1/4 cup olive oil, divided
1 garlic clove, thinly sliced
2 cups broccoli florets
2-1/3 cups chicken broth, divided
1/4 cup chopped fresh parsley, divided
Salt and pepper to taste
1/2 small onion, chopped
3/4 cup uncooked long-grain or Italian Arborio rice
2/3 cup dry white wine or chicken broth
1 tablespoon lemon juice
2 tablespoons butter
1/4 cup grated Parmesan cheese, divided

Steps:

  • In a skillet, heat 2 tablespoons oil. Saute garlic and broccoli until garlic is soft, about 3 minutes. Add 1/3 cup chicken broth, 3 tablespoons parsley, and salt and paper to taste. Simmer, uncovered, just until broccoli is tender, about 6 minutes. Set aside., Meanwhile, heat remaining oil in a large saucepan. Cook onion until tender, about 3 minutes. Add rice and stir until rice is coated. Add wine or broth; cook until wine is, stirring constantly., In small saucepan, heat remaining broth and keep warm. Stir 2/3 cup warm broth into rice mixture. Cook, uncovered, over medium-low heat until all of the liquid is absorbed, stirring constantly. Add remaining broth, 1/3 cup at a time, stirring constantly. Allow the liquid to absorb between additions. Rice will be creamy and grains tender when done. (Total cooking time is about 25 minutes.) , Stir in the lemon juice, butter, 3 tablespoons Parmesan cheese and reserved broccoli. Sprinkle with remaining Parmesan and parsley. Serve immediately.

Sometimes I get bored with broccoli - but then I use it in a risotto, and it's like a completely new vegetable. The diced stems retain a nice texture that contrasts with the tender flowers. Make sure to slice the flowers thin for the most delicate results.

2 quarts well-seasoned chicken or vegetable stock, as needed
2 tablespoons extra virgin olive oil
1/2 cup minced onion
1 1/2 cups arborio or carnaroli rice
1 to 2 garlic cloves (to taste), green shoots removed, minced
Freshly ground pepper to taste
1/2 cup dry white wine, such as pinot grigio or sauvignon blanc
1 pound broccoli (2 good-size stalks), stems peeled and cut in small dice, flowers thinly sliced
1/2 cup freshly grated Parmesan cheese
2 tablespoons minced flat-leaf parsley

Steps:

  • Put your stock or broth into a saucepan, and bring it to a simmer over low heat with a ladle nearby or in the pot. Make sure that the stock is well seasoned.
  • Heat the olive oil over medium heat in a wide, heavy skillet or in a large, wide saucepan. Add the onion and a generous pinch of salt, and cook gently until it is just tender, about three minutes. Do not brown.
  • Add the rice and the garlic, and stir until the grains separate and begin to crackle. Add the wine, and stir until it has been absorbed. Begin adding the simmering stock, a couple of ladlefuls (about 1/2 cup) at a time. The stock should just cover the rice and should be bubbling, not too slowly but not too quickly. Cook, stirring often, until it is just about absorbed. Add another ladleful or two of the stock, and continue to cook in this fashion, stirring in more stock when the rice is almost dry. You do not have to stir constantly, but stir often. After 10 minutes, stir in the diced broccoli stems. Continue to add broth and stir the rice for another five minutes. Stir in the thinly sliced flowers. Continue to add broth and stir the rice for another 10 minutes or so. When the rice is tender all the way through but still chewy, it is done. Taste now and adjust seasoning, adding salt and pepper to taste. Add another ladleful of stock to the rice, along with the Parmesan and the parsley, and remove from the heat. The mixture should be creamy (add more stock if it isn't). Stir for about half a minute, then serve in wide soup bowls or on plates, spreading the risotto in a thin layer rather than a mound.

3 tablespoons butter
½ large sweet onion, finely chopped
4 cloves garlic, chopped
1 ½ cups Arborio rice
½ cup dry white wine (such as Sauvignon Blanc)
2 tablespoons lemon juice
5 cups hot chicken broth
1 cup heavy cream
3 cups cooked broccoli florets
2 tablespoons chopped fresh chives
1 tablespoon grated Parmesan cheese
1 ½ tablespoons grated Asiago cheese
salt and pepper to taste

Steps:

  • Heat the olive oil and butter in a large, heavy-bottomed saucepan over medium-high heat. Add the onion and garlic; cook and stir until the onion begins to turn golden brown at the edges, about 2 minutes. Pour in the rice, and stir until the rice is coated in oil and has started to toast, 3 to 4 minutes. Reduce the heat to medium and stir in the white wine and lemon juice.
  • Cook and stir until the wine has mostly evaporated, then stir in one third of the chicken broth; continue stirring until incorporated. Repeat this process twice more, stirring constantly. Stirring in the broth should take 15 to 20 minutes in all. Stir in the cream, and cook 5 minutes before stirring in the broccoli, chives, Parmesan cheese, and Asiago cheese. Cook and stir until the risotto is hot; season to taste with salt and pepper before serving.

1 bunch broccoli, cut into small florets
1 tablespoon extra-virgin olive oil
3 tablespoons unsalted butter
1/2 small onion, finely chopped

1 cup grated sharp cheddar cheese (about 4 ounces)

Steps:

  • Position racks in the upper and lower thirds of the oven and preheat to 425 degrees F. Bring the chicken broth to a low simmer in a saucepan. Toss the broccoli with the olive oil on a rimmed baking sheet.
  • Melt 2 tablespoons butter in a large Dutch oven or ovenproof pot over medium-high heat. Add the onion and cook, stirring occasionally, until slightly softened, about 2 minutes. Add the rice and stir to coat. Pour in the wine and cook until evaporated, about 1 minute. Add the hot broth, 3/4 teaspoon salt, and pepper to taste; bring to a boil. Cover and set on the bottom oven rack. Place the broccoli on the upper rack. Bake, stirring the rice and broccoli once halfway through cooking, until most of the liquid has been absorbed in the rice and the broccoli is tender, 20 to 25 minutes.
  • Remove the rice and broccoli from the oven. Add 3/4 cup hot water, the remaining 1 tablespoon butter and the cheese to the rice and stir until creamy (add a little more hot water to loosen, if necessary). Stir in the broccoli.

100g wholegrain pearl barley
2 tsp reduced-salt vegetable bouillon powder
2 tbsp rapeseed oil
1 large leek , chopped
2 garlic cloves
⅔ pack basil
generous squeeze of lemon juice
125g Tenderstem broccoli from a 200g pack

Steps:

  • Pour a litre of cold water over the barley, cover and leave to soak overnight.
  • The next day, drain the barley, reserve the liquid and use it to make 500ml vegetable bouillon. Heat half the oil in a non-stick pan, add the leek and cook briefly to soften. Tip half into a bowl, then add the barley and bouillon to the pan, cover and simmer for 20 mins.
  • Meanwhile, add the garlic, basil, remaining oil, the lemon juice and 3 tbsp water to the leeks in the bowl, and blitz to a paste with a stick blender
  • When the barley has cooked for 20 mins, add the broccoli to the pan and cook for 5-10 mins more until both are tender. Stir in the basil purée, heat very briefly (to retain the fragrance), then spoon into bowls to serve.

1 teaspoon freshly grated lemon zest

1 1/2 cups rice (short, medium, or long grain)

  • In a large saucepan bring the broth and the water to a boil and in the broth simmer the broccoli flowerets for 3 minutes, or until they are just tender. Transfer the flowerets with a skimmer to a bowl and reserve them. To the simmering broth add the broccoli stems, the zest, and the lemon juice and simmer the mixture for 5 minutes. While the stems are cooking, in a large heavy saucepan cook the onion and the garlic in the oil over moderately low heat, stirring, until the onion is softened and stir in the rice, stirring until each grain is coated with the oil. Add 1/2 cup of the simmering broth, stems included, and cook the mixture over moderately high heat, stirring constantly, until the broth is absorbed. Continue adding the broth mixture, 1/2 cup at a time, stirring constantly and letting each portion be absorbed before adding the next, until the rice is tender but still al dente. (The rice should take about 20 minutes to become al dente.) Stir in the reserved broccoli flowerets and simmer the risotto, stirring, until the flowerets are heated through. 8 to 10 cups chicken stock, as needed
2 tablespoons unsalted butter
1 tablespoon olive oil
3 cloves garlic, minced
1 shallot, brunoised
Kosher salt and freshly ground black pepper

2 cups Arborio rice
1 cup dry white wine
1 cup grated Parmesan, plus more for garnish
Piquillo Pepper Salsa, for serving, recipe follows
Bull's blood leaves, for garnish

7 ounces piquillo peppers, diced (about 1/2 can)
1/2 cup pitted nicoise olives, sliced
2 tablespoons extra-virgin olive oil
2 tablespoons fresh flat-leaf parsley, chopped
1 tablespoon red wine vinegar
3 sprigs fresh thyme, picked and chopped
Kosher salt and freshly ground black pepper

Steps:

  • Blanch the broccoli rabe, and then immediately shock in an ice bath. Remove from the ice and set aside.
  • Heat the chicken stock in a medium saucepan and keep warm on the stove. Heat 1 tablespoon of the butter and the olive oil in a medium high-sided saute pan, and cook the garlic and shallots, sprinkling with salt and black pepper, until soft. Stir in the rice, tossing to coat, and cook 1 minute. Pour in the wine and cook until completely reduced.
  • Add 2 cups of the hot stock and cook until absorbed. Continue adding 1 cup of the stock at a time, stirring often, until all the liquid is absorbed. (You may not need all of the stock.) Cook until the rice is al dente, about 20 minutes.
  • Stir in the broccoli rabe to combine, and then stir in the Parmesan and remaining butter until melted. Adjust the seasoning and serve with the Piquillo Pepper Salsa alongside. Garnish with bull's blood, chervil sprigs and a sprinkle of Parmesan.
  • Combine the piquillo peppers, olives, olive oil, parsley, vinegar and thyme in a small bowl. Season with salt and black pepper and serve with the risotto.

4 whole shallots, pre-roasted at 400 degrees for 15-20 minutes
1 cup arborio rice
1/2 ounce butter
1/4 cup onion, finely diced
all-purpose flour
1 ounce olive oil
3 ounces heavy cream
2 ounces grated parmesan cheese

Steps:

  • In a small pan, melt butter over medium heat and sauté onion until tender.
  • Add rice and stir.
  • Add water, stir and bring to boil.
  • Reduce heat; simmer 20-25 minutes uncovered, stirring frequently, until rice is tender.
  • Add cream and Parmesan.
  • Season with salt and pepper to taste.
  • Gently fold in shallots, tomatoes and broccoli.
  • Set rice aside.
  • Season both sides of sea bass with salt and pepper.
  • Dredge lightly in flour.
  • Put olive oil in sauté pan over medium heat; sear both sides until golden brown.
  • Place fish in 400 degree oven for 10-15 minutes or until desired doneness.
  • Place risotto on plate and top with sea bass.

RISOTTO WITH PORCINI AND BROCCOLI RABE

For the broth
the carcass of a roast turkey, broken into large pieces
about 4 1/2 quarts (18 cups) water
1/2 ounch dried porcini mushrooms*
2/3 cup hot water
3/4 pound broccoli rabe
1 1/2 cups minced onion
2 tablespoons unsalted butter
1 1/2 cups Arborio rice*
1/2 cup dry white wine
1/4 cup freshly grated Parmesan
*available at specialty foods shops and some supermarkets

Steps:

  • Make the broth:
  • In a large kettle or stockpot combine the carcass with the water, or enough to cover it, and simmer the mixture, uncovered, for 3 hours. Strain the broth through a large sieve into a large bowl, discarding the solids, return it to the kettle, and boil it until it is reduced to about 10 cups. Reserve 8 cups of the broth and transfer the remaining broth to a container for another use. The broth may be made 1 week in advance and kept covered and chilled if it is brought to a boil every 2 days and then allowed to cool to warm, uncovered, before being chilled again. The broth keeps, frozen, for 3 months.
  • In a small bowl let the < I>porcini soak in the hot water for 30 minutes and strain the soaking liquid through a rinsed and squeezed paper towel set over a cup, reserving it. Wash the porcini under cold water to remove any grit and chop them coarse. Trim the broccoli rabe, discarding any yellow or coarse leaves and the tough stem ends. Peel the large stems, cut off the flowerets, reserving them, and cut the stems and the leaves crosswise into 1 1/2-inch pieces. Bring the reserved 8 cups broth to a boil, add the broccoli rabe stems, leaves, and reserved flowerets, and simmer the mixture for 4 minutes, or until the broccoli rabe is just tender. Transfer the broccoli rabe with a skimmer to a bowl and keep the broth at a bare simmer.
  • In a large saucepan cook the onion and the porcini in the butter over moderate heat, stirring, until the onion is softened and add the rice, stirring until it is coated well with the butter. Add the wine and the reserved porcini soaking liquid and cook the mixture over moderately high heat, stirring constantly, until the liquid is absorbed. Add about 1/2 cup of the simmering broth and cook the mixture, stirring constantly, until the broth is absorbed. Continue cooking the mixture and adding the broth, about 1/2 cup at a time, stirring constantly and letting each portion be absorbed before adding the next, until the rice is tender but still al dente. (The rice should take about 20 minutes to become al dente.) Stir in the broccoli rabe and simmer the risotto, stirring, until it is heated through. Remove the pan from the heat and stir in the Parmesan and salt and pepper to taste.

1 head fennel, top removed, cut into small pieces
1 cup broccoli stems and flower- ettes, cut into small pieces
Coarse salt and freshly ground pepper to taste
1 tablespoon unsalted butter
2 tablespoons olive oil
2 shallots, minced
1 1/2 cup Arborio rice
4 to 5 cups hot chicken stock (pref- erably homemade)
1 cup dry white wine
1/3 cup freshly grated Parmesan cheese
1/4 cup heavy cream

Steps:

  • Steam fennel and broccoli separately until tender. Place in a food processor with a fourth cup of steaming water. Puree and season to taste with salt and pepper, and then set aside.
  • Heat butter and oil in a heavy frying pan and saute the shallots until they are soft. Add rice and saute for one to two minutes, until the grains turn opaque. Add a half cup of hot chicken stock and stir frequently. When it has been absorbed by the rice, add another half cup.
  • Add wine and cook until it is absorbed by the rice. Stirring frequently, continue adding more chicken stock, half a cup at a time, and cook for 15 or so minutes more. When rice is almost tender but still al dente, add pureed vegetables. Cook for a minute, then add the Parmesan cheese and the cream. Cook another minute, correct seasoning and serve.

1/2 bunch broccoli
3 cups (approximately) chicken stock or vegetable stock
2 tablespoons olive oil or unsalted butter
1/2 cup finely chopped onion
1 1/2 cups arborio rice
Salt and freshly ground black pepper
1 teaspoon finely minced fresh sage or 1/2 teaspoon dried
Freshly grated Parmesan cheese

Steps:

  • Remove the flowerets from the broccoli, divide them into small pieces and steam about three minutes, until just tender and bright green. Rinse under cold water, drain and set aside.
  • Chop enough of the stems to make one cup, place in a small saucepan with about two-and-a-half cups of water and simmer until very tender, 15 to 20 minutes. Drain, reserving the cooking liquid. Puree the chopped broccoli in a food processor.
  • Add enough chicken or vegetable stock to the cooking liquid to make five cups, place this stock in a saucepan and bring to a slow simmer.
  • Heat the oil or butter in a heavy saucepan. Add the onion and saute until the onion is tender but not brown. Stir in the rice and cook, stirring, about five minutes. Stir in the broccoli puree and season with salt and pepper and sage.
  • Begin adding the simmering stock, about a half-cup at a time, stirring and adding additional stock as the liquid is absorbed by the rice. After about 20 minutes nearly all the liquid should have been added. The rice should be just tender with a bit of resistance in the middle and the mixture should be creamy, not quite liquid. Stir in the reserved broccoli flowerets, check seasonings and serve with Parmesan cheese.

2 tablespoons olive oil
1 medium acorn squash, peeled, seeded and cut into 1/4-inch cubes (about 3 cups)
Kosher salt and freshly ground black pepper to taste
4 1/2 cups homemade chicken stock
1 tablespoon butter
1/2 onion, chopped
1 bunch (1 pound) broccoli rabe, well rinsed and tough stems removed
1 1/2 cups Arborio rice
1 cup white wine
1 1/2 teaspoons lemon zest
1/2 cup freshly grated Parmesan, plus more for serving

Steps:

  • In a saute pan, heat 1 tablespoon of the olive oil over medium heat and add the squash. Cook, shaking the pan frequently, until the squash is softened but not mushy, about 5 minutes. Season with salt and pepper and set aside.
  • Place the stock in a saucepan on the back of the stove and adjust the heat so that it is just below a simmer.
  • In large, heavy-bottomed pot, heat the remaining tablespoon of olive oil and 1 tablespoon of butter over medium-high heat and add the onion. Cook, stirring, until the onion becomes translucent, 3 to 4 minutes.
  • Add the rabe and continue to cook for another few minutes until it is somewhat reduced in volume. Add the rice and toss until well coated. Add the wine and cook, stirring, until it is almost completely evaporated.
  • One cup at a time, add 3 cups of the stock, letting the liquid all but evaporate between each addition and stirring constantly. (Lower the heat if necessary to keep the rice from sticking.) Add a fourth cup of stock along with the squash and continue to cook, stirring, until the mixture is almost completely dry.
  • Lower the heat and stir in the lemon zest, Parmesan and final 1/2 cup of stock. Season to taste with salt and pepper and cook, stirring, for a minute or two more until the mixture becomes creamy. Remove from the heat and serve immediately with Parmesan on the side.

1/2 lb. broccoli
2 cups mushrooms, sliced
6-1/2 cups hot vegetable broth
1/2 cup minced scallions, green included (about 5)
1 tablespoon, or 1 small, shallot
3 tablespoons olive oil
2-1/2 cups Arborio or Carnaroli rice
1/2 cup dry white wine, or cooking wine
1/2 teaspoon salt
2 tablespoons unsalted butter, cut into bits
1/2 cup Grana Padano cheese, freshly grated
Freshly ground pepper, to taste

Steps:

  • Prepare the broccoli florets, keeping them small, and the scallions, shallot, and mushrooms. Peel broccoli stems and slice into 2-inch pieces. In a saucepan, heat the vegetable broth. In a 3- to 4-quart casserole or pot, heat the olive oil over medium heat. Add the scallion, shallot, and mushrooms and sauté until shallots are translucent, about 4 minutes, stirring often. Add the rice and stir to coat with oil. Toast rice until the edges become translucent, 1 to 2 minutes. Add the wine and stir until well evaporated. Add 1/2 cup of the hot stock and the salt. Cook, stirring constantly until the stock has been absorbed. Continue to add stock in small batches and cook until absorbed. After about 12 minutes add the broccoli. Stir constantly until the rice mixture is creamy but al dente. This will take about 18 minutes. Remove casserole from heat. Whip in butter until melted, then add the Grana Padano. Salt and pepper to taste. Serve warm.

1 large leek, sliced very finely
2-3 small, fresh green chillis
9 oz risotto [arborio] rice
1 3/4 cups coconut milk
2 1/2 cups wheat and gluten-free vegetable stock
2 large heads of broccoli
sea salt and freshly ground black pepper
3oz pine nuts (toasted) or roasted cashews (optional)

Steps:

  • Heat the oil in a wide, flat pan and add the leek and chillis. Fry gently for 8-10 minutes or until they have softened. Add the rice, stir around well and then add the coconut milk and the stock. Stir well and bring to the boil. Simmer briskly for 15-20 minutes or until most of the liquid has been absorbed. Meanwhile, cut the broccoli heads into small florets and steam briskly for 3-5 minutes or until lightly cooked but still slightly crunchy. Season the risotto to taste then gently stir in the pine or cashew nuts (if using) and the broccoli and serve at once.

  • Heat the oil in a large, shallow saucepan on a gentle heat and fry the onion for 3-4 minutes. Stir frequently until the onion is soft. Meanwhile make up the stock in a jug using boiling water.
  • Add the leek, garlic and ham to onions and stir until the ham starts to brown. Add the rice and stir for 1-2 minutes. Ladle a little of the stock in the pan and stir thoroughly. When most of the liquid has been absorbed, add more and stir.
  • Repeat until all the stock has been used up (this should take about 20 minutes). Cut the broccoli into small florets and stir into the risotto. Cook for another 5 minutes until the rice is tender but still has some bite.

Steps:

  • Place the Broccoli Florets in a Saucepan of boiling water and boil until soft. Have a Frying pan on a medium heat, add the butter/oil to the pan and swirl to cover the base of the pan. Add the Smoked Bacon and cook for a 3 minutes, until the edges are brown, then add the Spring Onion and Carrots to the pan and toss to cook.
  • After 2 minutes off cooking, add the Arboria Rice to pan and stir using a Spatula/Wooden Spoon, remembering to constantly stir and shake the pan to avoid the Rice from burning, after 2 minutes of cooking the Rice, add a ladle spoon full of the Stock to the pan. Add the Salt and Pepper to season the Dish, seasoning is important!
  • Remembering to constantly stir and shake the pan to ensure the Rice doesn't stick to the bottom of the pan. Once around 2/3 of the Stock has been used up, add the Soft Broccoli to the pan. Once all of the moisture has been soaked up by the Rice, add a ladle of Stock to the pan.
  • Once all of the remaining Stock has been soaked up by the Rice, making sure the rice is cooked, taste it and taste again, also make sure that the dish is not stodgy or too watery, a thickness/consistency of Custard is perfect.
  • Once you are happy with the consistency and taste of the dish, transfer to a serving plate/bowl, season with salt and pepper, and add a pinch of Parsley to Garnish and add a little colour to the dish. Dig in and Enjoy.
