Broken Noodles with Tomato Sauce and Ricotta image

For the fastest pasta, cut to the chase: Cook pappardelle in the tomato sauce. Finish with ricotta and basil.

4 cups homemade or store-bought marinara sauce
1 package (9 ounces) pappardelle (wide pasta), broken into large pieces
Coarse salt and ground pepper
1/2 cup part-skim ricotta
1/2 cup fresh basil leaves, torn

Steps:

  • In a large saucepan, bring sauce and 2 cups water to a boil; reduce to a simmer. Add noodles, and simmer, stirring frequently, until tender, 6 to 8 minutes. Season with salt. Serve with a dollop of ricotta, basil, and pepper.

White Beans With Squid And Broken Noodles image

Salt
4 tablespoons extra virgin olive oil
4 cups cooked or canned white beans, with about a cup of their liquid
3/4 to 1 pound cleaned squid, cut up
Black pepper
2 cups broken egg noodles
Stock or water, if needed
1 tablespoon minced garlic
Chopped fresh parsley leaves for garnish (optional)

Steps:

  • Bring a medium pot of water to a boil, and salt it. Meanwhile, put half the olive oil in a medium saucepan over medium heat. A minute later, add the beans and their liquid. Bring to a boil, stirring, and add squid, along with some salt and pepper. Reduce heat to a simmer, and continue to cook, stirring occasionally.
  • When water boils, cook the noodles until they are barely tender, about 5 minutes. Drain, and add them to the simmering beans. Cook, stirring occasionally, until the squid and noodles are tender, adding a little liquid if necessary. (Do not add liquid prematurely -- the squid will produce a lot on its own.)
  • When just about done, add garlic. Cook it just long enough to take the edge off its rawness. Spoon the mixture into 4 dishes, garnishing with parsley and sprinkling with remaining olive oil.

2 tablespoons olive oil
1 (4 ounce) package sliced fresh mushrooms
½ cup marinara sauce
½ tomato, chopped
¼ cup sliced black olives
4 slices green bell pepper, cut into 1-inch dice
4 slices red bell pepper, cut into 1-inch dice
1 artichoke heart, quartered
1 tablespoon chopped fresh garlic
½ teaspoon dried basil
salt and ground black pepper to taste
10 ounces cavatappi (corkscrew) pasta
2 ounces shredded mozzarella cheese
1 tablespoon grated Parmesan cheese, or to taste

Steps:

  • Heat olive oil in a skillet over medium heat; cook and stir mushrooms in the hot oil until slightly softened, 5 to 10 minutes. Add marinara sauce, tomato, olives, green bell pepper, red bell pepper, artichoke heart, garlic, basil, salt, and pepper to mushrooms; bring to a boil. Simmer until tomato sauce is heated through, 5 to 10 minutes.
  • Bring a large pot of lightly salted water to a boil. Cook cavatappi in the boiling water, stirring occasionally until cooked through but firm to the bite, 8 minutes. Drain and transfer to a serving bowl.
  • Sprinkle mozzarella cheese over cavatappi. Pour tomato sauce over mozzarella layer; sprinkle with Parmesan cheese.

10 ounces cavatappi cooked
1 ounce oil
4 ounces sliced mushrooms
1/2 tomato cut in large dice
4 pieces red and green pepper in 1" dice
1 artichoke heart quartered
1/4 cup sliced black olives
1/2 teaspoon dried basil
1 pinch salt
1 pinch freshly-ground black pepper
1 tablespoon chopped fresh garlic
4 ounces T.G.I. Friday's Marinara Sauce (see recipe)
2 ounces shredded mozzarella cheese
Grated parmesan cheese

Steps:

  • Sauté mushrooms in oil briefly, add the rest of the ingredients (except cheese) and bring to a boil. Put hot noodles (they look like spirals) in a bowl, sprinkle with mozzarella, pour the hot sauce over and sprinkle with parmesan cheese. This recipe yields ?? servings.
