3/4 cup mayonnaise
1/4 cup sugar
4 teaspoons cider vinegar
4 cups fresh broccoli florets
1 small red onion, halved and sliced
1/2 cup raisins
1/2 cup pecan halves, toasted
1 can (11 ounces) mandarin oranges, drained

Steps:

  • Whisk mayonnaise, sugar and vinegar; set aside. In a salad bowl, combine broccoli, onion, raisins and pecans. Drizzle with dressing; toss to coat. Gently stir in oranges. Refrigerate, covered, at least 3 hours before serving.

This Broccoli And Mushroom Salad Recipe features some of my favorite ingredients. Shiitake mushrooms, fresh crunchy broccoli, Kalamata olives and amazing red onion vinaigrette. So healthy, clean and perfect for a light dinner or colorful side.

2 tbsp lime juice
1 tbsp truffle oil
1 tbsp soy sauce or Tamari
1 tsp Maple syrup
1/2 tsp salt
1/4 tsp pepper
1/2 c red onion (thinly sliced)
3 1/2 c broccoli (cut into florets )
1/2 tsp salt
2 tbsp olive oil
3 cloves garlic
4 oz Shiitake mushrooms (sliced)
17 Kalamata olives
1/4 c silvered chopped almonds

Steps:

  • In a medium bowl whisk all ingredients for the sauce. Add thinly sliced onion and marinate for 15-30 minutes.
  • Bring a medium pot of water to a boil. Add 1/2 tsp of salt, broccoli florets and cook for 2 minutes. Immediately drain and put broccoli in bowl filled with ice cold water. After 3 minutes drain broccoli.
  • Heat olive oil in a medium pan and over medium heat. Add crushed garlic and cook for 40 seconds. Discard garlic and add sliced Shiitake mushrooms and cook for 5-7 minutes until mushrooms start to brown. Transfer to a plate.
  • In a large bowl combine cooked broccoli, mushrooms, red onion along with the marinade, pitted olives and almonds. Mix well and serve.

2 medium head fresh broccoli, washed and trimmed (do not use frozen)
1/2 cup red onion, finely chopped
1/2 lb bacon, cooked and crumbled
1 cup roasted cashews (or roasted sunflower seeds)
1/2 cup canned mandarin orange segments, chopped and drained (or raisins)
1 1/4 cups grated mozzarella cheese (optional)
3 tablespoons cider vinegar
2 tablespoons vegetable oil
3/4 cup good quality mayonnaise (such as Hellman's or Best Foods)
1/3 cup sugar
1/4 teaspoon salt
1/2 teaspoon fresh ground black pepper

Steps:

  • Chop the broccoli into bite-sized florets.
  • Mix together broccoli, red onion, bacon, cashews, mandarin oranges, and mozzarella (if using) in a large bowl.
  • In a separate bowl combine vinegar, sugar, oil, and mayo. Whisk in the salt and pepper.
  • Pour over broccoli mixture and toss to coat.
  • Best if made a day ahead.

¼ red onion, finely chopped
¼ cup raisins
1 cup chopped cremini mushrooms
¼ cup sunflower seed kernels
1 cup mayonnaise

3 tablespoons apple cider vinegar
salt and ground black pepper to taste

Steps:

  • Place bacon in a large, deep skillet, and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain bacon slices on a paper towel-lined plate; crumble bacon.

1 teaspoon cornstarch
1 teaspoon dry mustard
1/4 cup white wine vinegar
1/4 cup water
1/2 cup mayonnaise (use mayo not salad dressing)
1 pinch garlic powder (optional)
4 cups fresh broccoli florets, washed and very well drained (I do this hours in advance or even a day ahead to make certain that the broccoli is well drained)
1 cup raisins
10 slices bacon, cooked and chopped
2 1/2 cups sliced fresh mushrooms
1/3-1/2 cup slivered toasted almond (or to taste)
1 large orange (peeled and cut into pieces)
1 small red onion, sliced

Steps:

  • For the dressing: in a saucepan, whisk together the eggs, sugar, cornstarch and the dry mustard.
  • Add/whisk in vinegar and water; cook on low heat until thickened.
  • Remove from heat, add/stir in the mayonnaise and garlic powder (if using) cool well.
  • To make the salad: marinate broccoli in the dressing for about 3-4 hours.
  • Add in the remaining salad ingredients; toss well to combine.

Steps:
