Smart-Choice Bacon Breakfast Casserole image

Bacon, mushrooms, onions, cheese and eggs are stuffed between two layers of bread, making this casserole more like a giant sandwich.

8 slices whole wheat bread, crusts trimmed, divided
8 slices cooked OSCAR MAYER Selects Uncured Turkey Bacon, chopped
1 can (4 oz.) sliced mushrooms, drained
2 green onions, sliced
1-1/2 cups KRAFT 2% Milk Shredded Cheddar Cheese
4 eggs
2 cups fat-free milk

Steps:

  • Place 4 bread slices on bottom of 8-inch square baking dish sprayed with cooking spray; top with bacon, mushrooms, onions and cheese. Cover with remaining 4 bread slices.
  • Whisk eggs and milk until blended; pour over bread. Refrigerate 1 hour.
  • Bake, uncovered, in 350°F oven 1 hour or until knife inserted in center comes out clean. Let stand 10 min. before cutting to serve.
