BROCCOLI AND ONION CASSEROLE
This is an excellent side dish to accompany ham, turkey, etc. I always have requests for this dish during the holidays! This can be made ahead, refrigerated, and cooked when needed.

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x13 inch baking dish.
- Place a steamer basket in a pot over boiling water, and steam the broccoli about 5 minutes, until tender. Place the onions in a separate pot with enough water to cover. Bring to a boil, and cook until tender. Arrange the broccoli and onions in the prepared dish.
- Melt the butter in a saucepan over medium heat, and stir in the flour until smooth. Blend in the milk until thickened. Blend in the cream cheese until melted. Pour the mixture over the broccoli and onions. Sprinkle with Cheddar cheese, and top with bread crumbs.
- Bake covered in the preheated oven 30 minutes. Remove cover, and continue baking 30 minutes, until lightly browned.

EASY CHEESY CHICKEN, BROCCOLI AND ONION CASSEROLE
Steps:
- 1. Preheat oven to 350 degrees F. Place chicken in an ungreased 9x13x3" casserole dish in a single layer.
- 2. Spoon on cream of mushroom soup and spread evenly. Arrange onion slices on top of soup. Add broccoli, spread out evenly. Add cheese, spread out evenly. Sprinkle Stove Top Stuffing Mix on top of cheese. Drizzle with melted butter.
- 3. Bake in oven for 1 hour. Allow to cool for 10 minutes and serve. Enjoy!

Steps:
- Cook broccoli and onions until tender. Drain and set aside.
- In a saucepan, melt 2 tablespoons margarine, stir in flour, salt, and a dash of pepper.
- Add milk; cook and stir until thickened and bubbly.
- Add cream cheese; cook and stir 1-2 minutes then stir in broccoli and onions.
- Put in 1-1/2 quart casserole dish. Top with cheddar cheese.
- Melt remaining 2 tablespoons margarine and toss with bread crumbs. Sprinkle over casserole.
- Bake at 350°F for 35-40 minutes.

- Heat oven to 350 Cheese Sauce: Heat milk, flour, 1/4 c. butter, salt & pepper in 2 qt pan, stirring constantly. Boil & stir 1 minute, stir in shredded cheese until melted, stir in sour cream. In 3 qt pan, boil water and add broccoli. Cook for 5 min until crisp tender, drain well. In same water, boil onions about 2 minutes, drain & peel. Mix broccoli & onions in 2 qt baking dish & top with cheese sauce. Topping: In medium bowl, mix melted 1/4 c. butter & bread crumbs. Top. Bake uncovered 15-20 min until hot & bubbly.

Stir in shreddedcheese until melted,; stir in sour cream Heat water to boiling in another saucepan. Add broccoli,k cook about 5 minutes. Remove with slotted spoon and drain well. In same saucepan with boiling water, cook onions about 2 minutes, drain and peel. Spoon broccoli and onions into shallow 2 qt baking dish. Pour cheese sauce over vegetables in medium bowl., mix melted butter and bread crumbs; spoon over broccoli mixture. Bake uncovered at 350 15-20 minutes. Sprinkle with bread crumbs.

- 1. Cut broccoli into bite size pieces and cook in boiling water for about 3 minutes, drain Blanch onions,drain.
- 2. Sauce... melt butter over medium heat, add flour, salt,pepper and milk and whisk until smooth. Blend in cream cheese until melted and smooth.
- 3. Place broccoli into a 2 quart casserole dish. Place blanched onions on top of broccoli layer. Pour sauce over vegetables, spreading evenly. Sprinkle cheddar cheese over sauce. Melt about 2 tbsp of butter in small bowl and add about a cup of fresh breadcrumbs and 2 tbs parmesan cheese. Mix well and sprinkle over sauce. Bake at 350 F for about 35 minutes or until topping is brown and crispy.
BROCCOLI ONION CASSEROLE

- Wash and trim broccoli (2 packages [10 ounces each] frozen cut broccoli may be substituted) cut pieces lengthwise into 2 or 3 pieces, then crosswise into 1-inch pieces. Cook in a small amount of boiling salted water until barely tender, about 15 minutes. Drain (saving juice to use later in a soup or sauce) set broccoli aside. Cook onions in boiling salted water to cover until tender (or substituted 1 can [1 pound] small onions) drain. In medium saucepan melt butter (or margarine) blend in flour, salt, and pepper. Add milk cook and stir over medium heat until thick and bubbly. Reduce heat blend in cream cheese till smooth. Place vegetables in 2-quart casserole. Pour sauce over. Top with grated cheese. Bake, covered, at 325 degrees F. for 30 minutes remove lid continue baking 15 minutes longer. Note: If desired, buttered bread crumbs may be sprinkled around edge during last 15 minutes of baking.
