ARTICHOKE RAVIOLI WITH BROWN BUTTER SHRIMP



Artichoke Ravioli With Brown Butter Shrimp image

A nice pasta dish that I created to use pre-made artichoke ravioli from Trader Joe's that I had, but feel free to substitute whatever ravioli you wish. Note: Nutrition info will be incorrect, as the ravioli is not included.

1 (9 ounce) package artichoke ravioli (from Trader Joe's)
1 lb shrimp, peeled and deveined
salt
3 tablespoons butter (divided)
0.5 (14 ounce) can chicken broth
1/2 lemon (zest and juice)
3 tablespoons parmesan cheese

Steps:

  • Gently boil ravioli, as directed on package and drain when done.
  • Meanwhile, dice the shrimp and season them lightly with salt.
  • In a skillet, heat 1 tablespoon butter over medium heat until browned.
  • Add shrimp and cook 3-4 minutes, until cooked through.
  • Remove shrimp from pan and wipe out remaining butter.
  • Add to pan 1 more tablespoon butter, chicken broth, lemon zest, and lemon juice.
  • Cook until reduced for a sauce and stir in last tablespoon butter.
  • Top ravioli with parmesan cheese and shrimp, then drizzle with sauce.

ASPARAGUS WITH SPICED BUTTER & BROWN SHRIMP

Try this easy asparagus dish with potted shrimp-inspired topping in pools of mace-spiked butter. It makes a memorable starter for a dinner party or smart lunch

Number Of Ingredients 11

60g unsalted butter
½ tsp sea salt
½ tsp cayenne pepper
½ tsp ground mace
¼ tsp pink peppercorns , lightly crushed using a pestle and mortar
500g asparagus spears, woody ends trimmed
200g peeled brown shrimp (or see tip below)
2 wild garlic leaves , plus a few to serve (optional), or handful finely shredded chervil or chives
1 lemon , juiced
a few chive flowers (optional)
chunks of crusty white bread , to serve

Steps:

  • Put a large platter in the oven to warm up. Gently melt the butter in a small saucepan over a low heat, then stir in the sea salt, spices and peppercorns. Remove from the heat.
  • To cook the asparagus, bring a little salted water (about 5cm deep) to the boil in a saucepan, making sure the saucepan is wide enough to fit the asparagus laying flat without crowding it. Add the asparagus and poach for 2-3 mins, or until a knife inserted into the thickest part of a spear can be pulled out with no resistance.
  • Meanwhile, return the spiced butter pan to the heat, then add the shrimp, wild garlic or herbs and lemon juice, basting the shrimps well. Taste and season, if necessary. Drain the asparagus and pile onto the warm platter, then pour over the shrimps and spiced butter. Garnish with the flowers, if using, then serve with chunks of crusty bread.

4 tablespoon butter
1 pound shrimp
salt and pepper
3 cloves garlic minced
juice of one lemon
1/4 teaspoon red pepper flakes
2 tbsp. chopped parsley

Steps:

  • In a medium sized skillet over medium low heat add the butter. Cook until butter starts to foam, and turn brown. About 3-4 minutes. Add the shrimp and season with salt and pepper. Turn the heat to medium high. Add the garlic. Cook until the shrimp turns pink about 2 minutes each side. Add the lemon juice, and red pepper flakes. Garnish with parsley and toss with pasta if desired. Serve immediately .

4 tbsp. unsalted butter
1 lb. shrimp
kosher salt
Freshly ground black pepper
2 cloves garlic, minced
1 lemon, juice and zest
2 c. baby spinach
2 tbsp. chopped parsley
3/4 lb. cooked angel hair pasta

Steps:

  • In a bowl, season shrimp with salt and pepper; set aside. In a large sauté pan add butter and heat over medium-low heat. Warm until color begins to brown, about 3-4 minutes. It will start to smell nutty and begin foam. Turn heat up to medium-high. Add shrimp and cook until pink, 2 minutes per side. Scrape the browned bits off of the bottom of the pan with a wooden spoon. Stir in garlic and baby spinach, and toss until spinach begins to wilt. Add the pasta, lemon juice and lemon zest and toss with tongs until everything is evenly combined. Check for seasonings and add more salt and pepper, if needed. Serve immediately.

BROWN BUTTER HONEY GARLIC SHRIMP RECIPE

4 tablespoons unsalted butter
4 tablespoons honey
1 tablespoon fresh squeezed lemon juice (or juice of half a lemon)
1 tablespoon low sodium soy sauce
3 cloves garlic , minced
21- ounces | 600-grams shrimp , peeled and deveined (tail on or off)
Salt to season
Lemon wedges (to serve)
Fresh chopped parsley , to serve

Steps:

  • Heat butter in a non stick pan or skillet over medium-high heat. Melt, swirling pan and stirring occasionally for about 3 minutes, or until the foam settles; the butter begins to change in colour to golden brown and has a nutty fragrance. Add the honey, lemon juice, soy sauce and garlic; stir well to combine all of the flavours together and cook for 30 seconds until the garlic is fragrant. Remove from heat. Pour out just over half of the browned butter from the pan (liquid only), leaving 2 tablespoons of the honey butter mixture in the pan, and reserve the rest for later. Add half of the shrimp to the honey/butter in the pan; sear for about 2 minutes each side, or until just cooked through and no longer opaque. Transfer to a plate; set aside. Wipe pan over with paper towel and add 2 more tablespoons of the honey/butter mixture to the pan. (You may need to add 1 teaspoon of olive oil or extra butter to the pan if your sauce has thickened too much.) Sear the remaining shrimp for 2 minutes each side, or until just cooked through and no longer opaque. Add the cooked shrimp back into the pan, and pour in the remaining honey/butter sauce; stirring through the shrimp to evenly coat. Season with salt and pepper if desired and garnish with parsley. Serve with steamed vegetables; over rice or with a salad
