Brown Sugar-Cured Turkey with Wild Mushroom-Shallot Gravy image

1 20-pound turkey
1/2 cup (packed) golden brown sugar
1/4 cup coarse salt
2 teaspoons onion powder
1 teaspoon garlic powder
1 teaspoon ground allspice
1 teaspoon ground cloves
1 teaspoon ground mace
2 large onions, quartered
2 cups canned low-salt chicken broth
Wild Mushroom-Shallot Gravy

Steps:

  • Rinse turkey inside and out. Pat dry with paper towels. Place turkey on platter. Mix brown sugar, salt, onion powder, garlic powder, allspice, cloves and mace in small bowl to blend well. Rub brown sugar mixture all over outside of turkey. Refrigerate turkey uncovered 24 hours.
  • Position rack in bottom third of oven and preheat to 300°F. Arrange onion quarters in large roasting pan. Place turkey atop onions. Tie turkey legs together. Tuck wings under turkey. Sprinkle turkey with pepper. Cover loosely with foil.
  • Roast turkey 2 hours. Uncover; roast 30 minutes. Add 1 cup broth to roasting pan; baste turkey with broth. Roast turkey 1 hour, basting occasionally. Add 1 cup broth to roasting pan; continue to roast turkey until dark brown, basting with broth every 20 minutes, about 1 hour. Cover turkey loosely with foil; continue to roast until thermometer inserted into innermost part of thigh registers 180°F, about 1 hour 30 minutes longer.
  • Transfer turkey to platter. Tent with foil and let stand 30 minutes. Serve with Wild Mushroom-Shallot Gravy.

Guinness Beef Brisket with Guinness mushroom onion gravy and brown sugar braised carrots image

3 lb beef brisket
1 can(s) guinness stout
1 tsp garlic powder
1 tsp onion powder
4 Tbsp olive oil
salt and pepper
1 large onion
1 pkg sliced fresh portobello mushrooms
4 clove garlic
4 Tbsp butter
2 Tbsp flour
1 pkg raw petit carrots
2 Tbsp brown sugar

Steps:

  • 1. Salt and pepper Brisket and brown on all sides in 2 tablespoons Olive Oil
  • 2. Place in crock pot, add onion and garlic powder and the can of Guinness set on low for at least 8 hours
  • 3. When done remove Brisket from crock pot and let rest on a plate saving the liquid in the pot for gravy.
  • 4. While meat is resting in a saute pan med high heat melt 2 of the tablespoons of butter and brown sugar add baby carrots and turn to low, cover and simmer for 20 minutes. Making sure to move around so carrots don't get browned.
  • 5. In another large saute pan heat the other two tablespoons olive oil and saute' Onion mushrooms and garlic. When tender add 2 tablespoons of butter and 2 tablespoon flour in pan to make a roux. cook for several minutes and add 2 cups of the reserved liquid from the crock pot. Cook until thickened. Salt and Pepper to taste. Serve on top of sliced brisket.
  • 6. Cut brisket in half and slice the half for meal and serve with mushroom gravy. Reserve the other half of Brisket for Round 2 meal (Tex Mex black bean and brisket) to be posted in seperate recipie

I love to try new turkey recipes during the year to experiment before the holidays. I'm finally getting around to posting some that I've tried before. This one is quite good, but a little more work than most. However, parts of it can be prepared a day ahead. Plan ahead for this one - the turkey needs sit in the refer for 24 hours with the herb mixture before cooking.

20 lbs turkey
1/2 cup brown sugar, golden, packed
1/4 cup coarse salt

10 shallots, peeled
4 garlic cloves, peeled
12 ounces mixed wild mushrooms, sliced
1 tablespoon fresh rosemary or 1 teaspoon dried rosemary
1 teaspoon dried thyme
3/4 teaspoon dried sage
1/2 cup marsala wine
1/2 cup sherry wine
1 1/2 cups chicken stock
1 cup whipping cream

Steps:

  • TURKEY:.

  • GRAVY:.
  • Preheat oven to 300.
  • Combine oil, shallots and garlic in small glass baking dish.
  • Cover dish with foil.
  • Bake until shallots and garlic are very tender and pale golden, about 1 hour.
  • Cool slightly.
  • Thinly slice shallots and garlic; reserve oil in dish. (Can be prepared 1 day ahead. Cover separately and refrigerate).
  • Transfer 1 tablespoon oil from baking dish to heavy large saucepan.
  • Heat oil over medium-high heat.
  • Add mushrooms, rosemary, thyme, sage, and roasted shallots and garlic to saucepan; saute until mushrooms are tender, about 5 minutes.
  • Add Marsala and sherry; boil until syrupy, about 6 minutes.
  • Add stock; boil until liquid is reduced by half, about 10 minutes.
  • Add cream; boil until mixture thickens to sauce consistency, about 5 minutes.
  • Season with salt and pepper.

1 lb ground turkey
1/2 lb ground beef
1 large egg
1/4 c chili sauce (more or less. accordn to preference) i use a 1/2 cup of sriracha.
1 Tbsp onion soup mix
3/4 c breadcrumbs
2 c mushrooms, sliced
2 Tbsp onion soup mix
2 Tbsp butter (u mite need more)
3 c beef broth
5 Tbsp water
3 Tbsp cornstarch
1/8 c beef broth....for top of meatloaf

Steps:

  • 1. PREHEAT OVEN TO 350. IN A LARGE BOWL MIX TOGETHER CHOPD TURKEY, CHOPD BEEF, EGG, BREADCRUMBS, CHILI SAUCE n 1 TBLSPN OF ONION SOUP MIX. PLACE MIXTURE ON BAKING PAN N FORM A LOAF OR BAKE IN LOAF PAN. BAKE FOR AN HOUR OR UNTIL DONE. AFTER FIRST 1/2 HOUR OF BAKN POUR OVER MEATLOAF A 1/8 CUP OF BEEF BROTH.
  • 2. WHEN MEATLOAF IS ALMOST DONE PREPARE GRAVY. IN A LARGE PAN MELT BUTTER N ADD MUSHROOMS N BROWN TILL TENDER.
  • 3. SPRINKLE 2 TBLSPNS OF ONION SOUP MIX N ADD BEEF BROTH N SIMMER FOR 5 MINUTES STIRRING OCCASIONALLY.
  • 4. STIR CORNSTARCH N WATER IN A SMALL BOWL UNTIL SMOOTH THEN POUR INTO BROTH MIXTURE N BRING TO A BOIL N UNTIL THICKND ... S n P TO TASTE.
  • 5. SERVE OVER SLICD MEATLOAF N MASHED POTATOES...... ENJOY :)

From ROSE DOSTI, in la times. I personal like to cook the mushrooms longer, I like the mushrooms to have a richer woodsier flavor. If you don't like wine on cooking, replace it with more chicken broth.

3 tablespoons oil
1 lb mushroom, halved
1/4 cup shallots or 1/4 cup green onion, minced
1 garlic clove, minced
1 1/2 tablespoons flour
1 cup chicken broth
1/2 cup dry white wine or 1/2 cup chicken broth
1 tablespoon tomato paste
1 tablespoon fresh parsley, chopped
1/2 teaspoon thyme
1/4 teaspoon salt
1 pinch pepper

Steps:

  • Heat 2 tablespoons oil in skillet over medium heat, add mushrooms and cook 5 minutes until soft. Remove mushrooms from skillet.
  • Heat remaining 1 tablespoon oil, add shallots and garlic and cook 4 minutes until soft. Stir in flour. Gradually add broth and wine. Cook and stir until thickened, 5 minutes. Add tomato paste, parsley, thyme, salt, pepper and mushrooms. Heat thoroughly. Serve with meatloaf or turkey.
