DEEP-DISH PIZZA WITH ITALIAN SAUSAGE AND BROCCOLI RABE



Deep-Dish Pizza with Italian Sausage and Broccoli Rabe image

1 large bunch broccoli rabe, washed and coarsely chopped
4 tablespoons olive oil
1/4 teaspoon red chili flakes
3 cloves garlic, finely chopped
Salt and freshly ground black pepper
3/4 pound hot Italian sausage links, casings removed
2 tablespoons olive oil
2 cloves garlic, finely chopped
1 (32-ounce) can plum tomatoes coarsely chopped, no juice
2 teaspoons finely chopped fresh oregano leaves
2 tablespoons finely chopped fresh basil leaves
Salt and freshly ground black pepper
2 packages quick-rise dry yeast
2 cups warm water (90 degrees F)
1/4 cup vegetable oil
1/4 cup olive oil, plus more to oil the pans
1/2 cup yellow cornmeal
5 1/2 cups all-purpose flour
4 teaspoons kosher salt
4 tablespoons unsalted butter, slightly softened
1/2 pound aged provolone, coarsely grated
1/2 pound fontina cheese, coarsely grated
Sausage and Broccoli Rabe filling
Tomato Sauce
1/2 cup freshly grated Parmigiano-Reggiano

Steps:

  • Bring a large pot of salted water to a boil, add the broccoli rabe and blanch for 2 minutes. Drain in a colander and run cold water over. Drain well again and squeeze out excess liquid.
  • Heat 2 tablespoons of the oil, chili flakes and garlic in a large saute pan over medium heat and cook for 1 minute. Add the broccoli rabe, salt and pepper and cook until slightly tender, about 5 minutes.
  • In a separate large saute pan, heat the remaining 2 tablespoons of oil over high heat until the oil begins to shimmer. Add the sausage links and using a wooden spoon, gently break up the meat into coarse pieces. Cook until deep golden brown. (You do not need to cook all the way because it will continue to cook in the oven.) Combine the sausage and the broccoli rabe and let cool slightly.
  • Heat the oil in a medium saucepan over high heat. Add the garlic and cook for 30 seconds. Add the tomatoes and oregano, bring to a boil and cook until the mixture thickens, about 15 minutes. Stir in the basil and season with salt and pepper. Let cool slightly.
  • Dissolve the yeast and water in the bowl of a mixer fitted with the paddle attachment. Add the oils and mix for 30 seconds. Add the cornmeal, 3 cups of the flour and salt and beat for 5 minutes. Switch to the dough hook and mix in the remaining 2 1/2 cups of flour and knead, using the dough hook for 2 minutes. Add the butter and knead until incorporated. The dough is a very moist dough so do not add more flour unless absolutely needed.
  • Place the dough in a large bowl lightly oiled with vegetable oil, cover with plastic wrap or clean kitchen towels and let rise in a warm place until doubled in size, about 45 minutes. Punch down the dough and allow to double in size again.
  • Preheat the oven to 450 degrees F. Place 2 pizza stones into the oven to preheat as well. Generously oil 2 (9 or 10-inch) deep dish pie pans with olive oil (about 2 tablespoons for each pan).
  • Divide the dough in half and press the dough out slightly on the counter top. Place the dough in the prepared pans and push out to cover the bottom and up the side of the pans. (If using the 9-inch pans, pinch a 2-inch ball off each dough to make a better fit.)
  • Combine the cheese in a bowl. Place half of the cheese of the bottom of each pie crust. Divide the sausage filling over the cheese and then top with the remaining cheese, patting the cheese firmly down over the filling. Spoon some of the sauce over the top of the cheese to cover completely. Place the pans into the oven on the pizza stones and bake in the oven until golden brown, about 40 minutes. Remove from the oven and sprinkle the top with Parmesan. Let the pizza rest on a baking sheet for 5 minutes before slicing.

BROCCOLI RABE AND SAUSAGE PIZZA

1 cup lukewarm water
2 tablespoons granulated yeast
1/4 teaspoon sugar
2 1/4 cups all-purpose white flour (about 12 ounces)
1/4 cup bulgur wheat
2 tablespoons virgin olive oil
1/2 teaspoons salt
2 hot Italian sausages (about 8 ounces total), cut into 1/2-inch slices
4 tablespoons olive oil
6 cloves garlic, peeled and sliced (2 tablespoons)
1/4 teaspoon red pepper flakes
1 pound broccoli rabe, washed, stem tips peeled if tough, and cut into 2-inch pieces (about 10 cups)
1/4 teaspoon salt

Steps:

  • To make the dough, place the water in the bowl of a food processor, add the yeast and sugar, mix lightly, and let proof for about 5 minutes, until bubbles begin to form on the surface. Add the flour, bulgur, all but 1 teaspoon of the olive oil, and the salt, and process for 15 to 20 seconds.
  • With the remaining teaspoon of oil, lightly grease the inside of large bowl. Remove the dough from the food processor, shape it into a ball and place it in the oiled bowl, turning it once to coat it with oil on all sides. Cover the bowl tightly with plastic wrap and let rise at room temperature for about 1 hour.
  • Meanwhile, prepare the pizza topping. Place the sausages and 2 tablespoons of the olive oil in a saucepan and saute for 4 to 5 minutes. Add the sliced garlic and pepper flakes, and stir for 10 to 15 seconds. Mix in the broccoli rabe, still wet from washing. Cover, and cook over medium heat for 8 to 10 minutes, until the broccoli rabe is wilted. Add the salt and let the mixture cool, uncovered (to prevent discoloration), until lukewarm.
  • When ready to cook the pizza, punch down the dough and spread it out by hand onto an aluminum cookie sheet to create a 12-by-14-inch rectangle, approximately 1/4-inch thick. Arrange the sausage and broccoli mixture on top, spreading it to within 3/4-to-1-inch of the edge of the dough. Sprinkle the remaining 2 tablespoons of olive oil evenly over the surface of the topping, and set it aside at room temperature for about 20 minutes to proof the dough.
  • Preheat oven to 400 degrees. Place pizza in oven for 18 to 20 minutes, until the crust is crisp and brown. Cut into wedges and serve.

Skillet Fried Pizza with Roasted Mushrooms and Charred Broccoli Rabe Pesto image

2 1/4 teaspoons active dry yeast 1 1/2 cups warm water (about 110 degrees F)
3 1/2 cups all-purpose flour
2 teaspoons kosher salt
1/2 teaspoon ground black pepper
1 scant tablespoon honey
1 pound broccoli rabe, washed and the ends trimmed
8 to 10 tablespoons extra-virgin olive oil
Salt
2 teaspoons paprika
2 cloves garlic, peeled
1 1/2 cups grated Parmesan
1/2 cup basil leaves, stemmed, washed and dried
Mushrooms: 1 pound white button mushrooms, washed and the stems trimmed
Garlic powder
1 pound fresh mozzarella, thinly sliced

Steps:

  • For the dough: In a bowl, combine the yeast and warm water. Stir to dissolve the yeast and allow the mixture to rest for 5 minutes. Using a sieve or strainer, "sift" about half of the flour over the yeast mixture and blend until smooth with your hands. Add the salt, pepper and honey and mix to blend. Sift in the remaining flour and mix to blend. Lightly flour a cutting board or flat surface. Turn the pizza dough onto the floured area and knead for 3 to 5 minutes. The flour should feel smooth and the ingredients fully integrated. Add the dough to a lightly oiled bowl. Cover with plastic wrap and let it "rest" in a warm place until it has doubled in volume, about 1 1/2 hours. Press gently on the dough and turn it onto a floured surface. Divide the dough into 4 equal parts, rolling each quarter into a loose ball. Cover with a clean kitchen towel and allow the dough to "rest" for an additional 15 minutes. Flatten each ball, 1 at a time, and roll into a 6-inch round. Make the pesto: In a medium bowl, add the broccoli rabe, 2 tablespoons of the olive oil and salt and the paprika to taste; stir to combine. Heat a large saute pan over high heat and add the broccoli. Keep the heat high, allowing it to brown and char on the edges. When the broccoli rabe is tender when pierced with the tip of a knife, remove from the heat and allow it to cool. Put the broccoli rabe on a cutting board and finely chop. Transfer to a bowl. Put the garlic through a garlic press and add to the bowl. Stir in the Parmesan, 2 more tablespoons of the olive oil and the basil leaves. Taste for seasoning. Cook the mushrooms: In another saute pan, over medium heat, add the mushrooms and a tablespoon of the olive oil. Season with salt and garlic powder, to taste. Cook until they release their water, 8 to 10 minutes.
  • Preheat the oven to 400 degrees F. In a cast iron skillet, large enough to hold a pizza round, heat 2 tablespoons of the olive oil over medium heat. When the oil begins to smoke lightly, shut the heat off under the skillet and add 1 of the pizza rounds. Use a spatula to press gently on the top of the round to keep it relatively flat as it cooks. When you see it is slightly brown on the underside, season the top lightly with salt and pepper and flip the round to its second side. Season with salt and pepper. Repeat with remaining dough. Finish the pizzas: Arrange all of the browned rounds on baking sheets and layer with the mozzarella slices, broccoli rabe pesto and a sprinkling of mushrooms. Bake in the oven for a few minutes until the cheese melts. Season with salt and serve.

NEW YORK STYLE PIZZA WITH CLAMS AND BROCCOLI RABE



New York Style Pizza with Clams and Broccoli Rabe image

This pie was inspired by my favorite pizza from Pasquale Jones in New York City's Little Italy. It's made with fresh clams, plus broccoli rabe and chiles for bitterness and heat. It will make you a seafood pizza lover!

1 pound All-Purpose Pizza Dough (recipe follows)
24 littleneck clams (about 2 pounds)
Kosher salt
6 ounces broccoli rabe, trimmed
2 tablespoons extra-virgin olive oil
1 shallot, thinly sliced
3 cloves garlic, minced
1 cup dry white wine
2 oregano sprigs
1/3 cup heavy cream
All-purpose flour or cornmeal, for dusting
1/3 cup grated Parmesan cheese
1 tablespoon thinly sliced jarred Calabrian chiles
Chopped fresh parsley, for topping
Lemon wedges, for serving
1 1/2 teaspoons active dry yeast
1 1/2 cups warm water (about 110˚ F)
2 cups bread flour
1 3/4 cups all-purpose flour, plus more for kneading
2 teaspoons sugar
2 teaspoons kosher salt
2 tablespoons extra-virgin olive oil, plus more for the bowl

Steps:

  • Make the dough. Toward the end of the rising time, preheat the oven to 500˚ F (use the convection setting, if available) with a pizza stone, baking steel or inverted large baking sheet in the lower third of the oven. Put the clams in a large bowl of cold water; let sit 20 minutes to remove any excess grit.
  • Meanwhile, bring a pot of salted water to a boil. Add the broccoli rabe and cook until bright green and just tender, 2 to 3 minutes. Drain and transfer to a large bowl of ice water. Drain and pat dry, then roughly chop.
  • Drain the clams and rinse under cold water. Heat the olive oil in a large skillet over medium heat. Add the shallot and cook, stirring, until softened, 2 to 3 minutes. Add the garlic and cook until softened, 1 minute. Stir in the wine, oregano and clams. Cover and cook until the clams open, 5 to 7 minutes. Transfer the clams to a bowl with tongs, reserving the cooking liquid in the skillet; discard any unopened clams.
  • Simmer the clam cooking liquid over medium heat until reduced by two-thirds, 10 to 15 minutes. Reduce the heat to low and whisk in the heavy cream. Return the heat to medium, bring to a simmer and cook until thickened and the sauce coats the back of a spoon, 2 to 4 minutes. Let cool until slightly thickened, about 5 minutes; discard the oregano sprigs. Remove the clams from their shells and roughly chop.
  • Working on a floured or cornmeal-dusted piece of parchment, gently stretch and press the dough into a 12- to 13-inch round. Sprinkle all over with the Parmesan, then top with the clam sauce (the sauce will spread as it bakes). Top with the clams, broccoli rabe and Calabrian chiles.
  • Transfer the pizza (on the parchment) to the hot stone and bake until the crust is golden brown, 12 to 15 minutes. Slide the pizza onto a cutting board and let cool slightly. Sprinkle with parsley and serve with lemon wedges.
  • Sprinkle the yeast over the hot water in a small bowl. Let stand until dissolved and slightly foamy, 5 to 10 minutes.
  • Meanwhile, whisk the bread flour, all-purpose flour, sugar and salt in a large bowl and make a well in the center. Pour the yeast mixture into the well and add the olive oil. Stir with a wooden spoon until a shaggy dough forms.
  • Turn the dough out onto a lightly floured surface, dust the dough with flour and knead, dusting with more flour as needed, until very smooth and elastic but still slightly tacky, 3 to 5 minutes.
  • Transfer the dough to an oiled bowl, turning to coat. Cover with plastic wrap and let rise in a warm place until doubled in size, about 1 1/2 hours. Divide the dough into two 1-pound balls. (If making sheet-pan pizza, let the dough rise, covered, on an 11-by-17-inch rimmed baking sheet coated with 3 tablespoons olive oil instead of in a bowl; do not divide into two balls.)
  • If not using the dough right away, wrap in plastic and refrigerate for up to 2 days or freeze for up to 3 months. Bring to room temperature before using.

RAMP PESTO PIZZA WITH BROCCOLI RABE AND CURED MEAT



Ramp Pesto Pizza With Broccoli Rabe And Cured Meat image

1/2 pound broccoli rabe, 2 inches trimmed off the bottom of the stems
8 ounces ramps, roots trimmed off, stems and leaves cut into 1-inch pieces
1/3 cup pine nuts or walnuts
2 teaspoons freshly squeezed lemon juice
1/4 teaspoon salt
1/4 cup extra-virgin olive oil
1 (14 to 16-ounce) ball Basic Pizza Dough (or pre-made pizza dough)
1/4 cup shredded Gouda, cheddar, or fontina cheese
1 ounce very thinly sliced cured meat (such as pancetta, prosciutto, or pepperoni)

Steps:

  • 1. Place your pizza stone or steel (if using) on an oven rack in the middle of your oven. If you plan to cook your pizza on a baking sheet, just place a rack in the middle of the oven (you do not need to preheat the baking sheet). Preheat the oven to 500°F (or the highest temperature your oven will allow, if using a pizza stone/steel) and let it heat up for at least 30 minutes while you make the dough and/or prepare the toppings. 2. To prep the toppings: Bring a large pot of water to a boil and blanch the broccoli rabe for 2 to 3 minutes. Immediately drain it in a colander and run it under cold running water to stop the cooking. Spread the cooled broccoli rabe on a clean kitchen towel and pat dry. 3. In a food processor, combine the ramps, nuts, lemon juice, and salt. Pulse until the mixture is finely chopped, then, with the motor running, stream in the olive oil and process until smooth. Taste and add more salt or lemon juice as desired. 4. To stretch/roll out the dough: Place the dough on a clean work surface and, using your hands, gently stretch it into a 12-inch square or disk, making sure that it retains the same thickness throughout (more or less). If you want a thinner-crust pizza, dust the dough with flour and roll it out with a rolling pin. 5. If you're using a pizza stone or steel: Dust a pizza peel or the back of a baking sheet generously with flour or cornmeal. Place the dough disk on the prepared peel. 6. If you're using a baking sheet: Spray the baking sheet with cooking spray. Place the dough disk on the prepared baking sheet. 7. To top the pizza: Spoon 1/2 to 2/3 cup pesto onto the dough and spread it out evenly, leaving a 1/2-inch border of dough all around. Arrange the broccoli rabe on top of the pesto in whatever pattern you like, then sprinkle on the cheese. 8. To bake the pizza: If you're using a pizza stone or steel, 10 minutes before you are ready to cook the pizza, increase the oven heat to broil. Slide the pizza from the peel (or inverted baking sheet) to the hot stone or steel using quick shimmying movements. Broil the pizza for 6 to 8 minutes until the crust is golden and the cheese just begins to brown. Using the peel or inverted baking sheet, transfer the cooked pizza to a cutting board. If you are making more than one pizza, allow the pizza stone or steel to reheat under the broiler for 5 minutes before you cook the next one. 9. If you're using a baking sheet, do not increase the oven to broil. Place the baking sheet on the rack in the middle of the oven and bake for about 10 minutes, until the crust is golden and the cheese just begins to brown. 10. Remove the pizza from the oven and immediately arrange the cured meat on top. Let it rest for 5 minutes (the cured meat will melt on the hot pizza); slice and serve.

1 bunch broccoli rabe
1 lb Italian sausage, cooked and casings removed cut into small pieces
1/4 cup sun-dried tomato, julienne
4 tablespoons garlic, chopped
2 cups mozzarella cheese, grated or 2 cups favorite cheese
3 tablespoons fresh basil, shredded
1 tablespoon crushed red pepper flakes
1 lb pizza dough, large store bought, basic dough recipe or 1 focaccia bread
1/4 cup olive oil (or enough to coat pizza dough)

Steps:

  • Spread dough evenly on a pizza pan.
  • Coat generously with olive oil.
  • Sprinkle surface with chopped garlic.
  • Rinse and cut broccoli rabe into 3-4 inch pieces.
  • Blanch in boiling water for 2 minutes.
  • Drain.
  • Sprinkle cheese on pizza then sausage, sun-dried tomatoes and broccoli rabe.
  • Sprinkle basil and crushed red pepper.
  • Bake until crust is brown in a 325°F oven.

BROCCOLI RABE, BLACK OLIVE, AND SMOKED MOZZARELLA PIZZA

1 puff pastry sheet (from one 17 1/4-ounce package frozen puff pastry sheets), thawed
1/2 pound broccoli rabe
1/3 cup drained Kalamata or other brine-cured black olives
2 garlic cloves
1 tablespoon fresh lemon juice
6 ounces smoked mozzarella
1 tablespoon extra-virgin olive oil

Steps:

  • Line a baking sheet with parchment paper. On a lightly floured surface unfold pastry sheet and gently roll out to a 14- by 12-inch rectangle. Transfer pastry to baking sheet and prick all over with a fork. Chill pastry, covered, at least 30 minutes and up to 1 day.
  • Preheat oven to 400°F.
  • Have ready a bowl of ice and cold water. Trim 1 inch from bottoms of broccoli rabe stems. In a saucepan of boiling salted water blanch broccoli rabe 30 seconds and transfer with tongs to ice water to stop cooking. Drain broccoli rabe well in a colander and pat dry. Cut broccoli rabe into 1/2-inch pieces and transfer to a bowl. Pit and chop olives. Mince garlic. Add olives, garlic, lemon juice, and salt and pepper to taste to broccoli rabe and toss well. Into another bowl coarsely grate mozzarella and chill, covered.
  • Bake pastry in middle of oven until golden, 15 to 20 minutes. Sprinkle cheese evenly over pastry, leaving a 1/2-inch border on all sides. Spread broccoli rabe mixture evenly on top of cheese and bake in middle of oven 10 minutes, or until heated through. Drizzle oil over pizza.
  • Cut pizza into serving pieces.

SAUTEED BROCCOLI RABE AND SAUSAGE PIZZA



Sauteed Broccoli Rabe and Sausage Pizza image

1 bunch broccoli rabe, stems cleaned
2 to 3 cloves garlic, sliced thinly or minced
1/2 cup extra virgin olive oil
1/2 teaspoon red pepper flakes
1 pound Italian sweet or hot sausage in casing
Salt and pepper
Basic Pizza Dough, recipe follows
1 cup warm tap water (100 to 115 degrees)
1 package active dry yeast
3 to 3 1/2 cups all purpose flour
1/2 teaspoon salt

Steps:

  • Wash the broccoli rabe well and let strain in a colander. Bring about 2 quarts of water to a boil and add a little salt. Add the broccoli rabe to the pot and bring back to a boil, and cook for about 2 to 3 minutes. Strain the broccoli rabe, reserving 1/2 cup of the cooking liquid. Run under cold water to cool down, drain, then coarsely chop the broccoli rabe. Set aside.
  • Meanwhile, remove the sausage from it's casing, and crumble it well with your hands. Saute the sausage meat in a little oil for about 2 to 3 minutes until no longer pink. Set aside.
  • In a Dutch oven or large saute pan, add the garlic and the olive oil and heat over medium flame until garlic is golden. Add the broccoli rabe and toss a little to mix well. Season with salt and pepper, red pepper flakes. Add the reserved cooking liquid and let simmer on a low flame for about 5 minutes, stirring often. Add the cooked sausage meat to this and mix well. Check seasoning. Cool down mixture if not using right away.
  • Spread the pizza dough with the rabe mixture. Bake in a pizza oven or a preheated 400 degree oven until lightly golden and the crust is browned, about 20 minutes. Cut into wedges and serve
  • Pour the water onto a medium--sized mixing bowl and add the yeast, stirring with a fork until dissolved. The water should turn a light beige color. Add 1 cup of flour and the salt. Mix thoroughly with a wooden spoon. Add the second cup of flour and repeat. The dough should start coming away from the sides of the bowl, forming a soft, sticky mass. Take the last cup of flour and sprinkle over a clean, dry work surface and flour your hands well.
  • Take the dough from the bowl and begin to work in the additional flour a little at a time. Use the heel of your hand to knead the dough and push across the work surface, clenching the dough with your fist and twisting it over. Use a dough scraper to help gather any wet dough that sticks to the surface while you are kneading. Also only add as much flour as it takes to keep the dough from sticking to your hands. When the dough no longer feels sticky, push the heel of your hand down into it and hold it there for 10 seconds. If the dough comes up clean, it's ready. If it sticks you will have to knead it a bit more.
  • Lightly oil a 2 quart bowl with vegetable oil, and roll the ball of dough around the bowl to coat it with a thin film of oil, then tightly seal the bowl with plastic wrap. Keep in a warm place, and let the dough rise for 30 to 45 minutes. When dough doubles in size, remove from bowl and punch it down with your fist to deflate, then knead it again for about a minute. Dough is now ready to stretch into a round, or press into a pizza pan.
  • Note: If you have a food processor with a dough hook attachment, you can make the dough much faster. Start by adding the yeast and water first and mixing well. Then add all the flour and salt and mix into a ball. Then rise the dough.
  • Yield: 1 ball dough
