BROWN RICE, BROCCOLI, CHEESE AND WALNUT SURPRISE



Brown Rice, Broccoli, Cheese and Walnut Surprise image

This recipe was born one night when I didn't have too much to do. I guess the only surprise about it is that it tastes so good!

½ cup chopped walnuts
1 tablespoon butter
1 onion, chopped
½ teaspoon minced garlic
1 cup uncooked instant brown rice
1 cup vegetable broth
1 pound fresh broccoli florets
½ teaspoon salt
⅛ teaspoon ground black pepper
1 cup shredded Cheddar cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Place walnuts on small baking sheet, and bake for 6 to 8 minutes or until toasted.
  • Melt butter in a medium saucepan over medium heat. Cook onion and garlic in melted butter for 3 minutes, stirring frequently. Stir in the rice, add the broth, and bring to a boil. Reduce heat to medium-low. Cover, and simmer until liquid is absorbed, about 7 to 8 minutes.
  • Place broccoli in a microwave-safe casserole dish, and sprinkle with salt and pepper. Cover, and microwave until tender.
  • Spoon rice onto a serving platter, and top with broccoli. Sprinkle walnuts and cheese on top.

Pasta with Broccoli and Sausage with a Ricotta Surprise image

1 pound short-cut pasta, such as penne
1 cup ricotta cheese
Zest and juice of 1 lemon
Freshly ground black pepper
1 tablespoon EVOO (extra-virgin olive oil), once around the pan
1 pound bulk sweet Italian sausage
1 large head broccoli
1 medium onion, chopped
4 large garlic cloves, chopped
1/4 teaspoon red pepper flakes (eyeball it)
1 1/2 cups chicken stock
1/2 cup fresh flat-leaf parsley, a couple of generous handfuls, chopped
1/2 cup grated Parmigiano-Reggiano or Pecorino Romano cheese, plus some to pass at the table

Steps:

  • Place a large pot of water with a tight-fitting lid over high heat and bring to a boil. Once it comes to a boil, add some salt and the pasta. Cook according to package directions until al dente. Heads up: you will need to use about 1/2 cup of the starchy cooking liquid for the sauce before you drain the pasta.
  • In a small mixing bowl, combine the ricotta cheese, lemon zest, salt, and a lot of freshly ground black pepper. Reserve the ricotta mixture on the countertop and let it come to room temp. The flavors of the cheese and lemon will develop as the cheese warms up.
  • Preheat a large skillet over medium-high heat with the EVOO. Add the sausage and break it up with the back of a wooden spoon into small bite-size pieces. Really go at breaking the meat up; it will make a big difference in the end. Cook the meat until brown, about 4 to 5 minutes. While the sausage is browning, prepare the broccoli. Cut the broccoli tops into small florets. Remove the fibrous outer layer of the stem (just square it off using your knife), then thinly slice the tender center portion of the stem.
  • Once the sausage is brown, remove it to a paper-towel-lined plate. Return the skillet to the heat and add all of the broccoli and the chopped onion. Spread the veggies out in an even layer in the pan, season with some salt and pepper, and let the broccoli brown up a bit before stirring, about 2 minutes. Add the garlic and red pepper flakes and continue to cook 2 minutes more. Add the sausage back to the skillet along with the chicken stock. Ladle in some cooking water from the pasta and bring up to a simmer. Cook until the broccoli is tender and the liquids have reduced slightly, about 2 minutes. Add the lemon juice, parsley, and cooked, well-drained pasta. Toss to combine and simmer 1 last minute to allow the pasta to soak in the sauce and flavors. Turn the heat off, add the grated cheese, and toss to combine.
  • To serve, place a large dollop of the pepper-lemon-ricotta mixture into each of 4 shallow bowls and bury it with hot pasta. Once you are at the table, mix it up with a fork to distribute the ricotta cheese. Serve with extra grated cheese.

2 cups macaroni pasta
8 oz sour cream
3-5 Tbsp Kraft Ranch Dressing, to taste
3 Tbsp water
2 cups broccoli, cut into small bites
1 cup leftover lunch ham, cut into small bites
2 cups pizza cheese, shredded

Steps:

  • Cook macaroni and rinse with cold water. While cooking, mix sour cream, ranch and water together in a small bowl. Once mixed, add broccoli and ham. Set aside.
  • Place cooked macaroni in a greased 13x9 casserole dish. Top with ranch mixture and then cover with cheese.
  • Bake at 350°F for 45 minutes or until just golden on sides and top.

You can change the servings for this recipe increase or decrease the the ingredients. Such as from 4 to 6 to 8 to 10 etc. By increasing,decreasing the chicken, broccoli, cheese amounts. You can never have enough bacon. My children have loved this recipe for years. I serve it with jag and everyone who tries it wants the recipe. It is easy and a one pan meal.

8 - boneless skinless chicken breast
1 stick(s) unsalted butter
8-10 - frozen brocclie spears
8-10 slice(s) muenster cheese
1 - sleeve of ritz crackers, low salt or garlic if you prefer
1 1/2 teaspoon(s) of garlic powder
1 teaspoon(s) black pepper
8-10 slice(s) bacon
3 cup(s) prepared or homemade chicken gravy

Steps:

  • Layer frozen broccoli on the bottom of a 8x13 rectangular pan.(Brownie pan will do).
  • Layer muenster cheese over the broccoli.
  • Layer chicken breast on the muenster cheese.
  • Crush ritz crackers and top the entire layer of chicken.
  • Melt butter and add garlic and pepper, pour over the ritz crackers.
  • Lay bacon over the top of the chicken.
  • Pour gravy on each serving if desired.

This is one of my sister-in-laws recipe and it's a great one! She made this for Thanksgiving one year and I've made it ever since!!

1 - onion, chopped
3 - celery stalks, chopped
1 can(s) cream of mushroom soup
- 1/3 of 2 lb. velveeta, cubed
- garlic salt
1 - bag frozen broccoli
3 slice(s) cut up toast

Steps:

  • Preheat oven to 325*
  • Sauté onion and celery in butter, about 15 minutes or until tender.
  • Add the rest of ingredients, place in a butter casserole dish.
  • Bake for 30 minutes or until bubbly.
