CRUNCHY BROCCOLI SALAD WITH ARTICHOKES AND OLIVES
So simple, but the taste is divine. This is a great side dish for the holidays. Also great for something different for potlucks.

Steps:
- Peel tough layer from broccoli stems and dice broccoli stems and florets into about 3/8" squares.
- Chop marinated artichoke hearts into similar size as broccoli.
- Combine broccoli, olives, artichoke hearts in a bowl and toss with mayonnaise and a couple of tablespoons of the reserved artichoke marinade.
- Add salt and pepper to taste.
- Serve chilled. Stir well before serving.

MARINATED VEGETABLE SALAD

- Bring a large pot of salted water to a boil. Have a large ice bath ready.
- Add the broccoli, cauliflower and artichokes to the boiling water and cook until crisp tender, 2 to 3 minutes. Drain and transfer to the ice bath to stop the cooking. Drain the vegetables and pat dry with paper towels.
- Whisk together the olive oil, vinegar, garlic and 3/4 teaspoon salt in a large bowl. Add the broccoli, cauliflower, artichokes, olives, capers, oregano and cherry peppers and toss to coat. Cover and refrigerate at least 2 hours and up to overnight. Serve cold or at room temperature.

- In large saucepan, cook and drain tortellini as directed on package, adding cauliflower and broccoli during last minute of cooking time. Rinse with cold water to cool; drain well.
- Meanwhile, in large bowl, mix tomatoes, onion, parsley, bell pepper and artichokes.
- Add tortellini, cauliflower and broccoli to salad; stir gently. Add dressing and reserved 1/4 cup artichoke liquid; toss to mix. Serve immediately, or cover and refrigerate until serving time.

- Bring a small amount of water to boil and steam flowerets until bright green and crisp-tender,about 5 minutes.
- Plunge into cold water to stop cooking, drain and set aside.
