BROCCOLI-HAM HOT DISH
One of my best friends shared this recipe with me. My family loves it because it includes one of our favorite vegetables: broccoli. For potluck, it's a delicious and colorful way to use leftover ham. -Margaret Allen, Abingdon, Virginia

Steps:
- Preheat oven to 350°. Cook broccoli according to package directions; drain. Spoon rice into a 13x9-in. baking pan. Place broccoli over rice. , Melt butter in a large skillet. Sprinkle 2 tablespoons of melted butter over the bread crumbs and set aside. In remaining butter, saute onion until soft. Add flour, salt and pepper, stirring constantly until blended; stir in milk. Bring to a boil; cook and stir until thickened, about 2 minutes. Add ham. , Pour over rice and broccoli. Sprinkle with crumbs. Bake until heated through, about 30 minutes. Sprinkle with cheese; let stand 5 minutes before serving.

Steps:
- 1. Cook broccoli according to package directions. Drain.
- 2. Spoon rice into a 13x9\" baking pan.
- 3. Place broccoli over rice.
- 4. Melt butter in a large skillet.
- 5. Sprinkle 2 tablespoons of melted butter over the bread crumbs and set aside.
- 6. In remaining butter, saute onion unitil soft.
- 7. Add flour, salt and pepper, stirring constantly until bubbly.
- 8. Stir in milk and continue cooking until sauce thickens and bubbles.
- 9. Cook and stir for one minute.
- 10. Add ham and heat through.
- 11. Pour over rice and broccoli.
- 12. Sprinkle the crumbs over all.
- 13. Bake at 350 for 30 minutes or until heated through.
- 14. Sprinkle with cheese (swiss or cheddar).
- 15. Let stand for 5 minutes before serving.

- In a large saucepan, combine broccoli, water, ham, soy sauce, and one flavoring packet from ramen noodles.
- Break noodles into small pieces; add to pan.
- Simmer, uncovered, for 6-8 minutes or until noodles are tender, stirring frequently.
- Top with olives.
