 2 teaspoons of the butter.
  • In a large bowl, cream together the remaining stick of butter and sugar until light and fluffy. Add the eggs 1 at a time, beating after the addition of each. In a separate bowl or on a piece of parchment, sift together the flour, baking soda, cinnamon, and salt. Add to the wet ingredients, alternating with the sour cream and vanilla. Fold in the apples. Pour into the prepared baking dish, spreading out to the edges.
  • To make the topping, in a bowl, combine the sugar, flour, cinnamon, and butter, and mix until it resembles coarse crumbs. Sprinkle the topping over the cake and bake until golden brown and set, 35 to 40 minutes. Remove from the oven and let cool on a wire rack for at least 10 minutes.
  • To make the glaze, in a bowl, combine the sugar, vanilla, and water and mix until smooth. Drizzle the cake with the glaze and let harden slightly. Serve warm.

2 apples - peeled, cored and chopped
2 ½ cups all-purpose flour
1 ½ cups packed brown sugar
¾ cup butter, softened
1 cup chopped walnuts, toasted
1 teaspoon baking soda
1 teaspoon ground cinnamon
½ teaspoon salt
1 egg
¾ cup sour cream
1 teaspoon vanilla extract

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Butter a 9 inch round cake pan or 9 1/2 inch springform pan.
  • Using a fork, work flour with brown sugar and butter in a large bowl until crumbly. Stir in nuts. Divide mixture in half. Evenly press half into pan bottom to form a crust.
  • Stir baking soda, cinnamon, and salt into remaining crumb mixture until blended, then make a well in the center. In a small bowl, lightly beat egg with sour cream and vanilla until smooth. Add to flour mixture, stirring just until combined. Fold in apples.
  • Evenly spread batter over crumb mixture. Bake until a cake tester inserted into center comes out fairly clean, about 1 hour and 20 minutes. If top gets too brown before cake is baked, lightly lay a piece of foil over top for last 10 to 20 minutes of baking. Cool in pan on a rack. Serve with Brown Sugar Sauce. Cake keeps well at room temperature for a day. Covered, it freezes well and is easily cut while still frozen.

Steps:

  • For cake:
  • Position rack in center of oven and preheat to 325F. Spray 12-cup Bundt pan with nonstick spray. Sift flour and next 6 ingredients into medium bowl. Drain grated apples in strainer. Using hands or kitchen towel, squeeze out excess liquid from apples. Measure 2 cups grated apples.
  • Using electric mixer, beat butter, both sugars, and lemon peel in large bowl until fluffy. Beat in eggs, 1 at a time. Mix in vanilla and lemon juice. Beat in flour mixture. Mix in grated apples. Transfer batter to prepared pan. Bake cake until tester inserted near center comes out clean, about 1 hour. Cool in pan on rack 20 minutes.

  • Stir all ingredients in small nonstick skillet over medium-high heat until sugar dissolves and mixture comes to boil. Reduce heat to medium; whisk until glaze is smooth, about 1 minute.   • CAKE: Heat the oven to 350° F. Grease an 8-inch pan and set aside. In a medium bowl, combine the flour, sugar, baking soda, salt and cinnamon.Stir with a whisk to mix everything together. In a large bowl, mix the eggs with a hand mixer til light in color and foamy. Add the oil and vanilla and beat well. Stir in the flour mixture with a spoon and continue stirring the batter til the flour disappears. Add the apples and nuts (if using) and stir to mix them into the batter. Scrape batter into prepared pan and bake for 40-45 minutes, or until a toothpick inserted in the center comes out clean. Place the hot cake on a wire cake. While it's still hot, prepare the glaze. 1 spice cake mix, i used duncan heinz
1 - 21 oz can apple pie filling - i chopped the slices up a bit
3 eggs
FROSTING
5 Tbsp unsalted butter
1/2 c packed brown sugar
1/4 tsp salt
3 Tbsp milk
1 1/2 c confectioners' sugar
1 tsp vanilla extract

Steps:

  • 1. Preheat oven to 350 degree F. Spray 9 x 13 baking dish with nonstick cooking spray.
  • 2. I chopped the apples into about 1 inch chunks. In a medium bowl, add cake mix, three eggs, and the apples with thickening.
  • 3. Using a spatula, mix well. Make sure all is incorporated well, batter will be thick.
  • 4. Spread into cake pan evenly.
  • 5. Bake for 30 minutes. When cake only has 5 minutes left; start the frosting if using.
  • 6. Frosting: In a small pan over medium heat, melt the butter. Stir in brown sugar and salt. Cook, stirring, until the sugar melts. Add the milk, bring to a boil, and pour into a mixing bowl. Cool for 10 minutes.
  • 7. Stir in confectioners' sugar and vanilla. Beat well; if the mixture seems too thin, add more confectioners' sugar. Use the frosting while it is still warm or it will firm up while it cools and you won't be able to spread it. I spread the frosting on the warm cake.
  • 8. You could also add nuts to the cake or frosting! Enjoy!!!!

  • Bake in the middle of the oven until a toothpick inserted in the centre comes out clean- about 50 minutes.
  • Let the cake cool slightly.
  • Unmold and poke the top of the cake all over with a meat fork.
  • Pour glaze over the warm cake, letting the excess run down the sides.
  • Cake can be decorated with more chopped walnuts or pecans.
  • To Prepare Glaze: Put all ingredients into small saucepan and bring to a simmer, stirring, over low heat.
  • Simmer until the sugar dissolves, about 1 minute.

5 tablespoons sugar

In a separate bowl or on a piece of parchment, sift together the flour, baking soda, cinnamon, and salt. Add to the wet ingredients, alternating with the sour cream and vanilla. Fold in the apples. Pour into the prepared baking dish, spreading out to the edges. To make the topping, in a bowl, combine the sugar, flour, cinnamon, and butter, and mix until it resembles coarse crumbs. Sprinkle the topping over the cake and bake until golden brown and set, 35 to 40 minutes. Remove from the oven and let cool on a wire rack for at least 10 minutes. 1 1/2 cups vegetable oil
1 1/2 cups sugar
1/2 cup brown sugar, packed
3 large eggs
3 teaspoons vanilla
3 cups flour

4 apples, peeled and diced
1 1/4 cups chopped walnuts
1/3 cup butter
1/3 cup light brown sugar, packed

Steps:

  • Set oven to 325 degrees.
  • Grease and flour a 12-cup bundt pan.
  • In a bowl using an electric mixer beat the oil with white and brown sugar until well blended (about 4 minutes).
  • Add in eggs and vanilla; beat until well combined.
  • In a small bowl combine the flour with baking soda, cinnamon and nutmeg; add to the sugar mixture; mix until combined.
  • Fold in the apples and nuts.
  • Transfer to the bundt pan and bake for about 1 hour and 30 minutes, or until the cake tests done.
  • Cool in pan for 20 minutes, then remove to wire rack.
  • To make glaze: In a heavy saucepan combine butter, brown sugar, white sugar and whipping cream; bring to a boil and simmer over medium heat stirring or whisking constantly for 1 minute.
  • Stir in the vanilla.
  • Drizzle the warm glaze over the cake.

1 pkg plain spice cake(18.25oz)
1 c whole milk
8 Tbsp butter-melted (1 stick)
1/3 c canola oil
3 large eggs
2 tsp maple flavoring
FILLING
1 large apple(peeled,cored,& sliced)(1 heaping cup)
1/4 c packed brown sugar
1/2 tsp ground cinnamon
2 Tbsp butter(melted)
TOPPING---BROWN SUGAR CARAMEL GLAZE
3 Tbsp butter or margarine
3 Tbsp packed light brown sugar

  • 1. Place rack in middle of oven and preheat to 350.Lightly mist a 12 cup Bundt Pan with vegetable oil spray and dust with flour. Shake out the excess flour.Set pan aside
  • 2. Put 1st 6 ingredients in a mixing bowl. Blend until mixed,scrape down sides. Increase mixer speed to medium and beat for 1-1/2 minutes.....The batter should look thick and well combined. pour 1/2 the batter into prepared pan,smooth out with a rubber spatula and set pan aside.
  • 3. PREPARE FILLING: Place all ingredients in a bowl and combine.Spoon over batter in pan.Pour remaining batter over filling.

Bake the cake until it springs back when lightly pressed with your finger and starts to pull from the sides of the pan. 43-47 minutes....Remove pan from oven to a wire rack to cool for 20 minutes.(as the cake cools in the pan it will fall 1")...Run a long sharp knife around the edge of the cake and invert onto a platter.Drizzle with the glaze.

2 1/2 cups brown sugar
2 eggs
1 cup shortening (scant)
1 cup cold brewed coffee
2 teaspoons baking soda (mixed in the coffee)
3 cups chopped raw apples
1/2 cup nuts
2 cups raisins
1 teaspoon cinnamon
1/2 teaspoon allspice
1/2 teaspoon clove
3 cups flour
1 teaspoon salt

Steps:

  • Cream the brown sugar, eggs and shortening.
  • Add the cold coffee and mix well.
  • Sift dry ingredients together.
  • Add to to the creamed mixture. Mix well.
  • Add the apples and nuts, combining well.
  • Pour into a large baking pan, 11x15 works for me. You could also use a jelly roll pan and bake it for less time.
  • Bake in a slow oven, 325 degrees for at least 1 hour.

Cake batter:
1 1/2 cups sugar (up to 2 cups if using tart apples)
3 extra-large eggs
1 1/2 cups vegetable or canola oil (I used canola)
1 teaspoon vanilla extract
3 cups self-rising flour
1/4 teaspoon ground cinnamon
1/8 teaspoon ground nutmeg
3 cups peeled and chopped apples (about 3 medium)(I used Honey Crisp variety)
1/2 cup finely chopped pecans
8 pecan halves for pan, optional
Glaze:
1 stick (1/2 cup) butter
1 cup packed brown sugar (I used dark)
1/4 cup whole milk or half-and-half

Steps:

  • Preheat oven to 350 degrees F. Generously butter and flour a 12-cup Bundt cake pan. Arrange pecan halves (upside down) in the bottom of the pan, if desired. Set pan aside. In a large mixing bowl and using a mixer, beat together the sugar, eggs, and oil until creamy, 3-4 minutes. Beat in the vanilla. Sift the flour over the egg mixture in the bowl; add cinnamon and nutmeg and combine well. (I used a rubber spatula first (to reduce the flour dust) then used the mixer to finish combining.) Peel and chop the apples; then gently fold apples and pecans into the batter with a spatula. CAREFULLY spoon (so the pecans don't shift) a heaping tablespoon of the batter over each pecan half in the pan. Pour the remaining batter into the pan. Bake in the center of the oven for 50-60 minutes, or until center tests done with a toothpick. Cool in pan on a wire rack for 10 minutes, then loosen the cake from the pan and turn out onto a serving plate, pecan side up. In the meantime, make the Glaze: Melt the butter in a medium non-stick saucepan over medium heat; add the brown sugar and milk and bring to a boil, at first bubble cook for exactly 2 1/2 minutes. Remove from heat and whisk for 2-3 minutes to cool slightly. If you haven't done so already, turn the cake out onto a serving plate. Slowly drizzle the glaze over the cake. Use any leftover glaze to drizzle over individual slices at serving.
