- 1. Combine all ingredients except broccoli; stir well. Chill 3 to 4 hours.
- 2. Separate broccoli into spears. Cook, covered, in a small amount of boiling water 8 to 10 minutes or until crisp-tender.
- 3. Arrange in a dish. Top with sauce.

- Separate the broccoli tops into small florets. Peel the broccoli stems and cut them in half lengthwise and then into ¼-inch slices. In a large saucepan, steam or boil the broccoli for 4 to 5 minutes until tender. Drain and let cool.
- In a large glass or stainless-steel bowl, whisk together the vinegar, horseradish, mustard, salt, and pepper. Add the oil slowly, whisking. Whisk in the sour cream. Add the broccoli, beef, tomatoes, and scallions, and toss to coat.
- Serve and enjoy.

- Preheat the oven to 425 degrees F.
- Toss the potatoes in 1 tablespoon olive oil and spread them out evenly on a sheet pan, cut-side down. Season with 1/2 teaspoon salt and a few turns of black pepper. Roast for 15 minutes. Remove from the oven, toss the potatoes and push them off to the side of the pan. Place the broccolini in the center third of the sheet pan and the salmon on the remaining third. Drizzle the broccolini and salmon with the remaining 1 tablespoon olive oil, sprinkle with the remaining 1/4 teaspoon salt and a few turns of black pepper. Roast until the salmon is cooked through, about another 15 minutes.
- Meanwhile, make the sauce. Combine the mayonnaise, Greek yogurt, capers, horseradish and some black pepper with the juice of half a lemon in a medium bowl and stir. Taste and adjust as desired.
- When the salmon is cooked, squeeze the remaining lemon half over the top of everything and serve with the sauce on the side.

Steps:
- Steam broccoli for 8-10 minutes or until crisp-tender; set aside and keep warm.
- Whisk together flour and 1/2 cup whipping cream in a saucepan until smooth.
- Gradually add remaining whipping cream, and cook over medium heat, stirring constantly, until mixture thickens.
- Add the Co-Jack cheese, Parmesan, horseradish, and salt and pepper (to taste).
- Stir constantly until the cheeses melt and the sauce is smooth.
- Serve hot sauce at once over broccoli spears.
