Broccoli with Orange-Chipotle Butter image

Orange-chipotle butter provides a wonderful addition to this roasted broccoli side dish - ready in 25 minutes.

2 bags (12 oz each) fresh broccoli florets
2 tablespoons olive oil
1/4 cup butter or margarine, softened
2 teaspoons grated orange peel
1 teaspoon finely chopped chipotle chile in adobo sauce (from 7-oz can)
1/2 teaspoon salt

Steps:

  • Heat oven to 450°F. In ungreased 17x12-inch half-sheet pan, toss broccoli and oil until broccoli is well coated. Arrange broccoli in single layer in pan.
  • Roast uncovered 15 to 17 minutes or until crisp-tender.
  • In serving bowl, mix butter, orange peel, chipotle chile and salt until blended. Add roasted broccoli; toss to coat. Serve hot.

This came from a kids' cookbook but was so easy to make and quite good so I decided to post it. You might want to double the sauce components.

1 medium broccoli, crown (about 2-3 cups broccoli florets)
1 tablespoon olive oil
2 tablespoons orange juice
2 tablespoons orange marmalade
1/4 cup chopped walnuts

Steps:

  • Cut the broccoli crown into florets. (if using pre-cut or frozen florets, skip this step.).
  • Combine the olive oil, orange juice, and marmalade in a small saucepan.
  • Cook over medium heat until mixture starts to bubble slightly.
  • Pour the orange sauce over the broccoli and top with chopped walnuts.

2 tablespoons water
1 tablespoon butter
2 green onions, sliced
1/2 cup orange juice
1 tablespoon brown sugar
1 1/2 teaspoons cornstarch
1/2 teaspoon salt
1 teaspoon grated orange peel

Steps:

  • Place broccoli and water in a microwave-safe bowl. Cover and microwave on high for 6-8 minutes or until broccoli is tender; drain.
  • Meanwhile, in a small saucepan, melt butter. Cook onions in butter for 1 minute.
  • In a small bowl, combine the orange juice, brown sugar, cornstarch and salt until smooth. Stir into saucepan.
  • Bring to a boil; cook and stir for 2 minutes or until thickened.

3 lbs broccoli, cut into bite size pieces
1/2 cup fresh orange juice
1/4 cup shallot, minced
5 ounces unsalted butter
2 tablespoons orange rind, julienned
salt and pepper

Steps:

  • Cook broccoli in boiling salted water until tender but firm (about 5 minutes).
  • Drain, run under cold water and pat dry.
  • Simmer orange juice in saucepan with shallots until juice reduces to 2 tablespoons.
  • Add butter and orange peel.
  • Cook until butter has melted.
  • Add broccoli and cook until heated through.
  • Add salt and pepper to taste and serve immediately.

This is so easy and full of great flavor from the broccoli being roasted with garlic spiciness and smokiness from the chipotles and creaminess from the pine nuts. Keep in mind if you don't use seasoned salt and use regular salt you don't need so much.

1/4 teaspoon ground coriander
1 teaspoon seasoning salt, Smokey Seasoned Salt
2 chipotle chiles in adobo, Seeded and minced
5 garlic cloves, minced
1/3 cup pine nuts

Steps:

  • Preheat oven to 450 degrees.
  • Place the broccoli in a roasting pan so all will be 1 layer. Mix all the remaining ingredients together then pour over the broccoli.
  • Place in oven for 10 minutes. Toss and return to oven for 10 more minutes give an other toss for 5 -10 more minutes.

The orignal recipe for this came from "What's for Dinner?" I have been successful exchanging the orange juice and zest for lemon juice and zest. It is delicious either way.

1 head broccoli, about 1 pound
1 tablespoon butter
2 tablespoons fresh orange juice
1/2 teaspoon orange zest
1/4 teaspoon salt
fresh ground black pepper

Steps:

  • Wash and cut broccoli into florets.
  • Bring about 1 cup of water to boil in a saucepan over high heat.
  • Add broccoli florets, reduce heat to medium and cover.
  • Cook until broccoli is crisp-tender and still bright green. About 5 minutes.
  • Drain and return broccoli to pan.
  • Add butter, orange juice, orange zest, salt and pepper.
  • Toss together and heat through.
  • Serve.
